iridescence in meat after slicing/cooking

I don't eat or cook a lot of meat, so perhaps someone can give me an explanation as to why meat can take on iridescent hues. I cooked a corned beef today. It was fresh, far from the expiration date. I rubbed brown sugar on it, covered it 3/4 of the way with dark beer and used the crock pot on high for 6 hours. After I removed it from the pot, I sliced it, put it back in the liquid and cooked it for another 45 min. on low. It looked like regular corned beef after I first sliced it and it tasted good, but I wanted it a bit more tender. When I removed the slices, I noticed they had a few spots that looked almost like a fish scale, in the way that a fish scale will catch and bend light. A quick google search reassured me that it was fine, but I am curious what reaction caused it.
