Polish poppy seed cake/bread?

Last night, DH and I went to a local Polish deli/market where he found a poppy seed cake/bread that brought back memories.

He said his aunt & grandmother used to make it all the time (I can't remember the name). He's talked about it a lot in the past. It was rolled up like a jelly roll with an almond-like poppy seed filling.

Does anyone know what this is and do you have a good recipe?

I haven't made it myself, but this looks like a pretty authentic recipe.

The seed from the annual poppy Papaver somniferum are used in cooking. In Canada and the US it is legal to have seeds but illegal to have any other part of this plant. Many people do grow it and suffer no adverse consequences. But the authorities can destroy or make you destroy the plants. Unless you are growing acres of it or growing for nefarious purposes, this will likely not happen. There is the concept of mens rea. Seed colour and basal patch colour are related. Petals with a white basal patch will have white or straw coloured seeds. Petals with a dark basal patch will have dark coloured seeds. The dark basal patch and dark seeds are coloured with anthocyanin. The blue-grey seeds are prefered for baking. In India, the white seeds are more common. If you plan to grow these plants in quantity for the seeds, then go to the baking or bulk section of the supermarket and buy 100 grams for $1 or $2. For white seeds, go to an East Indian grocery store. Sometimes the seeds have been steam heated to prevent them from germinating. You will have to just to do a germination test and find seeds that are fertile. The infertile seeds can of course be used in baking. When making banana bread, line the pan with butter and coat the butter with poppy seeds before adding the batter. Takes the banana bread up to the next level so to speak.

Teresa's Struan recipe is a favorite in our house. Oatmeal bread you say? On my! Annie's Maple oatmeal bread is to die for. makes the best peanut butter sandwiches in the world! Struan Soaker 3 Tbs. polenta (corn meal) 3 Tbs. rolled oats 2 Tbs wheat bran 1/4 cup water Dough 3 cups unbleached bread flour 3 Tbs brown sugar 1-1/2 tsp salt 1 Tbs. instant yeast 4 Tbs cooked brown rice 1-1/2 Tbs honey 1/2 cup buttermilk (I make my own by putting 1 Tbs vinegar in milk) 3/4 cup water Topping 1 Tbs poppy seeds Mix together the ingredients for the soaker. Cover and allow to soak for at least half an hour or as long as overnight. In a larger bowl, combine the dry ingredients, then stir in wet ingredients and soaker. Add more flour or water until the dough can be formed into a ball that is tacky but not sticky. Place the ball of dough on a clean work surface and knead it for 10-12 minutes, then return it to the bowl. Cover the bowl with plastic wrap and allow the dough to ferment until doubled in size, appr. 90 minutes. Remove the dough from the bowl, de-gas it gently, and split it for two loaves or shape it as is for one large. Place the loaves in greased bread pan(s), spritz or sprinkle water on top, and sprinkle a handful of poppy seeds on top. Cover the pans loosely with plastic and allow the loaves to rise until doubled in size again, appr. 90 minutes. Bake the leaves at 350 for 40-55 minutes, until the internal temp is around 190 degrees. When ready the loaves wil be quite brown on top and will make a hollow thud when tapped on the bottom. (Note, this takes 45 minutes in my oven, and I tent the top with foil at about 35 minutes or it gets darker than we like) Maple Oatmeal Bread 3-3-1/4 cups flour 1 pkg dry yeast 3/4 cup prepared coffee 1/2 cup quick cooking rolled oats 1/2 (scant) cup real syrup 2 Tbs. butter 1 tsp salt 1 egg Combine a cup of flour and the yeast. Heat coffee, oats, syrup, butter, and salt until just warm and butter is almost melted. Add to flour mixture along with egg. Beat with mixer on low for 30 seconds. Beat on high for 3 minutes. Using a wooden spoon, stir as uch of the remaining flour as you can. Turn dough out onto a lightly floured surface, knead in enough remainng flour to make a moderately soft doug that is smooth and elastic (3-5 minutes kneading) Shape dough into a ball, place in lightly greased bowl, and turn over once to grease surface of dough. Cover and let rise in a warm place until double in size, about an hour. Punch down dough, cover and let rest 10 minutes. Meanwhile, lightly grease a loaf pan. Shape dough and place nto prepared pan, cover and let rise in a warm place until nearly double in size (30-45 minutes). Bake at 350 about 30 minutes or until bread sounds hollow when tapped. Remove from pan immediately and cool on a wire rack. Note* This bread takes closer to 45 minutes to bake in my oven. Tent if gets too dark) Note* I just throw all the wet stuff into a breadmaker, then then dry stuff on top and make dough that way. Then I remove the loaf, shape and rise again, then bake.

My big food question at the store is "will I eat it". Food thrown out is pure waste (unless the dog is hungry). For me a bread machine will probably never happen. Why? Bakery bread is available to me for $1-$3 a loaf depending on what I'm hungry for. Being single a loaf lasts me 1-3 weeks. A grainy "honey wheat" is one of my favorites and rye I eat for snack food. Most of my bread is toast because I have to keep it in the fridge or it molds. Last bread I made was squash bread. The vanilla and almonds I used were the most expensive items in it. One stupid squash plant has put out 30-40 summer squash and it is still going! I have to grate it into baggies and freeze it because I've given it to everyone and ate all I can eat. I love my bread pans but have to be in the mood to make bread. I often keep frozen store bought dough in the freezer because my real cost is driving to town to buy a loaf of bread. I can make homemade wine for about $1 a bottle! Hand squeeze the grapes and it is better quality then anything I've ever purchased. Even lazy way with store bought apple juice is inexpensive and very fine drinking. Hard to beat road kill for value! : ) lyra

I've never seen poppy seed noodles! I always put them in cole slaw dressing (or, really, broccoli slaw which I'm more likely to make). :) You could also just use them on top of a loaf of bread or some rolls, just scattered for pretty. You could make two rugalach. :) (I know of someone who does that. Just takes a spoon of flour, etc., and makes a couple at a time.) It's not long 'till Purim. You could just throw them in with some new for hamentaschen. A long time ago, I tried to make my own poppyseed spread and just ended up with polished poppyseeds. I made a coffee can yeast cake from Joy of Cooking and put them in that. It had almond extract too. The cake took on an almost greenish cast from the seeds, and it was too heavy, but it made the very best ever bread pudding, half and half with challah, and even better with hard sauce. I think that was more like 2.5 TBSP, though. :(

Holy cow, I didn't know I needed a meat grinder! Thanks for the recipe Alison; that DOES look authentic!

I wonder if I could puree the poppy see mixture in a food processor instead?

BTW, how do you pronounce this cake?

Well, you don't need a meat grinder unless you want to be really really old school authentic. I think you can also buy poppyseeds already ground, depending on where you live. I use the canned Solo poppyseed filling found in the baking aisle.

These eastern European names vary from region to region; one of my cookbooks calls it "makovniky." My older relatives just called it poppyseed roll and they did grind their own seeds. Variations include a nut filling and an apricot filling--yummy. Here in Baltimore where I live now, folks call it mooncake or moonseed cake.

I have great-aunts' recipes making 8 loaves or more. I also have a recipe which I use and love from a cookbook called Slovenske Jedlo and Pennsylvania Slovak Soul Food which makes 4 loaves using a dough that rises overnight in the refrigerator. It seems to be both foolproof and wonderful; I can post it if you are interested.

I'm sure you could use a food processor (or a blender) instead of the meat grinder.

If you want my MIL's recipe for poppyseed roll/nut roll, I can go find the recipe for you. It's in our church cook book. And yes, she was Polish!

Poppy Seed Tea Bread

3 c. sifted all purpose flour
3 1/2 t. double acting baking powder
1 t. salt
1/3 c poppy seeds
3/4 c. sugar
2 T. shortening
2 eggs
1 t. grated lemon rind
1 1/3 c milk

Sift the first three ingredients together and mix with poppy seeds. Beat sugar, shortening and eggs together. Add grated lemon rind. Add flour mixture alternately with milk. Turn into a well greased, lightly floured pan (9 x 5 x 3). Bake for 60 minutes or until done in a 350Â° oven.

Easy Nut & Poppy Seed Rolls

4 1/2 c. flour 2 egg yolks
1 t. salt 4 T. sugar
1 c. lukewarm water 2 yeast cakes (can use 6 sections of envelope yeast)
1/2 c. butter

Crumble yeast into a cup, add water & sugar, let stand until you mix butter & flouer as for pie crust. Make a well, add egg yolks, salt & yeast mixture. Mix until smooth & dough leaves side of bowl. Divide into 4 pieces & roll out as thin as possible, spread with filling. Let stand in warm place, in a greased pan for 1 hour. Bake at 350Â° for 30 to 45 min. or until brown. Cover with a damp cloth for about 10 minutes.

Nut Filling: (or buy canned)
1# ground walnuts 1 T. butter
1/2 c. sugar 1 t. lemon juice
1/2 c. milk
Heat milk, add nuts & stir, add sugar, butter & juice. Cool before spreading on dough.

Poppy seed filling
1/2# ground poppyseed 1 T. butter
3/4 c. sugar 1 t. lemon juice
1/2 c. milk

Mix as for nut filling. Cool before spreading on dough.

Ground poppy seeds are also very popular in Jewish cooking. They're used as a standard filling for hamanstaschen, the pastry served at Purim. My grandmother used a meat grinder, but I agree that you can use a food processor instead. I bet it would work even better--although you miss out on the great upper-arm workout you get from cranking the grinder.

FYI, after ending up with rancid poppy seeds all the time because I never used them fast enough, I finally learned to store them in the freezer. Just in case you buy more than you need.
