NANCY - OOPS! I can;t remember where I got the recipe but here are a couple more you may like to try. One is like this one...Apple Ginger Apple Ginger Jam 2 1/2 lb cooking apples 2 large lemons 2 tsp ground ginger 3 cups water 5 cups sugar 1/4 cup chopped candied ginger (or more to taste) Place a couple of small dishes in the freezer. Peel, core, and coarsely chop the apples, reserving the peels and cores. Put the peels and cores in some cheesecloth or another clean cloth and set aside, then put the fruit into a large saucepan. Finely grate the zest of the lemons, using a Microplane or similar grater, then juice the lemons and add the zest and juice to the pot (I added the juiced lemon "shells" to the cloth, too), along with the ground ginger and water. Now tie up the cloth "bag" and add that to the pot, as well. Bring to a boil over high heat, then reduce heat and allow to simmer for 10 minutes, uncovered, stirring occasionally. Remove the cloth "bag", squeezing as much of the juices out of it as you can, add the sugar to the pot, and stir till completely dissolved. Bring back to a rapid boil and continue to cook without stirring for an additional 10 minutes. Remove the pot from the heat and do a gel test by putting a little of the liquid on one of the frozen plates and return to the freezer for 2 minutes. If the liquid wrinkles when you push it with your fingernail or the tip of a spoon, you're ready to jar up. If the liquid remains runny, return the pot to the heat, bring back up to a boil and cook for an additional 5 minutes. Repeat the test and then repeat cooking/testing if necessary. After removing from the heat finally, stir in the chopped crystallized ginger. Fill prepared jars with the hot jam leaving a 1/4" headspace. Process in a boiling water bath for 10 minutes. Adjust time according to your altitude. Makes: 8 half pints ---------------------------------------------------------------------------- Ginger Jam 1 pound (approximately) fresh ginger root 2 tablespoons lemon juice 1 3/4 ounce package powdered fruit pectin 5 cups granulated sugar Remove outer skin from ginger root and cut ginger into 1-inch thick slices. Place in a 5 quart microwave-safe casserole and fill 3/4 full with cold water. Microwave on HIGH (600 -700 watts) 25 minutes (it should boil for 15 minutes and will take about 10 minutes to reach boiling point). Drain ginger in colander. Return to casserole and fill 3/4 full with cold water. Microwave on HIGH until ginger is tender-crisp and can be pierced with a fork, about 45 minutes. Let stand, covered, about 10 minutes. Drain in colander, return to casserole and fill 3/4 full with fresh cold water. Let stand 15 minutes, then drain well. In food processor or by hand, chop ginger until it is the size of rice grains. Do not puree. There should be about 2 1/2 cups of chopped ginger. Place it in the casserole. Add 1 cup cold lemon juice and fruit pectin. Microwave on HIGH until mixture comes to a full boil, about 5 minutes. Immediately stir in all sugar. Continue cooking on HIGH until it reaches a rolling boil. Allow it to boil hard for a full minute. Remove from microwave and use a metal spoon to skim off any foam that might appear on the top. Immediately ladle into hot clean jars, leaving 1/4 inch headspace. Process jars in a boiling water bath for 10 minutes. Adjust time according to your altitude. --------------------------------------------------------------------------------\ ---- Savory Ginger Jam This jam is naturally spicy and delicious. It is perfect served as a condiment with duck, pork, turkey, or any white meat. This jam is simple to make and provides a different flavor from normal relishes and chutneys. 1 lb peeled and chopped gingerroot 1 cup white sugar 6 finely chopped garlic cloves 1 large ripe chopped tomato (remove the seeds) Dash salt Dash black pepper Place all the ingredients into a heavy saucepan and boil together over medium heat until the gingerroot is soft and cooked. Cool mixture for five minutes before filling sterilized jars to within a 1/4 inch of the rims. Place lids and bands on the jars and screw bands finger tip tight. Ann, Hmmm, now how did you get yours to come out of the pan and stay in such a perfect triangle. :-) My first piece looked as if it was thrown up against the wall. LOL! I buttered the dish and floured lightly. I think I need to put one of those flexible spatulas on my shopping list. However, the next day it set up nicely from being in the refrigerator overnight. I am going to have fun experimenting with this dessert. Try it with fresh cherries soaked in cognac possibly. How about apples with cinnamon or apples with grated cheddar. I have discovered a brand new dessert to have fun with!

A lot of Italian families have Biscotti with their breakfast coffee: Sobe Biscotti Makes 32 biscotti Source: Burt Wolf's Local Flavors, Miami, Florida The Miami Beach restaurant Nemo serves these biscotti with an assortment of fruit sorbets. Pastry chef Hedy Goldsmith suggests an easy way to line the loaf pan with foil. "Invert the loaf pan and mold the foil around the outside. Turn the pan over and place the molded foil right in the pan." 4 ounces (1 1/2 cups) thinly-sliced almonds Butter or Pam vegetable spray 4 eggs, separated 1 teaspoon fresh lemon juice 3/4 cup sugar 1 teaspoon vanilla extract 1/4 teaspoon salt Grated zest of 1 lemon, finely grated 2 cups sifted all-purpose flour 1/2 cup dried sour cherries 1/2 cup dried cranberries Preheat the oven to 350 degrees F. Spread the almonds out on a baking sheet and toast for 10 minutes, until golden brown. Set aside to cool. Line a 5 x 9 1/2-inch loaf pan with foil on all sides. Butter or spray Pam all over the inside of the pan and set aside. TO PREPARE THE BATTER: Place the egg whites in the bowl of an electric mixer with the whisk attachment. Beat the egg whites with the lemon juice until they just begin to hold stiff peaks. Gradually add 1/4 cup of the sugar to the whites and continue to beat on high until they hold firm, stiff peaks. Transfer the beaten whites to a large mixing bowl. In a small bowl, whisk the egg yolks, vanilla, and salt together until the mixture becomes thick and then add the lemon zest. With a wide blade rubber spatula, fold this egg yolk mixture into the beaten whites, once it is incorporated, gradually add the remaining 1/2 cup of sugar. Then fold in the sifted flour and then the toasted almonds, cherries and cranberries. Turn the batter out into the prepared loaf pan. Use the back of a spoon, dipped in water, to smooth out the top. Place the loaf pan into the oven and bake for 30 minutes. After 30 minutes, cover the loaf pan with a piece of foil. This will prevent the top of the loaf from becoming too brown. Return the loaf to the oven and continue to bake for 30 to 35 minutes, or until a cake tester or toothpick comes out clean when inserted in the center. Remove the loaf from the oven and allow to cool for 15 minutes. Invert the loaf onto a plate, remove the foil, and immediately wrap with a fresh piece of foil. Allow to cool to room temperature and then place into the refrigerator for at least 2 hours or overnight. FOR THE SECOND BAKING: Place the two oven racks on the top third and the bottom third of the oven to create two tiers and preheat the oven to 275 degrees F. Unwrap the loaf and using a serrated knife, cut the loaf into 1/4-inch thick slices. Place the slices on a baking sheet and bake two sheets at a time until the cookies are lightly golden: this should take about 30 minutes. You want the cookies to be dry and crisp, but not too dark in color. Halfway during the baking, reverse the baking sheets to ensure that they cook evenly. Once the cookies are dry and crisp, place them on a cooling rack to cool completely and then serve. Store in an airtight container. Whatever you make will be delish and have fun! ********************************************************* Hot Brie Kisses 2/3 lb. brie cheese 2 sheets puff pastry (1 17.3 oz. box) hot pepper jelly or apricot preserves Thaw puff pastry at room temperature for about 30 minutes. Unfold pastry and roll lightly with a rolling pin to remove creases. Cut each sheet into fourths, then cut each fourth in half. Cut each piece in half again to produce 16 even squares of dough per pastry sheet. Lightly spray mini-muffin cups with vegetable oil. Fit a square of dough into each cup. The pointed edges of the dough should extend straight up. Cut brie into " squares. Place a piece of cheese into each dough-lined cup. Top with ¼ tsp. pepper jelly or apricot preserves. (Do not try to increase either of these amounts, or theyÂre run over in the oven) Bake at 400 degrees for 10-15 minutes, or until golden. You can put these together and then freeze them (prior to baking); youÂll need to add a little extra baking time. ***************************************************** MUSHROOM STUFFED BRIE EN CROUTE 1 small onion 1/2 pound mushrooms 2 tablespoons unsalted butter 1 tablespoon dry Sherry 1/2 teaspoon freshly grated nutmeg a 17 1/4-ounce package frozen puff pastry sheets, thawed according to package directions a chilled 14- to 17-ounce wheel Brie 1 large egg Accompaniment: French bread slices or crackers Mince enough onion to measure 1/2 cup and finely chop mushrooms. In a 9- to 10-inch heavy skillet cook onion in butter over moderate heat, stirring, until softened. Add mushrooms, Sherry, nutmeg, and salt and pepper to taste and sauté over moderately high heat, stirring, until liquid mushrooms give off is evaporated. Cool mushroom mixture. On a lightly floured surface roll out 1 sheet of pastry into a 13-inch square and, using Brie as a guide, cut out 1 round the size of the Brie. Cut out a mushroom shape from scraps for decoration. Horizontally halve Brie. Roll out remaining sheet of pastry into a 13-inch square and transfer to a shallow baking pan. Center bottom half of Brie, cut side up, on pastry square and spread mushroom mixture on top. Cover mushroom mixture with remaining half of Brie, cut side down. Without stretching pastry, wrap it snugly up over Brie and trim excess to leave a 1-inch border of pastry on top of Brie. In a small bowl lightly beat egg and brush onto border. Top Brie with pastry round, pressing edges of dough together gently but firmly to seal. Brush top of pastry with some egg and arrange pastry mushroom on it. Lightly brush mushroom with some egg, being careful not to let egg drip over edge of mushroom (which would prevent it from rising). With back of a sharp small knife gently score side of pastry with vertical marks, being careful not to cut through dough. Chill Brie, uncovered, 30 minutes. Brie may be made up to this point 1 day ahead and chilled, loosely covered. Preheat oven to 425°F. Bake Brie in middle of oven until pastry is puffed and golden, about 20 minutes. Let Brie stand in pan on a rack 15 minutes and transfer with a spatula to a serving plate. Serve Brie with bread or crackers.
