You can't ask about Easter yet. ;-)

We have New Years, Mardi Gras, Groundhog Day, Valentines Day, St. Patrick's Day etc etc to celebrate also! You KNOW there will be special foods for all of these, and cookies to decorate in the appropriate theme.

Easter has to wait her turn!!

OMG lucy--i have now spewed wine across my monitor! that kitten is just too darned funny! and sort of looks the way i feel, except we haven't gotten food onto the table yet...

and don't worry finchelover--maureen's just warning you that this group has lots of things to discuss before we can getting around to talking about easter. between now and then, you'll likely see half a bazillion ideas bandied about!

Well I think home made baked mac n cheese is a must with ham and ribs.... And why not cole slaw? Maybe corn/black bean salad?

But the girls are right..Easter is so far away..lots to get to between now and then...

Easter!!! We have 2 feet of snow at the cottage that needs to melt before then but it's never to early to plan! LOL

Our favourite sides with ham are pretty predictable, cole slaw, baked beans and scalloped potatoes, oh and some squash or yams too.

I have a cheater Baked Bean recipe that goes over well and we love Emily's baked butternut squash recipe and you can't beat SharonCB's scaloped potatoes or Ann T's Potato Gratin...oh yeah and there is sol's amazing Cauliflower Gratin! Don't forget deviled eggs! Now I can't wait for Easter!

The recipes are yours for the asking if something strikes your fancy!

STOP!!!! I can't even think Easter! I know it is early this year, but as the other's said, so much in between. And so many cookies to eat, not to mention the FRUITCAKE! LOL..

OMG...Easter already!!!! I've not even planned New Year's Dinner yet?!? Well maybe by Easter my Christmas Cards will be done and the puppies will be housebroken.

Well, I love a good ham dinner anytime and as far as ribs goes - bring em on! And I love kittens too and that one is hysterical! I love a pineapple casserole with ham and in the past I've made Marilyn's and this year I made Glenda's - thanks Glenda we loved it. Both are really good - different from each other - but both terrific. I needed to cook Glenda's a bit longer to get it really crisp - mmmmmmmm it was good.

Glenda's Baked Pineapple Casserole

1 (20-ounce) can pineapple chunks in juice
1/2 cup sugar
3 tablespoons all-purpose flour
1 cup shredded cheddar cheese
1/4 cup butter or margarine, melted
1/2 cup crushed ritz crackers

Drain pineapple, save 3 tablespoon of juice.
Combine sugar and flour; add cheese, pineapple and pineapple juice. Mix well. Put in greased 8 x 8-inch baking dish.
Mix crushed crackers and melted butter together; sprinkle over pineapple mixture.
Bake for 30 minutes at 350*F (175*F)
Serves 6

Scalloped Pineapple

(An excellent accompaniment to your Easter ham.)

½ cup melted butter
4 cups fresh bread cubes
3 eggs
½ cup brown sugar
½ cup white sugar
½ cup Milnot canned milk (evaporated)
20 oz. crushed pineapple in juice; do not drain
cinnamon

Combine bread and butter, set aside. Combine eggs, sugar and Milnot; beat with mixer. Add bread mixture and pineapple, stir well and pour into lightly greased 2-quart casserole. Sprinkle with cinnamon. Bake uncovered at 350° for 1 hour or until set.

Easter is very early this coming year -- March 23.

I usually think spring greens for easter. But in most of the country, the only spring greens are going to be found at the grocery store and probably imported from California or Mexico.

With that said, here's some ideas along those lines:

I second the recipes Woodie posted. I've made both and both are very good.

I know I making Angel Food Cake and Deviled Eggs this year due to the fact of replacing my AFC pan and getting a deviled egg plate! As far as cookies, I will be making painted rolled cookies with cutters of butterflies, ladybugs and flowers. And maybe some strawberry marshmallows too!! Oops I forgot about the Lemon Custard Souffles that I made last year that were just too good!

Lemon Custard Souffles

1 cup sugar
1/4 cup flour
1/8 tsp salt
2 TBL butter, melted
5 TBL lemon juice
Grated zest of 1 lemon
3 egg yolks, well beaten
1 1/2 cups milk, scalded
3 egg whites

Preheat oven to 325°. Generously butter 8 custard cups**.
Combine the sugar, flour, salt & butter. Stir in the lemon juice & zest. Whisk a little of the hot milk into the beaten yolks; whisk all the yolks back into the milk. Stir the yolk mixture into the lemon mixture until well blended. Beat the whites until firm but not dry. Fold the lemon mixture into the egg whites. Spoon into the prepared custard cups. Place the filled cups in a baking pan. Pour enough hot water into the baking pan to come halfway up the sides of the cups. Bake 45 minutes. Cool to room temperature. Refrigerate until chilled, about 4 hours. Serve cold and top with whipped cream and fresh strawberries. **I've never had enough to fill 8 custard cups, usually get 6.

I agree, it's too soon for Easter. I have to at least cook the corned beef for St. Patrick's Day first. (grin) And then have some corned beef hash with the leftovers.

Right after that (like a week later, maybe) I'll do the Easter ham. We'll have homemade rolls, of course, and I'm thinking maybe au gratin potatoes, roasted asparagus and Woodie's 7 layer salad.

Dessert? I want to make one of those 4 layer coconut cakes, but I'll bet I'll get a chorus of "ick". Probably devil's food cake and some kind of fruit pie, maybe some homemade ice cream.

Should be something in the woods. I know the log cake with happytimes Meringue Mushrooms! You could make some rocks out of chocolate marshmallow and little trees....well I'm pretty sure Sol could help you with the trees.

Isn't it still Christmas? We celebrate Christmas in our house until New Years Day. I used to think it was a Southern thing to start Christmas the week after Halloween and then not mention again after Dec. 25th.But I think it's happening all over! I still enjoy the Christmas season until at least Jan.1st. Then it's on to Valentine's Day!

I'm glad you said that! I think it is still Christmas. It's custom in our family to celebrate Christmas until the Epiphany. After January 6th we take down the Christmas decorations.

I haven't thought about Easter yet. I have started to think about what I'll plant in my garden this year though!

I did the dyed eggs last year..and our regular Easter guests were very impressed..LOL

msazadi I've also made those beautiful eggs before and got a bunch of "Wows!" from them.

I have a question for ya.

When you put the eggs into the food coloring, do you put a whole egg in there to color, or do you cut the eggs in half and remove the yolk first?

The recipe I looked at when I clicked your pictures says to drop the whole egg in but if you did that, when you cut the egg, there would still be a white rim, right?

So? How do YOU do it?
