What will general contractors do? Or, who else to use?

I am a newbie, who is *this close* to officially having a new house (going through inspection process). Ideas are popping into my head as to how we'd like to do the kitchen remodel, and we want to do mostly DIY, but would like professional help in other areas. Since there are multiple things we want to do, is it best to hire a general contractor? If not, who is the best type of professional to call to help w/ the job?

These are the areas we'd want professional help (picture of kitchen @ bottom) :

1) Remove drop ceiling that houses three flourescent lights (this probably contains some wiring of some sort that might have to be re-routed)

2) Repair kitchen ceiling once fixture removed

3) Install recessed lights in the kitchen

4) Remove soffits above cabinetry (maybe...the soffits might house some plumbing runs, as the master bath is directly above.)

5) Run gas line up to stove from pre-existing, accessible pipes
