What I learned about cookies today

I heard this clip on NPR and learned a lot about what makes cookies tick and how to use that info to get the sort of cookie you want. Cold butter and baking powder rather than soda for fluffier cookies. Melted butter for thinner cookies. You bakers probably already know this, but I thought many of you would enjoy hearing (or reading) this. It helped me understand why the recipe specifies certain things as well as how to fiddle with it!

Thanks for the link. I've always enjoyed baking science and knowing the alchemy of baking cookies is essential for judging foods at fairs. It also helps when choosing a recipe so you get the baked characteristics you want, and how to fix the characteristics you don't ;-).

Ha, yeah i saw that. I was going to link that on the post about baking pans and parchment.
When cookies are passed around at work, home baked or shop baked, (NYC has thousands of bakeries), it seems everyone has a favorite style. "oh, yum, flat and crispy with burnt edges", "oh, yum, soft and chewy" ...
Good one in the comments....if they get too hard, place a slice of bread in the bag for just the right amount of time to absorb some moisture and soften a bit. (i'd forgotten that)

My favorite comment. "Oh great, my kid just saw my screen and now wants to bake cookies."

I don't use a scale for my melons, I price all the same price for cantalope. You will find that some people will pick the largest ones, other people pick the smallest one. Larger ones don't have the same sweetness as the small ones. Not knowing your area, prices would be hard to determine. I don't set my prices, in stone, until I show up at the market. I have even let my first customers tell me what they would pay. Sometimes, I change it later, if their price is too low. Your corn price is about what we got last year. Use a scale and weigh up a few quarts of beans to get an idea how much is in the quarts. Legally (weights & measures) says that using boxes/quantities are not recommended and strongly discouraged. Different tomato samples would help sell your tomatoes. Trust me, if a customer taste a tomato that is really great, they will tell your other customers and customers of different farmers. I use a full-size van, and have for several years. You should have plenty of room, except maybe sweet corn time. I save 2liter bottles and freeze them with water. these are my "ice", I have put them in coolers, I have even used a old freezer that didn't work anymore. I strongly recommend the plastic tables made by "Lifetime". I have used them for about 5 years, everyday, 6 months/yr, 3 days/week. After 5 yrs, they are starting to show some wear. I also use plain, flannel backed, green tablecloths. The color is compatiable with almost any produce, and not distracting. Also, it doesn't stain with berries juice. Just throw in washer and dry, ready to go for next market. I picked my up in the after Christmas sales. I strongly recommend a Pop-up canopy, 10x10 best size. Do invest in a better quality canopy. Well worth the extra money, it will hold up better. I have 1 that has seen 5 yrs of market before the top starts to need repair. (I am really hard on my equipment).

What I learned about tomatoes today.

Short, totally unexposed stigmas were not bred into tomatoes until the mid 1960s. And if you read some of those blurbs they say potatoleaf and beefsteaks (most potatoleafs are beefsteaks), so this would mean that newer round fruited varieties resist cross pollination more so than heirlooms. Most modern "heirlooms" are the progeny of crossed old heirloom varieties so the flower structure is not modified the way it is for the newer round red commercial varieties that came from the short stigma breeding program. Not that it matters because the new models are mostly hybrids so if you save seed you get the same/worse genetic mixing that you would from cross pollination. The stigma tips on most non exerted stigma varieties in my garden become exposed by the end of the first day due to bruising damage shrinkage to the end of the anther cone from bee bite-buzz pollinating activity, so nothing is really safe. The whole arguement about varieties that do or do not cross pollinate easily is the same as arguing for the rhythm method to prevent pregnancy, which is a similar mentality to one of my idiot friends who said "I never used condoms because I thought I was sterile because the women didn't get pregnant." If you don't need a pound of seeds, it's a simple thing to go to WallMart, buy a 12 pack of mesh drawstring sachets and bag one or two budded trusses on each plant. Having bees visiting your flowers is not the end of the world though. Because tomato flowers are designed to make contact with their own pollen, those flowers that do get successfully cross pollinated will be fertilized with both self and nonself pollen and the majority of seeds should come from the self fertilization.

I didn't re-read it, but as I recall there was some hope that if children could be identified young enough, they could be helped. Learned something about paint today

I seem to have the worst luck possible with paint of all kinds. I've bought a Wal-Mart brand latex primer that looked like thick marshmallow sauce, went on great, bonded to the old plaster great, and when it dried had little bits of solid pigment streaking the wall everywhere. Went to a very expensive oil based primer for a different room and got fewer similar but more noticeable little mushy blob results. Mixed that paint again today this time using my drill and agitator for 10 minutes and wound up with bigger, softer, blobs and the paint seems sticky right from the can. I guess that is progress of a sort. Will repeat tomorrow. My first message contains the answer to your question.

So is baking 911 a pay to use site? I was going to look at something and you had to be a member just to view it.

EDIT: Just found that a premium membership is $24 per year...no thank you!

If Baking 911 is now a paid membership site, it hasn't always been. I just checked and there is a "free" membership as well as a paid membership. There's still lots of information to be gleaned if you click on the "learn" tab at the top of the page. -Grainlady

Lots to be learned on that site. It's interesting how just a little change in a recipe can make a noticeable difference. My sister and her friends all made Toll House cookies following the recipe on the Nestle's bag. The difference was using butter, margarine, or Crisco. It really affected the crispiness, "spreadiness" and other aspects of the cookies. I have a feeling they did not account for whether the ingredients were cold or melted or room temp.

I was going to look at a tutorial and it said you had to be a "premium member" which is the paid membership. I'll check out what the free membership allows.
