Anyone have a good blueberry crisp recipe?

My neighbor gave me a recipe for her blueberry crisp and I swear she left something out. It tasted fine but it was so full of juice that after a few hours even the crust became soggy. I know it's hard to anticipate how much liquid you might end up with when you bake with fresh fruit but this was ridiculous. When I asked her she said that she adds tapioca but forgot to put that in the recipe.

Anyone have a recipe they'd like to share? The local blueberries are at the farmer's stands now. Thanks.

I don't know if you would like this one, but it is delicious:

Â Blueberry Crisp
Â
Â 4 cups fresh blueberries
Â 1 cup all-purpose flour
Â 3/4 cup white sugar
Â 1/2 teaspoon ground cinnamon
Â 1/2 cup mayonnaise
DIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place the blueberries into an 8 inch square baking dish. In a medium bowl, stir together the flour, sugar, and cinnamon. Stir in the mayonnaise until the mixture resembles coarse crumbs. Sprinkle over the top of the berries.
3. Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned.

I have a great one and it's super simple. As soon as the kitten leaves my lap, I'll go get it for you.
mine uses butter and baking powder, flour and sugar.

Blueberry Crisp (or crips, as we call it.) lol

Heat oven to 350Âº
In large, round casserole, put in blueberries, at least 2 cups, probably more like 3-4.

Mix 1 cup flour with 1/2- 3/4 cup sugar, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg, stir until crumbly. Put this over the berries. Drizzle with 1/3 cup melted butter and sprinkle with cinnamon. Bake at 350 for 45 minutes or so, longer if the berries were frozen.

Bake until berries are bubbly, topping is browned and you can't stand to wait any longer. Serve with vanilla ice cream, the good kind!

Ha, I had the same dilemma this weekend, wanted to make "chicken divan" but didn't really know how. Googled some recipes and then realized it was going to be really tough as I didn't have chicken broth (not critical) OR white wine (pretty critical). I ended up improvising with a white sauce, onions, mushrooms and some leftover turkey gravy for a poultry taste. Lemon juice instead of wine. Added cheddar and parmesean for the cheese factor. It was good but the rice got mushy. BF liked it so next time I am going to try this recipe from my Cook's Illustrated "Cover & Bake" cookbook. P.S. Frankly I think some of their fussing is over the top and not necessary. Yes, slightly undercook the rice but I cut up the chicken and sauteed it until more or less done and it was OK. Also steamed the broccoli in the microwave. Chicken Divan Casserole from "Cooks Illustrated Cover & Bake" cookbook, America's Test Kitchen, Brookline MA, 2004. Topping: 1 cup slivered or whole blanched almonds (adjust grinding time depending on which you use, almonds should be pieces, not fine powder) 3 sliced white sandwich bread, torn into quarters 2 TBLSP melted butter, unsalted Process almonds in a food processor fitted with the steel blade until coarsely ground, 5-10 seconds. Add the bread and butter and process to a unformly coarse crumb, about six 1-second pulses. Set the this aside. Filling: Salt to taste 1 med. bunch broccoli (~ 1.5 lbs.), florets trimmed to 1 inch pieces, stalks peeled and chopped medium sized. 1 TBLSP olive oil 1 med. onion, minced 1 1/2 cups long grain white rice (I never use white rice) 3 1/2 cups water (or broth, IMHO) 4 TBLSP unsalted butter 1/4 cup all purpose flour 2 cups low sodium chicken broth 3/4 cup heavy cream (I almost always use half and half) 6 oz. sharp cheddar, grated (~ 2 cups) 1 oz. Spread the cooked rice into a 9 x 13 inch baking dish or casserole, and arrange the broccoli florets in an even layer over the rice. Take the chicken cutlets and cut them in half widthwise (you want them very thin) and then cut these thin slices in half lengthwise, (you're making chicken "shingles"). Layer the chicken, slightly overlapping shingle-style across the broccoli, so that all the broccoli gets covered by chicken. Otherwise, according to these fussbudgets the exposed broccoli with get overdone/dried out. Pour about 2 cups of sauce over the chicken and sprinkle with the bread crumb topping. Bake until the chicken is cooked through and the edges are bubbling, 30-35 min. Cool for 10 minutes. Serve with lemon wedges, passing the remaining sauce separately. Note: I've never made this so I might just sear the chicken breasts in EVOO before shingling them just in case, since I can't seem to get chicken to cook well in my oven. But they are so thin, probably not really necessary. Overcooked chicken will get rubbery. Anyhow, I think they are on to something with this layering technique, since when I made it I just glopped everything together and smooshed it into a casserole and topped with parm. I did this mostly because I was very short on chicken, I didn't have near as much as that recipe above calls for, so I cut mine up into little chunks and added them to the rice. This is alte but delicious for any event. My neighbor gave me this recipe and I made it for a friends shower last sunner. It was the hit of the party! Everyone wanted the recipe. A little different, but very good. I used boneless chx breast. Millionaire Chicken Makes 4 main-dish servings 1 whole 2-to-3 pound chicken (or bone-in chicken breasts) 1/2 head iceberg lettuce (or other crisp salad green) Sauce A: 1/4 cup soy sauce 2 tablespoons honey 1 clove garlic, minced Sauce B: 3 tablespoons peanut or corn oil 2 scallions (green onions), chopped 4 nickel-size slices fresh ginger root, peeled and minced 1/2 teaspoon whole Sichuan peppercorns, slightly crushed 1/4 teaspoon crushed red pepper Garnishes: About 1/2 carton cherry tomatoes, for garnish 1 small can whole water chestnuts, for garnish Poach chicken in simmering water until done. Cool, remove skin and bones, and cut meat into bite-size pieces. Arrange over shredded lettuce on a large platter. Combine ingredients for Sauce A in a small bowl; mix well and let stand for at least five minutes. Meanwhile, combine the ingredients for Sauce B in a small saucepan; heat over low flame for about three minutes. Remove from heat and pour Sauce B into bowl containing Sauce A, mixing well. That's about the most complex bread recipe I've ever seen. Here's the one I've been trying to get correct: Ingredients 2 1/2 cups gluten free all purpose flour without brown rice flour ~ See Recipe 1 cup warm milk (about 110ºF) of choice (nut milk, fresh coconut milk or raw goat or cow’s milk) 1/4 cup organic cane sugar 2 1/4 tsp active dry yeast 1 tsp sea salt 1/4 cup butter or ghee melted and cooled 2 large eggs Instructions In a small bowl, combine warm milk, sugar and yeast. Stir and dissolve the yeast and allow the yeast mixture to sit for 10 minutes. In a large mixer bowl that attaches to a stand up mixer, combine the gluten free all purpose flour and salt and turn the mixer on low and for a few seconds to blend. Add the yeast mixture to the flour and blend on low for 30 seconds. Add in butter and eggs and blend on low scraping the sides as needed. Blend until dough is well blended, about 30 seconds. Turn the mixer on high and beat for 3 minutes or until the batter becomes smooth. Cover the bowl with a towel and allow the dough to rise in a warm place for an hour. I heated my oven up to 100ºF and then turned the oven off and placed it in the oven for an hour. Grease a 8×4 or a 9×5″ bread pan with coconut oil or butter. Stir the dough after it has rose for an hour and gently place it into the prepared bread pan. Cover with a piece of greased plastic wrap and loosely lay it on top and allow the bread to rise in a warm place for another 20-30 minutes or until the loaf rises just to the top of the loaf pan. Preheat the oven to 350ºF and bake the bread for 40-50 minutes. The bread will be golden brown on top and have a hard shell. Remove from pan and completely cool before slicing into it. Once cool, slice and enjoy! Notes Please note: this recipe has been tested to work without brown rice flour. It has not been tested any other way and I highly recommend that you follow this recipe exactly as written with no substitutions.

Thanks for the recipes. The blueberry season is here so I'll be able to try both recipes. Soon local peaches will be here too.

I just made peach cobbler..the kind you put Crescent Rolls on top for the crust.I put 1 cup sugar....3/4 Cup flour together,tossed the peaches in it and put them in the pan with the crescent rolls on top and baked.Came out thick and GOOD! Don't see why it wouldn't work with blueberries...maybe make them wet first to hold the mixture on.

Must be a good year for Blueberries. Plenty available and good prices.

After you make the BBCrisp and want to try something else, make this:

BLUEBERRY BUTTERMILK CAKE ***

* 1 cup all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 stick unsalted butter, softened
* 2/3 cup plus 1 1/2 tablespoons sugar, divided
* 1/2 teaspoon pure vanilla extract
* 1 large egg
* 1/2 cup well-shaken buttermilk
* 1 cup fresh blueberries (about 5 oz)

Preheat oven to 400Â°F with rack in middle. Butter and flour a 9-inch round cake pan. * Or 9inch square pan.
Whisk together flour, baking powder, baking soda, and salt. Beat butter and 2/3 cup sugar with an electric mixer at medium-high speed until pale and fluffy, about 2 minutes, then beat in vanilla. Add egg and beat well.
At low speed, mix in flour mixture in 3 batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined. Spoon batter into cake pan, smoothing top. Scatter berries evenly over top and sprinkle with remaining 1 1/2 Tbsp sugar. Bake until cake is golden and a wooden pick inserted into center comes out clean, 25 to 30 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more. Invert onto a plate.

***I changed the name to BB Breakfast Cake because I found it makes a tasty quick breakfast. After baking I slice it and keep in a Tupperware container in the fridge. Give a slice a couple seconds in the MW and it is gooood.

I'm going to try Marygailey's BB Crisp. I still have a lot of BB's.

Note to Self: put Mayo on shopping list, almost out; put VANILLA IC on same list.

My daughter bought a 5 lb. box of blueberries, so yesterday I made the family favorite, blueberry cream cheese pie, next up is the blueberry crisp. I'll have to remind someone to buy ice cream.

Thanks for all the recipes. I can't wait to pick up some more blueberries tomorrow. Now all I need is some company so that I don't eat all of them.

And Glenda- I'd love to have the blueberry buckle recipe. I love all of those terms- crisp, crumble, brown betty, slurp, grunt, buckle. I can never remember how they differ.

Blueberry Buckle

Â1/4 cup butter, room temperature
Â3/4 cup sugar
Â1 egg
Â2 cups sifted all-purpose flour
Â2 teaspoons baking powder
Â1/2 teaspoon salt
Â1/2 cup milk
Â2 cups fresh or frozen blueberries, rinsed

Â1/4 cup butter, room temperature
Â1/2 cup sugar
Â1/3 cup all-purpose flour
Â1/2 teaspoon ground cinnamon
Preparation:
Cream 1/4 cup butter with 3/4 cup sugar; add egg and beat well. Into a medium bowl sift together 2 cups flour, baking powder, and salt. Add sifted dry ingredients to butter mixture alternately with 1/2 cup milk, beating until smooth. Fold in blueberries. Pour into a greased 9-inch square baking pan. For topping, combine topping ingredients and blend well to form crumbs.
Sprinkle topping crumbs over batter. Bake at 375Â° for 35 minutes.

I made your crisp last night too. I made it with raspberries and blackberries though and I poured a little yellow cake batter over the fruit before adding the crumble top. We had it with vanilla ice cream and it was SO good! I just didn't tell my boyfriend the topping included mayo, which he hates, LOL.
