Sorry about the delay in getting back to you, we've been out of town for a week and I just got back late this afternoon and am playing catch-up. Glad you had good results with the recipe. I give credit to my friend Mildred in Missouri for sharing the recipe with me. 1. I would add the coarser flour to the sponge. Either will work (as you have discovered), but the sponge gives the sharp bits of bran time to soak up the liquid and soften in the coarse flour. Those sharp bits can cut gluten strands. 2. Bread Machine Yeast is a type of fast-acting yeast like SAF-Instant is. You made a good substitute. SAF-Instant is a "super" yeast, and somewhat different from the other brands of fast-acting yeast products (Bread Machine, Rapid-Rise and Quick-Rise). I consider SAF-Instant a superior choice over the other fast-rising yeast products, but that's a personal choice. I've used all of them at one time or another over the years. 3. Pan sizes... A 9x5-inch pan is actually designed for quick breads and holds about 2-pounds of dough. For over two pounds of dough you would need a Jumbo Pan - 10x4-1/2-inch. I personally don't like these over-size loaves, especially when trying to cut thin slices. Small loaves are easier to cut thin than large loaves. Another personal preference. Standard 8-1/2x4-1/2-inch pan holds up to around 1-1/2-pounds of dough. I have a pair of Norpro pans that are just slightly smaller at 7-3/4x4-1/4-inches that works very well for 2 loaves. 7-1/2x3-1/2-inch pans - up to 1-pound of dough. I often divide the dough equally into three of these small loaves. I will also divide the dough into one 1-1/2-pound loaf and the rest for something like an 8-inch pan of dinner rolls, 6 jumbo pecan cinnamon rolls, 6 hamburger or hot dog buns. The cultured milk products (dried or liquid buttermilk, kefir, yogurt) seem to aid in the sponge. My friend, Mildred, often uses up to 24-hours, with half the time in the refrigerator, similar to what you did. A very forgiving recipe, as you've just proven. I also like to add 1/2-cup of coarsely-ground multi-grain mixture, similar to multi-grain cereal (5-grain, 7-grain, 11-grain, etc.), except I mill my own. I add it towards the end of kneading to keep the sharp bits from cutting the gluten strands. I like the "tooth" it adds to the bread. -Grainlady

When it comes to bread recipes (machine or manual), the flour measurements are just a good guess (and sometimes they're not even "good"). Gluten amounts in flour will vary from bag to bag and brand to brand; and gluten is a main determinate for proper hydration. If your flour is stored in the bag in a humid kitchen, then there will be more moisture in the flour than someone who stores flour in an air-tight container in the dry environment of the freezer/refrigerator - as a secondary source for some hydration. If you change the type of flour called for in the recipe - from all-purpose to high-gluten bread flour (or vise versa) - or you substitute part of the high-gluten flour for a low-gluten flour (rye, spelt, kamut, barley, oat, etc.) - you'll also need to alter the hydration. As others shared, you MUST check and adjust the hydration as needed. Start checking it about 5 minutes into the mixing/kneading. You want the dough to be formed into a soft, sticky ball. A solid ball is going to be too dry. When you touch the dough ball with your finger, a tiny bit should stick to your finger. A dry or stiff dough ball will result in dry bread just like making bread by hand. You can also switch from sugar to honey and you may find you have a crumb that is more moist. I'm another who never bakes in the Zo - it's just my main tool for mixing and kneading. I won't even let the dough rise in the machine - I'd rather control that in a dough rising bucket. Sometimes I want a long slow cool rise, which you can never get in a bread machine. I use freshly-milled flour, so allowing a timed rise in the bread machine tends to over-proof the dough. Freshly-milled flour doesn't have the extensibility commercial white flour has. Bread machines were designed to use commercial flour in them, and I never use commercial flour. I also bake breads to temperature - checked with an instant read thermometer. -Grainlady

Emily, I'm sorry you had trouble. I think that too much flour might have been the problem. I know the recipe calls for 6 cups of flour, but whenever I make any kind of bread, I always hold back at least 1 or more cups. I only add more flour if I think the mixture is too, too wet. I forgot that I kind-of ran into the same problem you're describing. Even at the five cup stage, the flour mixture seemed more like a kneading dough than a batter. So I remember (now) adding about 1/4 -1/3 cup additional water to make it more batter-like. When I got the batter into the pans, I was so worried about over-proofing the dough. I didn't want to pop the pans into a hot oven and then watch the bread deflate. So I think I could have let the dough rise in the pans longer. I'm sorry you had trouble. Forgive me for not mentioning anything. This old gray mare's brain ain't what it used to be. I need to make a note on my copy of the recipe too or else the next time I make it, who knows what I'll remember. I hope you'll try the bread again. It really did turn out well. My biggest problem right now is that my husband keeps wanting to have "toast" snacks.

Yum! That looks delicious. We had our extended family get-together at my house yesterday, so the menu was (sorry, didn't take any photos): Appetizers: everyone brought something so we had a huge assortment--hot cheese dip, cold cheeses, shrimp cocktail, raisin bread, green onions wrapped with cream cheese and dried beef, etc Dinner was: Chicken breasts with a topping of cranberries, apples, onions, rosemary and brie; roasted herbed potatoes, corn, applesauce, rolls (and I totally forgot to put out the beautiful tomato and fresh mozzarella salad dd brought--darn--and it looked delicious--of course, she didn't notice my mistake until it was too late!) Dessert: Butterscotch peanut butter rice krispie treats, raspberry white chocolate cheesecake squares, assorted cupcakes. Not to mention, bowls of candy and cookies that I had stashed all over the house, and that were thoroughly enjoyed, from the looks of them when everyone left! Nice day--we had a good time. Been a while since we were ALL able to get together.
