black eyed pea hummus - make ahead?

I'm thinking of making this for an appetizer for New Year's Eve. How long do you think this would be OK in the fridge? I'd like to make it as far ahead as possible. I haven't tried this, but I think it would be good.

Black-eyed Pea Spread

Appetizer Yield 1 cup

Measure Ingredient

1 15 oz can black-eyed peas or

1½ cup Cooked black eyed peas

¼ cup Fresh parsley, tight pack

2 tablespoon Lemon Juice

2 tablespoon Olive oil

1 Large garlic clove, chopped

½ teaspoon Dried tarragon

¼ teaspoon Pepper

Salt, to taste

Reserve a few peas for garnish and place the remaining peas in food processor along with parsley, lemon juice, olive oil, garlic, tarragon and pepper. Process until smooth. Taste and adjust seasonings, adding salt if desired. Transfer to a serving bowl and garnish with reserved peas. Serve with toasted slices of french bread or crackers.
