Easy Holiday Cookie (TJ Ripoff)

Just had to share this easy and yummy "recipe". I was at Trader Joe's and they had a huge display for "Mint Joe-Joe's", advertising that they had to be tasted to be believed. Pretty pricey at $3.99 for a small box, but who was I to argue? So I'm in my car, tasting so I can believe, and hmmmm...these are definitely really good! But the cookie is so Oreo-like. And the topping is just crushed candy canes. Hmmmm again - I could make these. So I did. IMO, they are even better than TJ's!

Mint Oreo Holiday Cookies

2 Packages Double Stuff Cool Mint Oreos

About 1 1/2 Trader Joe's Pound Plus Dark Chocolate bars (or whatever chocolate you like to dip with - total needed is about 25 oz.)

About 3 dozen small candy canes

Put candy canes in a ziplock bag and lightly tap with a mallet or roll with rolling pin to crush. Pieces should be about 1/8".

Pour crushed candy canes into a sieve to eliminate the dust, set aside.

Temper chocolate for dipping. Instructions

Dip cookies in chocolate using a dipping fork or just dunk them by holding with your fingers/thumb.

Shake off excess chocolate and put on a cookie sheet lined with parchment or waxed paper.

Dip about 6 cookies, then stop and sprinkle on the crushed candy canes while chocolate is still melty.*

Repeat until done.

Cool cookies in fridge to set chocolate.

*To make the process go faster, dunk with one hand and sprinkle with the other so you don't have to keep washing your hands during the sprinkling part.

OK here's my easy Christmas Cookie. This one is so easy I don't even get out the recipe when I make it each year. The best part is for us grandparents, I can make the dough ahead of time and put it in the refrigerator and then when the grandchildren come over they will help cut out and sprinkle the cookies.
3/4 cup butter softened
1 cup sugar
2 eggs
1 tbs. milk
1 tsp. vanilla
2 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
cream butter, add sugar, eggs, milk, vanilla, and beat well. Combine flour with salt and baking soda, add to butter sugar cream mixture and mix well. Cover dough and let it rest at least four hours in the refrigerator.
Bake at 350 for about 10 minutes.
makes about 6 dozen depending on size of cookie cutters.

This evening I didn't cook, but my sons came to see me and together we went to see my parents. That is reason enough for them to come to town and spend time with me and my parents, but we planned to go to a new Thai restaurant for dinner and they serve sushi, which they were looking forward to having. But as plans go, the new place was closed for 3 days over the July 4th holiday, so we had to go to Plan B. I said that we would drive by another Thai place to see if they also had sushi and if not, then Plan C, yet another Asian Bistro place that served Thai dishes. Well, what luck! We were approaching the restaurant (second Thai place) and a couple of employees were there holding open the door inviting us into their Open House! Food and wine/beer, etc. all FREE! They did indeed have sushi also! We had lots of selections to choose from on their small buffet and enjoyed our meal very much. We had good service, a very hospitable staff and really nice decor. Their former place was just two doors down, but they decided it was much too big, so they had just re-opened at a smaller spot with a new name. Of course, we each left a large tip but we were able to try many dishes from their menu! What a treat!

Justgottabe, the ornaments are wonderful. They would be simply beautiful on their own, but the meaning behind them makes them extraordinary. Priceless treasures. I don't have a lot of the ornaments my mom, grandmother and to some degree my sister and I made when I was young, and the beaded felt tree skirts haven't held up as well, but I treasure what we do have. I am still knitting -- might still be knitting after Christmas, but as long as I have these hats done beofre the boys go back to school, I will be satisfied and I know the boys will be fine with that. They got the matching scarves last year and know these are coming (I can't bring myself to pull out wool and start knitting when it's over 85 degrees outside -- and that wasn't that long ago). I did make a pair of baby alpaca cowls and make do some mitts to go with one. Started a crocheted hat too. We have all the kitchen goodies packed up and will mail 3 packages this weekend or Monday and then distribute the rest next week. Made 16 tins of peanut brittle on top of the ther goodies and will make stroopwaffels Sunday or Monday (have to wait for a front to pass through and the weather to improve for the caramel to behave). Jen -- ETA that I think your scarves look great and they will love them. The yarn for the guy is a great choice. I know what a hard time I had finding something I liked for my sons.

My biggest sellers at Farmers Market are (in order): Lemon Bars, Fudgey Brownies with and without walnuts, Chocolate Chip Cookies, Peanut Butter Cookies, slice of Marble Pound Cake with chocolate drizzle, Carrot Coconut Pineapple Pecan Muffins, slice of Frosted Cinnamon Raisin Bread, Toasted Coconut Macaroon with centered whole almond, baby Banana Bread loaves, White Chocolate Macadamia (or Cashew) Cookies. All of them are gluten free, some are also dairy free, and some are also egg free. It took a long time determining what people wanted - - what they don't want are cupcakes, candy by the piece (they want 4-6) for really cheap, hard biscotti, snickerdoodles, and slices of any flavor of regular cake. But, they also love the unusual offerings that are sugar free - - hummus with little pita chips, spinach quiche squares, dried apples, and cold gazpacho in a cup. Everything has to be easy to eat while walking around. Rarely do people take stuff home for later, unless, in my niche, they are celiac than they buy a whole plate of assorted for the week. Bwahahahahahaha! I know a woman in my park for whom I used to do dog sitting when she was out of town. She had a two and two, about 1600-1700 square feet. And the first time I walked in there in December I was absolutely floored. Decor was everywhere in the living room, the kitchen, the den, the laundry room/back entrance and the front porch. When I say everywhere, I mean everywhere but the ceilings. it didn't matter if the surface was vertical or horizontal. It was covered. Her bedroom had empty boxes stacked all over it. (That couldn't have been all of them either because of the amount of Christmas stuff. Maybe the others were in the shed temporarily.) I spent ten minutes wandering and staring before I fed Susie so unhinged did I feel. Later, a close friend with whom I shared the dog sitting duties told that Ellen told her she kept all her decorations in a rented storage unit the other eleven months of the year. All I can remember thinking is "She pays to store them???" She could have easily opened a store. No therapist, no garage sales. It was amazing, and I like to think that it was influential though I tended more toward the minimalism range myself already. Ironically, there wasn't a single thing I would have taken from her if she offered it to me.

Hello, Weed, I miss you here too. Mmmmm. I love Oreos, they'd be double good dunked in melted chocolate.

If you make them, just be sure you buy the Cool Mint Oreos, the regular ones won't be as good with this recipe. I also made a batch using regular Oreos and topped them with Heath Bits, but they were just so-so.

Thanks for the recipe Weed! My mom used to buy the white chocolate dipped oreos all the time, but these sound better. I'll have to put this on my list of things to make for gift baskets next year. They look great and seem super easy!
