No cook jam with frozen fruit????

Hi, Everyone!

You might recall that I teach high school and my students have developmental delays (autism, Down Syndrome, mental retardation, etc).

I'd like to make something simple with the students so they can "make it and take it" as a holiday gift.

I found some info on the Sure Jell website about no-cook jam and we won't have to put anything in a boiling water bath etc.

Is it possible to use frozen fruit for this endeavor? Fresh fruit is so expensive! I was thinking maybe blueberry jam would be easy, fun, delicious and somewhat inexpensive.

I'm collecting small jars (not canning jars) that I will wash out really well at home since my classroom doesn't have hot water or a stove etc, just cold running water.

Sooz, yes you can definitely use frozen fruit. Just let it thaw first. I would suggest using the Ball Freezer jam pectin instead of the sure jell as it uses less sugar. They also have lots of new recipes on their website as they had a freezer jam recipe contest this year. I was one of the second place winners. I used frozen fruit when developing the recipe because the fruit I wanted was out of season.

I tried to post earlier, don't know what happened. Hmmm??? Just thaw the peaches, pit and chop into about 1/2" dice. Then follow any recipe for peach jam. Hello Helen, That sounds wonderful. Even with the cup of chestnuts I cannot imagine there'd be a problem canning with all those fruits, juices and the red wine. When the recipe says, "sugar and acid" is it referring to the natural fruit sugars or is sugar a missing element in the recipe? How is this generally served? As a condiment with meats? Autumn Fruit Jam 2 plums sliced 2 med apples, peeled, cored and chopped 2 med pears, peeled, cored and chopped 1 cup (250 ml) water 2 tsp (10ml) grated lemon rind 2 tbsp (25ml) lemon juice 3 cups (750ml) sugar 1/2 tsp (2ml) each ground cinnamon and ginger Combine plums, apples, pears, water, lemon rind and lemon juice in a large stainless steel or enamel pot. Bring to a boil over high heat, cover, reduce heat and cook for 10 mins or until fruit is softened. Add sugar to fruit and return to a boil, stirring constantly until sugar is dissolved. Boil rapidly, uncovered, until mixture will form a gel, about 30 mins, stirring occasionally. Stir in cinnamon and ginger. Ladle into sterilized jars and process for 15 mins in a boiling water bath. Makes 4 cups (1L) And another: Fall Fruit Jam Categories: Jam/jelly, Preserves, Fruits Yield: 3 Pints 4 c Peaches, chopped and peeled 4 c Pears,chopped and peeled 1 c Apples, chopped and peeled 1/4 c Lemon juice 5 c Sugar Approx. Cook Time: 60mn Combine fruit and cook slowly until tender, about 15 minutes. Add lemon juice and sugar. Bring to boil, stirring frequently. Boil to jam stage (104C), about 15 minutes. When jam stage is reached, remove from heat. Stir and skim 5 minutes. Pour into sterilized jars; cool and seal. Makes about 6 - 8oz jars. Process 10 minutes in boiling water bath. Deanna, I thought about straining out the juice, but if I had made the jam from the unfrozen fruit, it would have had the juice and I'm concerned that not using it would take away too much of the fruit's flavor. It doesn't take that much more boiling time to reduce the juice. It's the same juice that would be drawn out of the fruit by the sugar when you macerate it. I have thought about perhaps straining the juice and reducing it a bit then adding it back into the solids when making something like a pie or crisp to keep the crust from getting soaked from the already liberated juice and to keep the solid pieces from getting overcooked.

jam5, Potatoes have a lot of water. When they are frozen raw the water expands causing bursting of the potato's cell wall structure. The result is mushy, gross potatoes. OTOH, I freeze COOKED scalloped potatoes successfully routinely. Mashed potatoes also freeze well. The reason you can freeze cooked potatoes is because the cell walls have already broken down during cooking. Mashed potatoes are, of course, 'pre-smushed' so freezing isn't a problem. Unfortunately, I'm afraid you'll need to start over. After the casserole is made...cook immediately, then freeze. To reheat, start from frozen (covered). I believe it will take at least 90 minutes. I reheat frozen scalloped potatoes in the microwave because I think they're better but you'll not have that option. So, keep them covered until the last 15 minutes, or so. Sorry...stuff happens. Remember, experience is nothing more than what we get when we don't get what we expected. /tricia

This involves cooking but when I was working with Parks and Recreation my students, aged preschool-6th grade, loved it and we made it at least twice a summer. And they brought their own jars for the leftovers.

Clover Honey

Clover Flowers, as many as the children picked
5 lb sugar

Equipment needed:

Cheesecloth
5 qt pot
hot plate

Have the children go outside on a nice warm day and pick clover flowers. Does not matter if they are the white ones or the purple ones. Remove any stem or leaves so that you only have the flower blossom. We just sat outside and cleaned their stach and the kids seemed to really enjoy it.

Take all the blossoms and put them in the middle of a large square of cheesecloth. Take each corner and and secure with string so that the blossoms are tightly bundled.

Fill the 5 qt pot about 1/2 with water. Add 5 lbs of sugar and stir until dissolved. Place the cheesecloth/blossom bundle in the sugar water and simmer for about 1 1/2 hours.

You've just made Clover Honey and it is surprisely good too. My students loved it!

I would bring my toaster oven and 2 loaves of bread and make dry toast spread with the honey. After the honey cooled I would ladle it into the jars and then they could take home some too!

We did many things with food during the summer and making Stone Soup was another huge favorite along with Dagwood Sandwich Day!

Wow, Michelle, thanks for the idea and directions--makes me wish we had clover flowers somewhere on our campus! Mostly, just regular green grass, some hibiscus bushes that don't always bloom, and some kind of bulbs that flower in spring--oh, and lots of concrete. :O(
