My family now prefers white chili to the red sauce chili.

Here's white chili with my rendition:
1 can chicken broth
1Tbl olive oil
2 boneless chicken breast, chopped ****Use WalMarts, and use breast only shredded.
1/4 cup or more chopped onion
1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice
1 19 oz can navy beans, undrained
1 tsp garlic powder
1/2 tsp cilantro ***I use instead 2 tsp chili powder
1/2 tsp oregano
1/8 tsp red pepper
Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent
Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended.
We love it topped with fritos, shredded cheese, and a dollop of sour cream

EASIEST CHILI CON CARNE

Serves: a bunch of college kids

Ingredients

3 Tbs vegetable oil
2 pounds lean ground beef
1 pound ground pork
1 cup chopped onion
2 envelopes (1 3/4 ounces) chili seasoning mix
(optional: 1-3 extra teaspoonfuls of chili powder)
3/4 cup water
20 oz diced tomatoes, undrained
2 cans (15 ounces) kidney beans, undrained
1 Tbs brown sugar

Directions

Heat oil in a large, heavy skillet. Cook ground beef, pork and onions over medium heat until pork is no longer pink. Stir in chili seasoning mix, then add remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.

I'd serve this with cornbread, homemade tortilla strips, chopped cilantro, chopped green onions, chopped jalapenos, Crema Mexicana.

Of course, Texans would say "this ain't chili; it's got BEANS!"

i have done very similar for a bunch of college kids...or highschool kids...
But I don't add oil to the browning beef, I add a couple of cloves of garlic to the onion ( I do it in the cuisinart, so adding garlic is easy) and the canned tomatoes I add are pureed....and I add a can of Rotel...just because!
Oh and I don't use kidney beans...I use pinto beans....and I wash the nasty gravy off of them! LOL!
But they will love whatever you fix....just serve lots and have lots of chips and cheese!

Well for fast, easy and good I am along the lines of Joe and Linda.

2-2 1/2 lbs. ground beef
Chopped Onion
Chopped Green Pepper
1 Large Can of Kidney Beans, undrained (can't remember the size - the Hanover large can)
1 Large Can Diced tomatoes (28 oz.), undrained
2 packages of McCormick Hot Chili Mix
A couple of Chipolte Peppers in adobe sauce (add a little sauce along with the peppers)

Brown your meat and add onions and peppers. Then add everything else and cook away! Serve with shredded cheese, sour cream and some chopped onions. Corn Bread or Texas Toast on the side along with salad.

Here is my standard recipe which is an adaptation from Craig Claiborne's low salt recipe from a People Magazine celebrity cookbook from the 70's.

Chili con Carne

1 tablespoon oil
1-1/2 cups chopped onion
1 cup chopped sweet red pepper
1-1/4 pounds ground turkey
2 tablespoons minced garlic
3 tablespoons chili powder
1 teaspoon ground cumin
1 tablespoon dried oregano
1 teaspoon dried basil
1 bay leaf
1/2 teaspoon ground black pepper
4 cups fresh or 2 pound can diced unsalted tomatoes (I like fire roasted)
1 tablespoon red wine vinegar
1/4 teaspoon dried crushed hot pepper flakes
(optional 1/2 cup red wine)
Canned kidney beans or black beans or white beans, drained (optional)

Heal oil in skillet and cook onion and pepper til wilted.
Add meat and brown.
Sprinkle the meat with garlic, chili powder, cumin, oregano and basil. Stir to blend. Add bay leaf, pepper, tomatoes, vinegar, hot red pepper and wine (if using).
Bring to a boil then lower heat and simmer for one hour, stirring occasionally.
Add kidney beans during last 15 minutes (if using).

Go to your local grocery or Wal Mart and buy some 2 Alarm Chili mix and follow directions on package. Just add a little extra beef broth or water and simmer for about 45 minutes. It is quick,easy and better than 90% of the chili most people make.

I even saw one recipe that called for adding a can of pork&beans.

Ooh. We can take this to the next logical step.

Costco has a great buy on two good brands of canned chili. I've tried them both and I think they are as good as most and better than many homemade chilis that I've had the (almost) pleasure of eating.

Can opener + big pot = easy easy chili.

I think chili is best after sitting in the fridge for a day or two. So, whether it's scratch made or quick made it still benefits from a wait. Can you do it ahead of time so you're not so stressed on the day? It'll taste even better then and if you put it on low when you get home the house will smell yummy and the flavors will be delicious.

I love the 2 alarm by Wick Fowler! I also like it with red kidney beans!

I've made Glenda's white chicken chili, great stuff!

I got this recipe from Better Homes & Gardens magazine years ago. I've never served it to anyone that hasn't raved about it.

1 lb. hamburger (I use venison, actually)
2 large onions, chopped

2 cans light red kidney beans
2 cans dark red kidney beans
1 28 oz can peeled Italian tomatoes
2 4 oz cans green chili peppers (chopped)

Brown hamburger and onions and drain. Add tomatoes, beans, and chili peppers. Do not drain beans before adding - just open can and pour into meat mix. Stir all ingredients together, then add:

1/4 cup chili powder
1 tsp. garlic powder
1 tsp. dried organo, crushed
1/4 tsp. red pepper
1/4 tsp. black pepper

Bring to a boil, reduce heat, and simmer for at least 1 hour and 15 mins. (I usually cook for a bit longer than that)

They have "cheater" tomato blends, i.e. "zesty chili tomato" and also cheater beans with chili spices already added. Brown meat, additional onions or garlic if desiered, add cans, add more seasoning to taste, or jalapeno's or hot sauce........you could do one hot and one not

I've made Woodie's listed recipe several times and it's very good. I use hamburger though that I brown and drain first and I don't use the hot pepper flakes. Like her, I also prefer fire roasted tomatoes.

Heres a super easy and believe it or not good! 2 lb chop meat 1 large can bush's baked beans (any type) 1 large can chopped tomatos drained (del Monte petite)1 large onion diced 2 packages Mc Cormick chili mix and 1 bottle of beer (I use Budweiser).....Saute meat and onion add all other ingredients and cook for 15 minutes DONE!!!!
