chinese chicken question

I got a craving for General Tso's (what's the correct way to pronounce that) or sesame chicken, so I started looking at recipes. Most of the ones I found say to use sherry or some dry white wine. Is it really necessary? I don't drink wine or keep it, and I'd hate to buy some just for one recipe (especially since it doesn't keep after being opened). Does anyone have a nice simple recipe for either of those things, or maybe a nice orange chicken recipe (do they all require orange juice concentrate)? I still love the sweet and sour chicken balls recipe I got here a few years ago (though I may have lost it in a computer crash, I think I could make it without looking now... maybe I should have kept the recipes on paper on top of the microwave instead of putting them in the computer!).

If you have something, I'd sure appreciate it :o)
