MCM kitchen island with short 'backsplash' - lose or keep?

We've got a great MCM post-and-beam home and are in the very early stages of planning a kitchen update. We're leaving the footprint the same in this oversized galley/open kitchen, because it works for us. The plan is new cabintry, losing the few upper cabinets on the range side, adding a nice range hood and backsplash, and new countertops. But one issue we are facing is the current as-built design for the long island.

The island is 17' long and houses only the sink and DW with a ton of cabinets. We are keeping the locations of sink/DW, but may add an under-counter MW drawer in this run. Otherwise, it will be a ton of deep drawers and some pull-outs.

As built, there is a backsplash on this island. In the photo, the brick wall is the back of the island, with the planter boxes on top, forming the "backsplash." This makes for about a 12" backsplash as is, or a 7" without the planter boxes. It helps to hide whatever clutter is on the island, and makes the garden/atrium area the focus when coming into the home.

But most designs now show a flat island with no backsplash. We're having trouble deciding what would be best.

We're not wedded to the planter boxes (they are empty right now) but we are keeping the garden area in place. So this will be an odd case of an island that has no seating on the off side, so no need for an overhang for seating/serving. It would not be difficult to knock down a few courses of brick to allow for a flush, fully visible countertop.

But is that too much for the house? It is an MCM home, but more of an "organinc" one given all the wood, the pavers we are keeping, and the rural wooded site.

I should add that the cabinets will probably be IKEA nexus yellow-brown cabinets -- a simple slab design. DH would like a granite with some movement -- he really misses that from two housses ago. Another part of me says keep the design as is -- how the house was designed -- if the backsplash is kept, the granite would not be shown to the best advantage, and we should go with something simpler.

Any thoughts?
