Peanut Butter Fudge

Can I make p.b. fudge using the morsels? Does anybody have a recipe? For some reason or other, I can't seem to make good p.b. fudge although I make the chocolate okay. Thanks all of my cooking brains. -Barb

Barb, I had some outstanding PB fudge (no chocolate) in Kittery, ME a couple of months ago so I know it's doable. Do you want to make this without any chocolate? There are recipes with peanut butter morsels but most also call for chocolate.

BTW, what was your parchment paper post about?

Thanks, Mustangs. I do not want the chocolate--only peanut butter fudge. So you think it is okay, right? About the parchment paper. I have seen people on the food network baking their cookies on the parchment paper. I wondered why. Didn't get answers--got to mail this stuff to my kids tomorrow,, so went ahead and baked them on the greased cookie sheets. By the way, I followed that sour cream cookie recipe, but I messed up, I think. They didn't taste right and I remembered I got the light sour cream because my daughter watches her weight. You just got to be naughty--not try to be nice, I guess.Thanks again for answering. All I have to do is taste this stuff to see if it tastes right and that's enoough calories to last me for a year. - Barb

Fudge generally will last at least two weeks at room temp. The fudge I've made has frozen very well (properly cooled and wrapped) and will keep at least six months. Carol

Well, mine has marshmallow cream, Reese's peanut butter chips, but no vinegar. My kids love it, and it's easy and pretty foolproof, as long as you cook to soft ball stage before adding the chips. I find that 5 minutes isn't long enough, I always end up cooking at least 7 minutes. I've made it using a cup of peanut butter instead of the chips and it is a bit softer, but still good. FANTASY FUDGE 3 cups sugar 3/4 cup real butter 2/3 cup evaporated milk 12 oz. Chocolate chips 7 oz. Jar marshmallow cream 1 cup chopped nuts-optional 1 tsp vanilla Bring sugar, butter and milk to a rolling boil for 5 minutes, stirring constantly. (I test it at this point to make sure it has reached soft ball stage, sometimes it takes longer, especially if I make a double batch). Remove from heat and stir in remaining ingredients until chips are melted and fudge is smooth. Pour into a greased 9x13 pan, let cool to room temperature and cut into slices. VARIATIONS: Peanut butter fudge: Sub peanut butter chips for chocolate and omit nuts Cookies and Cream: Sub white chips and stir in 1 cup crushed Oreos instead of nuts Creamsicle Fudge: Sub white chips for chocolate, omit nuts, pour half of the fudge into pan. Stir 2 tsp orange extract, 4 drops yellow food coloring and 3 drops red food coloring into remaining fudge, pour orange fudge over plain fudge and marble in with knife. Candy Cane fudge: Sub white chips, omit nuts and stir in 1/2 cup crushed candy canes, sprinkle top with more crushed candies. Annie

Mine's a little different than Glenda's but basically the same. I'm not a big peanut butter fan but this is so creamy and good I could eat the whole pan. PEANUT BUTTER FUDGE 2 c. sugar 2/3 c. milk 1 jar marshmallow creme 1 c. peanut butter 1 tsp. vanilla Cook sugar and milk to soft ball stage. Remove from heat. Add remaining ingredients, mix well and pour into a 6 x 10" pan. Makes 3 lbs. You can roll into balls and dip in melted almond bark or chocolate coating.
