I don't think you need the quiche at all....or not the chicken salad and devilled eggs.
A nice luncheon would be the appetizers and either punch or wine...or Iced tea, and chicken salad in a pita pocket, devilled egg and the green salad with the goat cheese.
I think I would skip the quiche....or serve quiche and forget the chicken salad and eggs....but you would need at least 3 or 4 9 inch quiche.
Sounds lovely...and don't forget coffee for the coffee drinkers.

I actually like the idea of the chicken salad, the meatballs and the quiche, but I think devilled eggs may be "egg overkill" with the quiches.

Also you have a lot of soft foods except for the salad. How about some fresh fruit? If your group likes jello molds, I'd choose one with lots of fruit in it.

Cheese as an appetizer is an appetite killer, and the fat fills you up. If they have to have the brie, I'd offer up a tossed salad or some fresh fruit (not in jello, please.)

Chicken salad (with mayo), quiche, and meatballs sound so heavy.

I agree, devilled eggs AND quiche might be a bit too heavy on the eggs, although I like both of them so I don't know how I'd choose.

The menu sounds very nice and I think you'll have plenty without the jello mold, although some fresh fruit or a fruit salad WOULD be nice...

I think your menu sounds great. But I would nix the deviled eggs and add a fruit salad or a fruit and dip tray.

Whatever you do will be fine, you have a good menu planned.

Agree, you have a bit too much food. I'd drop the meatballs, too. They just don't seem to go with the other "ladies lunch" items. You've got a lot of bready things for appetizers. I'd serve one of them and one other lighter appy with the beverages and that would be plenty for before the lunch.

Thanks for your suggestions. I can't drop the deviled eggs because the husband to be's grandmother is bringing them. I think I will drop the hot brie appetizer because I agree it is too much cheese along with the quiche. I'm thinking the little hot dogs and the spinach dip are fine for people as they come in. I'll probably put out some chex mix type of thing as well and that should do it.

How many quiches should I make for 20 to 25 people? I can make two in 13 x 9 pans or 2 or 3 in nine inch pie plates. I'm not sure what to do.

I will keep the swedish meatballs because they are very small in size and maybe I could put them out as appetizers instead of with the lunch. What do you guys think?

lucky, I'd do three quiches in 9 inch pie pans, only because if you do them in the 9x13 pans some pieces won't have any "crust" and people seem to really like that.

I think a 9 inch round quiche, cut into 8 slices each, would be plenty, that would give you 24 servings.

The meatballs would make a nice appetizer and if people are like me, they'll eat the munchies first and not be hungry for the meal itself, and so will eat less. LOL That'll get you by with 3 quiches. (grin)

You serving quiche instead of the chicken salad? If you are serving instead of the chicken salad....cut the quiche into 8 as Annie said...if you are serving the quiche in addition to the chicken salad....cut into smaller pieces as people won't eat a whole piece of quiche AND chicken salad AND devilled eggs AND little hot dogs AND spinach dip....and even think about eating dessert.
I trust these are women? And not teen age boys?
I like to make a party look like a Planned Meal...not a pot luck...even if it is!!
