Two Pounds Ground Beef - Six People - One Hour

Those are the parameters of dinner tonight. Found out last night we will have two extra mouths (male, teenage mouths at that)for dinner tonight. I will have just about an hour to have dinner on the table after I get home. So, I am defrosting 2# of hamburger and have all the pantry staples, lots of veggies. I can also make a 5 minute stop at the grocery store on my home if need be.Inspire me please. Just no tacos or spaghetti - as those have been done to death at our house lately.

Meatloaf is the first thing that comes to my head, Jane.....sorry I couldn't be of more help.

How about American Chop Suey - a great Maine meal with salad and bread. This doubles very easily and, for some reason, it doesn't taste like spaghetti.

For one pound ground beef I use:

1 box elbow macaroni- cooked
brown 1 lb ground beef,
saute 1 large onion
add 1 large jar of spaghetti sauce
I always add some grated cheese - parmesan or whatever, and anything else that catches my attention.

Mix all together in a large pot to keep warm. Serve

Stuffed Cabbage Rolls, one of my favorites! STUFFED CABBAGE ROLLS 1 small whole Green Cabbage 2 tablespoons Butter 1 pound Ground Pork 1 pound Ground Beef Salt and Pepper to taste 1 Cup Chopped Onion 4 Cloves Garlic, minced 2 Cups Cooked Long Grain Rice 1 Egg Ã¯Â¿Â½ Cup Chopped Parsley 2 15 ounce cans of Stewed Tomatoes 1 5ounce can Tomato Sauce Bring a large pot of water to a boil. Core the Cabbage and place the whole head into the boiling water, core side up. Remove the individual leaves with tongs as they cook, and put them into a colander to cool and drain. Remove as many as you can. Set the remaining head aside to cool and drain. Melt the Butter in a sautÃ¯Â¿Â½ pan, and add the Ground Pork, Ground Beef, Onion and Garlic, and sautÃ¯Â¿Â½ until the meat is completely cooked. Remove from heat and cool slightly. Place all in a large mixing bowl, add the Egg, Rice, Parsley and Salt and Pepper, and stir gently to combine. Place approx. Ã¯Â¿Â½ cup of the meat mixture at the base of the Cabbage Leaf and roll tightly, folding in the sides as you go. Place in a deep stockpot, layering closely. Chop the remaining head of Cabbage and distribute between the layers. Pour one can of Stewed Tomatoes over the first Layer. When all the Filling and Cabbage Leaves are used, pour on the second can of Stewed Tomatoes. Be sure there is plenty of headroom in the pot as the rolls expand as they cook. Bring the pot to a boil and reduce heat to a simmer, cover and simmer for an hour, checking the liquid level frequently, adding Water or Tomato Juice if necessary. After the first half hour pour the Tomato Sauce over the Rolls. Finish cooking. Remove to a large platter and cover to keep warm. Increase the heat to medium and stir the pot until the sauce has thickened. Taste to correct seasonings, and serve the Sauce on the side. These are definitely better reheated the next day. Steve

Sapphires: I use about 6 and one half lbs. of meat for 40 Meatballs. 5 and one half lbs. of beef and 1 lb. of Italian Sausage. They are large Meatballs So , if you use 3 Meatballs ( about golfball size ) for each sandwich, that would be about 6 and one half lbs. of meat. It all according to the size of your Rolls and Meatballs. Of course my Meatballs and Sauce are so good, they would probably eat 2 sandwiches each . LOL !!! Here is my Recipe for my Meatballs if you need it. ****************************************************** Making Meatballs, Traditional Style, in a KA Mixer For years IÃ¢ÂÂve heard about not mixing the meat too much, ( they will be tough ) I know Grand Mom didnÃ¢ÂÂt do it this way but it is worth a try. They are Good !!! Lou Ingredients: Close to Traditional 5 1/2 pounds of lean Ground Beef. ThatÃ¢ÂÂs all that fits in the Bowl. Most times I use Ground Sirloin. 5 links of Mild Italian Sausage. Remove skin and chop into 1 in. pieces 2cups Bread crumbs. I use dried Italian bread 1 cup of Onion chopped small and micro waved , 1 ÃÂ½ minutes w. bit of water. 2 teaspoons of Garlic powder or Fresh Garlic minced fine. I use an Ice Cream dipper to measure out and compact the meatballs Bake them on a Cookie tin with oiled Aluminum Foil. 350 Degrees for about 15 minutes . Test with a meat thermometer to 130 Deg. This Recipe will make approx. 40 meat balls, according to size. You can put them in your Spaghetti Sauce 1/2 hour , before it is done cooking. I, double bag them and place in the freezer for later. Good ol' spag bol! I don't use a recipe, but I just toss in the meat, garlic, parsley, chopped onion, tomato paste, basil, sometimes some grated carrot, a dash of red wine if I have any, chopped mushrooms ditto. I use the same sauce for lasagne. Good ol' Cottage Pie (Shepherd's Pie using beef instead of lamb). I like the topping to be strips of mashed potato alternating with strips of mashed sweet potato. I like my Barbecue Meatloaf (and so do many other people!) Barbecue Meatloaf 500g minced beef 500g sausage mince 1 cup breadcrumbs 2 onions, diced 1 tablespoon curry powder 1/2 cup water salt and pepper to taste 1 tablespoon parsley, chopped 1 egg, beaten 1 garlic clove, crushed (optional) 1/2 cup milk Combine all meatloaf ingredients and mix until well combined. Shape into a loaf and put into greased baking pan. Bake 30 minutes at 180C. Sauce: 1 onion, chopped very fine (optional) 1/4 cup water 1/2 cup tomato sauce 1/4 cup dry red wine or beef stock 1/4 cup Worcestershire sauce 2 tablespoons vinegar 1 teaspoon instant coffee 1/4 cup brown sugar 30g butter 2 teaspoons lemon juice Saute onions until golden and add all other ingredients. At our Krogers, I just bought 2 bags of chicken hind quarters for 69 cents a pound in 10 pound bags. I have found hind quarters in such bags in a nearby IGA for as low as 49 cents a pound. Not organic, but perfect for what I wanted--dog food. This time, I cut off the thighs for DH and me (ending up with about 22 nice-sized thighs) and ground the raw legs and meaty parts of the backs (including the bones) for dog food. I freeze them in 1/3 cup balls and add one a day to our dog's dry food. She strongly approves. I seasoned our thighs and let them sit in the fridge for 24 hours, then, for the first time ever, I cooked chicken in the sous vide. Each thigh went into a cheapo fold over sandwich bag to help keep the vacuum bag clean and preserve the liquids with each thigh. Thanks, Dcarch for the verbal push! Most of them went into the freezer, but I kept enough out for two meals. They are delicious. Moist and flavorful. Before serving I will brown them quickly in a very hot skillet, add the drippings and some wine to the skillet and cook it down, pour it over the thighs, and enjoy. Or I may use the meat in a salad. Or. . . .?

I love quick and easy ground beef casseroles and Kim loves the left overs to take for lunch.

So here you go with some favorites that I could C+P from my online storage. You would have to double a couple of these that only call for one lb. of ground beef....

Crazy Crust Beef Pie
Source of Recipe - CF--Marigene

Crust:
� cup flour*
1/4 teaspoon salt
� teaspoon baking powder
1/4 cup shortening
� cup sour cream
1 egg
Mix and spread into 9" pie pan

Brown:
1 lb. ground beef
1/4 cup onion, diced
1/4 cup celery, diced
1/4 cup bell peppers, diced
1/4 cup mushrooms, diced
Drain well, if using 80/20 ground beef.

Add:
� cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon mustard
� cup cheese, grated

Spoon into crust and sprinkle with more grated cheese.**
Bake 425 degrees for 20-25 minutes.

*I used about 3/4 cup flour
**I added the cheese after it came out of the oven, so that it would burn to a crisp.
Bacon Cheeseburger Potato Pie Source of Recipe \- RC 2 lbs. extra lean ground beef 1/2 c. dried bread crumbs 1/4 c. onion 1/4 c. ketchup 2 tsp. mustard 1/2 tsp. salt 3 slices bacon 1\-1/4 c. water 3 tbsp. butter 1/4 tsp. garlic salt 3/4 c. milk 2 c. Hungry Jack mashed potato flakes (I make my own mashed potatoes) 4 oz. cheddar or colby cheese 1 med. tomato 1/4 c. green onion Heat oven to 375 degrees. In bowl combine hamburger, bread crumbs, onion, ketchup, mustard & salt.Mix well. Press in bottom and up sides of ungreased 9" pie pan. Bake at 375 for 15 mins. Cook bacon till crisp. Drain, cool and crumble. In saucepan combine water, butter and garlic salt. Bring to boil. Remove from heat. Add milk. With fork stir in potato flakes and 1/2 c. cheese. Remove partially baked crust from oven. Pour off any drippings. Spoon potato mix evenly into crust. Return to oven. Bake additional 10\-15 mins. Remove from oven. Top with chopped tomato, remaining 1/2 c. cheese and crumbled bacon. Return to oven. Bake additional 5 mins or tail cheese is melted. Remove from oven. Top with green onions. Let stand from 10 mins. Cut into wedges to serve. ~~~~~~~~~~~~~~~~~~~~~~~~~~~ HAMBURGER DELUXE 1\# hamburg 4 med.onions, sliced thin 2 Tbl. butter 1 tsp salt 1 tsp pepper Brown the above well. Stir in: 2 Tbs flour 1 Tbs Worcheshire sauce 1 8 0z can of mushrooms undrained 1 1/2 C strong beef stock or bullion Bring to a boil and simmer about 5 min. Meanwhile combine: 2 C baking mix (Bisquick is what I always use) 1 C Milk Transfer the meat mixture to a 3 qt casserole and drop the dough by spoonfuls over the top, it will even itself out as it bakes. Meanwhile, in a large nonstick skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the tomatoes, jalape�os, honey, chili powder and salt. Reduce heat to low; cook, uncovered, for 10 minutes, stirring occasionally. Drain pasta; add to beef mixture. Add sour cream; cook and stir until heated through (do not boil). Yield: 8 servings. ~~~~~~~~~~~~~~~~~~~~~ Cheesy Beef Noodle Casserole 2 cups cooked egg noodles 1 pound ground beef 1 can (15 oz.) tomato sauce 1\-2 cloves garlic, minced salt and pepper 1 package (4 oz.) cream cheese, softened 1 cup sour cream 2 green onions, chopped 1 cup grated cheddar cheese Preheat oven to 350\*. Spread cooked noodles in the bottom of a medium casserole dish (2 quart). In a frying pan brown ground beef and garlic. Drain and discard fat. Add tomato sauce to the meat, heat and simmer for 15 minutes. Season with salt and pepper to taste. Pour meat mixture over the noodles in casserole dish. In a small bowl combine the cream cheese with the sour cream and mix until smooth. Stir in green onions. Spread over meat mixture. Sprinkle cheddar cheese over top of the cream cheese. How about Mexican Lasagna? This is T&T. I have no idea where I got the recipe because it was years ago. It feeds six with 1 lb of meat. You will need to double the recipe.

MEXICAN LASAGNA

1 lb ground chuck
1 medium onion chopped
1/4 tsp garlic powder
3/4 tsp chili powder
1 1/2 cups tomato sauce
1 tsp salt
1/4 cup sliced black olives
4 oz green chilies, chopped
2 cups Doritos
1/4 lb grated Monterrey Jack cheese
1 cup small curd cottage cheese
1 cup grated cheddar cheese

Preheat oven to 350 degrees. In skillet, brown meat. Drain off grease. Add onions, garlic powder, chili powder, tomato sauce, salt, olives, and chilies. Simmer covered 15 minutes. Adjust seasonings to taste.

Place half of meat mixture in rectangular casserole dish. Top with 1 cup Doritos, then layer on Monterrey Jack cheese, cottage cheese, remaining cup of Doritos. Add remaining meat mixture and sprinkle Cheddar cheese on top. Bake uncovered for 30 minutes. Serves 6.

Flavorwise might be a little close to your tacos, but this is so good, quick and easy that just thinking about it I'm actually reconsidering tonight's lobster dinner. At one point I had an official recipe but no need:

Brown ground meat, drain if needed and add chili powder to taste. (I'd guess at least a few tbsp for your two pounds.) Add in a bunch of your favorite jarred salsa (probably 2-3 jars, you want a thick sauce, not too wet) and an appropriate amount of frozen corn. Bring to simmer for a bit to get the corn going, top with a generous layer of grated cheddar, cover for a few minutes until melted. Serve over rice.

Protein, veggie, starch, done.

I would use your favorite meatloaf recipe, make into meatballs, then roll in flour, brown in skillet and when nicely browned, add some broth (or water and bouillon), simmer until done...usually less than 15 min. You'll have some gravy in the pan, but if it's not enough, expand with more flour and broth. If you like them, you can add mushrooms, green or red pepper strips, etc. to cook with the meatballs and I sometimes finish with a bit of sour cream or greek yogurt for a stroganoff type dish.

Serve over noodles or rice.

You have just an hour? I'd make 6 patties out of that meat....on my way home buy buns and grill or pan fry the meat.
While the meat is frying wash and put 6 big potatoes in the oven at 450 and wash and cut up some veggies.....and get out the bottle of Ranch!
I hope you have lots of cookies for dessert?
An hour won't let you make much of a casserole or a meat loaf.....but you could make a stove top "goulash"
-Start browning the ground beef
Also start 2 qts of water boiling with 2 tsps salt
-One medium onion chopped....add to and brown with the beef
-1 small green pepper, diced...optional...add to the browning beef in the fry pan\
-3 cloves of garlic added to the beef. drain the fat and add
-1 can of crushed tomatoes the 1 lb 12 oz size
Cook 1 pound of pasta....either fusilli, or elbows, or mini penne or farfalle. When that's al dente, drain and add to the meat. Stir in 2 cups of grated cheese or 3/4 pound cheese cubed.....you can season with oregano and basil and red pepper flakes if your kids would like that.

OR you can make meat loaf "muffins"...make your meatloaf mixture and bake it in muffin cups....you should be able to bake them in 25 minutes.....then add some cheesy potatoes or cheesy spaghetti to the side. ( just grated cheese on buttered pasta with salt and pepper)...

I'd make burgers, stop at the store for buns. Maybe a quick potato salad, mac salad or green salad. Stuff the burgers with some blue cheese or cheddar or mushrooms. Maybe sauteed mushrooms for the top instead.
Maybe some beans on the side. So many possibility's.

I know people will frown, but how about onion soupburgers? No matter how I try with chopping the onions, browning them in butter, adding all the other ingredients, my people prefer the version made with canned campbells french onion soup. I have to admit that I prefer it,too. You cannot beat the canned version for speed and ease. And almost no cleanup, either.

My first thought was meat loaf but there is scant time unless you make mini meatloaves. Hamburgers and a toppings bar sounds like the least stressful way to go. Grill the buns. Add some sides like potato salad or pasta salad, baked beans, fruit salad. Cookies for dessert.

Basically sauted hamburger,onions ,carrots, seasonings,thicken with flour and beef broth to make a gravy. Top with mashed potatoes and bake until potatoes are golden and meat is bubbly.

Well I ended up getting home about 15 minutes earlier than I anticipated, so figured I would have just enough time for the bacon cheeseburger potato pie. I had some bacon on hand and decided this would be a good test for the box of Idaho Instant Mashed Potatoes that I rotated out of our emergency hamper. They really weren't bad and the recipe, which I doubled, was inhaled. I had a container of beef gravy in the freezer so served that as well. A giant salad and about 6 dozen cookies and dinner is done! Chase, when I told my husband about all the help I had deciding what to make, he said why didn't you make Shepard's Pie?! I forgot all about it - next time.

Jane, I'm glad you liked it. We like simple casserole type dishes from time to time. It was lasagna here tonight.
The Hamburger Deluxe recipe is a favorite from the 80's. I know it sounds like a lot of onion but it's not. All said and done it is almost like a stroganoff flavor when you eat it.

Walnutcreek, I cannot in all honesty call it a recipe. It's embarrassing.

Brown and crumble about a pound of ground beef, remove the fat, add a can of campbell's french onion soup ( do not add water), let it simmer for about 10 minutes and serve it on hamburger or hot dog buns. That's it. Embarrassing.

I've been eating it since the 60s, when my mom read it on the back
of the soup can. It is cheap, quick, juicy, tasty, and probably bad for us (but there are a lot worse things!), but I love the way the meat tastes and the buns get all gooey. When I try to get all fancy and make it with sauteed onions and beef stock my family laughs at me and demands "the good stuff."

This is probably a little late, but three recipes come to mind:

CHILI - SPANISH RICE - or - MEATLOAF

MY MOM'S CHILI (pressure cooker)

1 lb hamburger
3 cans tomato sauce, 3 cans water
onion powder - garlic powder to taste
paprika and chili powder to taste
1 l-lb can of Bush's Chili Beans (or 2 smaller cans)

Brown the hamburger in the pressure cooker. Drain the fat unless using the 94% fat free kind. Sprinkle onion and garlic powder over the hamburger to taste, stir. Add 3 cans tomato sauce and the 3 cans of water, stir. Add paprika (around 1 tsp) and chili powder (1/2 to 1 tsp). Place cover on pressure cooker, bring to full pressure, let rock for 10 minutes, cool rapidly in water. Wipe bottom of cooker dry, add the chili beans, put back on the stove and heat up till beans are hot. Serve with warm bread or crackers.

I'm late for your party, but when I have hamburger and want a hurry-up dinner, I'll fall back on hamburger french dips. Lightly butter and warm the rolls while cooking the patties, shape them depending on the size of your chosen bread. Packaged au jus mixed with water and simmered a few minutes while the hamburger cooks...

If you serve with steak style fries, bet those teenage boys will be dipping the fries in the au jus too :)

I am so copying all these recipes! Having only girls, I am constantly amazed at what these 16-17 year old boys can pack away. You can always tell they feel comfortable in your home when they go back for seconds. And thirds. I'm so glad I posted this question today - I will eventually try everything. Thanks again.

Well sure enough, I had ground beef instead of lobster last night. Saved a fortune! I made the recipe I posted above, but there are so many good ideas here which I look forward to trying. Great thread, one that'll surely save me from pizza and McDonalds on days where I really don't have time to do much.

FOAS, I had to LOL when you posted your recipe above. I do the same thing but add some extra water and I actually stir in Minute Rice.... it's quick and only dirties one pan that way. It's the only thing I use Minute Rice for these days.

I'm a little late but I would have suggested making,
Lou's Meatballs and

put them in Pasta Meat Sauce.
Serve them over Rigatoni along with a Salad and Dessert.

I always have Sauce and Meatballs, in the freezer, ready.

That's a good idea Lou - leaving the teens and home and eating out! Actually I like cooking for them, as a lot of them are shocked that we actually have a "sit-down" dinner every night!
But your idea of meatballs in the freezer is a good one and right in line with my thinking last night, which was that I really need to be a little better prepared for when the hoards descend!

I bake them a little then freeze, about 40.
Also keep about 18 servings of Spaghetti Sauce.

Plus prebaked Pizza Dough, among'st all the other goodies.

I never know when the gang is going to pop in.
