Quick help, please! How many large eggs make 4 extra large eggs?

My recipe calls for 4 extra large eggs, but I only have large. And can I use yellow cake instead of lemon cake?

Extreme Lemon Bundt Cake

1 (18 ounce) box lemon cake mix

1 (3 ounce) box instant lemon pudding

4 extra large eggs

1 cup sour cream

2 teaspoons lemon extract (optional)

1 lemon, juice of

1 lemon, zest of

1/2 cup oil

I'd just use the 4 large.. or toss in one more for good measure...shouldn't really matter much with all the other "moist" ingredients.

I wouild use an egg and a yolk....and yes, white cake mix will work.
I'd skip the extract....I don't like thea rtificial foavor...thez est wil give lots of lemon...or add more gratedz est.

No offense to Old Hazza, but the eggs we raise are the best I have ever tasted in my life... They are laid by 100% free range chickens. They eat all that is available on our small farm including fibrous grass, bugs, and other such things... I think that the difference might be that they are happy chickens. We have 16 laying hens and each has their own personality, likes and dislikes, etc. I have a favorite named Phoenix because she is fire red. She sits on my shoulder while I mow the grass... As content as can be. They roost in the trees at night and scratch around all day. They visit with us and chase the cats and all sorts of funny things. They are great producers and fun pets. We don't weigh or measure their eggs or rate the shades of the yolks, but we eat them everyday and breakfast just seems like one big dessert! In my life I have never enjoyed a more rich, hearty, creamy, delicious egg from any other source. Can it not be true that happy hens just produce better "quality" eggs? I know we need large farms and such but that just don't settle well with me... It makes me feel bad to think about the mundane lives that they have... Just sayin...

I agree, if your heart is set on it, go for it. All you have to lose is a few seeds. I have to say here that I'm not a veggie grower. But when I started WSing a few years ago I doubted the veterans who told me to use jugs and the plants would transplant well. I believed the seed instructions which told me that some flowers, like poppies and nasties which have taproots would not transplant well. That is why I tried the peat pots and paper pots. I was amazed when I got better results on the poppies and nasturtium transplanted from a milk jug. I learned to listen to those more experienced than me. Now, after all this, I will tell you that I do start some seeds in individual cups. BUT I only do this if I have very few seeds of some type or if I only want 1 or 2 of some particular plant and I don't want to waste a big jug. (My confidence is high enough now that I have faith that I can get good germination on a few seeds.) AND I use larger cups like 6oz yogurt cups or 8 oz. styro coffee cups AND I enclose them all in this underbed storage box, so they hold moisture pretty well. I also found this photo from '06 which shows the long taproot on a lupine, taken from a milk jug. It transplanted fine, grew and bloomed beautifully. Just relax and have fun. Many wintersowers have their own preferred way of doing things. With enough care you can do it many ways. But however you do it, it should be fun. Good luck and let us know how it works out. Karen

I was thinking of this and similar threads recently. Lately I’ve been having a poached egg nearly daily, often making one for my wife as well. And I’ve had exactly one failure, and that failure was still better than what I used to consider a success. I realized afterwards that I forgot the vinegar. I guess that’s key? Along with that, all the standard advice. Fresher eggs, set in strainer for a bit, vortex. The only thing that’s different of late from the rest of my life is that I’m cooking on gas. I have a hard time thinking that’s the difference, but I can’t think of anything else that’s changed. Here’s what breakfast looks like for me lately: poached egg atop a bunch of veggies atop a slice of goetta.

"Your garden always sounds so beautiful." It is not very attractive at the moment :-) Dealing with a lot of winter damage this year! Two trees came down recently - one of the disadvantages of living surrounded by mature woods - and one managed to crash through a major planting area, squashing shrubs and decapitating one of my JM's. ☹ And recent windstorms have left all sorts of debris scattered hither and yon. Needs some serious attention before it looks the slightest bit photogenic again. Now if it would only stop raining long enough for me to get some work done.........

An extra large egg has about 4T of content and a large egg has about 3 1/2 so if you use 5 large eggs you'll be over by 1 1/2 T. You could stir up the eggs in a measuring cup and then dip out the excess if you want to be exact. Or you can just use the 5. With the cake mix I doubt it makes that much difference. Go with whatever is most comfortable.

You can use a yellow cake. It will be less lemon-y. Or you could use the optional lemon extract for the lemon boost.

If it is pure lemon extract, use only half what the recipe calls for and it won't taste artificial at all.

I'm currently baking the last of the lemon loaves for today. They use juice and zest. I would never hesitate to use zest rather than using lemon extract!

I chickened out and went to the store for lemon cake mix and extra large eggs. My bundt last week was a disaster so I was afraid to mess with the recipe.

Anyway, this cake is beautiful with a wonderful texture and tastes as good as it looks! I did only use 1 tsp of pure lemon extract, zest of 1 lmon and juice from that lemon. I almost forgot the oil!

I know how it tastes as I had to cut to cut the top off to make it even when turned over. lol
