Granite Counter Experts, I need some advice...

I recently purchased a former showroom kitchen, the store display that is. Included in that purchase was several feet of granite including a full backsplash. Fortunately, the granite was not adhered to the the cabinets or walls, so disassembly was pretty easy. They hadn't done a spectacular job with the epoxy seams, so after a quick pass with the dremel, we got the pieces apart.

My kitchen layout will differ from the store's version, so I will need to have a fabricator cut some pieces and possiblly add an edge. As of now, it doesn't look like I'll have any corners, just straight runs of counters.

After reading some others' trials, I thought I would ask, how should I go about finding a good fabricator? I don't know anyone I can ask in my neighborhood as most still have their original builder laminate counters. What should I ask? What should I be wary of? This is my first foray into granite, and honestly can't afford to mess this up.
