Look what I baked...........

Between the move and both of us being sick for the last three weeks, I didn't do any baking.

I'm now on my second antibiotic and just this morning I think I am finally starting to feel better. (Touch wood).

Yesterday I had a craving for something sweet so I made...........

Sherry's Santa's Little Helpers.

I love beets. Especially ones fresh from the garden then roasted. Then there's Harvard Beets and pickled beets. I've been craving roasted brussels sprouts, but neither husband nor dd like them...dd used to, but now she's so anti-mom she's sworn off lots of stuff she used to like. Grits I learned to like when I was in Grad school in Billsburg, VA. I liked to go to the Chickahominy House to have a Virginian breakfast: eggs over easy, a slice of Virginia ham and grits, with a buttermilk biscuit. You could have redeye gravy, but I preferred to smush my eggs into the grits. Then there's egg/cheese/grits casserole. Cornbread is best slathered with butter, or drizzled with honey. I rarely do both anymore, but I used to. I brought rolls for the trip to MI to have Thanksgiving. I was up until 2:00 am on Thursday making them. I intended to make whole wheat "brown and serve" rolls, but I didn't hear the timer ding, and so in a panic, I baked them completely so I could taste test and make sure they were edible (they were, although some were big enough to be hamburger buns). For the young fry I made PIllsbury crescent rolls...as I know that dd and others prefer those. On the way home today she was munching on one and said "Oh, what is is that makes crescent rolls so yummy." "in a word," I said, "lots of fat." I have to say that driving up to Hastings, MI on Thursday morning was wonderful. A typical Michigan Thanksgiving day--misc. flurries and the sun breaking through glowering clouds over golden and russet fields which had been lightly frosted with a diamond dust. Breathtaking.

What I learned about bake sales last night

Guidelines for a cookie exchange? Yeah....no jello jigglers, no pretzel rods dipped into cheap melted chocolate, no pretzel wreaths, no flourescent popcorn balls made with jello, no rice crispie or any other cereal based bars, even if they do have crushed peppermint in them, no haystacks made from chow mein noodles and melted almond bark. I am sure there are more but I can't think of them right now! And yeah...it IS all about presentation. As I learned from funeral lunches (well really I knew ti way before that!) Put a table cloth on the table and some sort of centerpiece,e ven if it's only a pumpkin and some fall leaves and people think it's fabulous! many years ago, a friend and I particiated in a Christmas bazaar where the cost of the space went to charity and the entrance fee from the buyers, and what you sold you got to keep. We were not really into tiny painted birdhouses or dressed dolls etc... what we sold was really pretty lame... On the day of the sale I got there about an hour before Liz and set up the booth...had a frame so I could raise a checked table cloth high so it could be seen....and we were swamped. Liz said when she came all she could see was this great mob around one booth....and lo and behold it was our booth. Presentation...pricing and product. Linda C

Looking for the science of Baking 'cookbook'
Q

In no particular order, these are my go-to books for science of cooking/baking. Some are repeats of those above. -Grainlady 1. Understanding Food - Principles and Preparation by Amy Brown (2nd Edition). This is an expensive college textbook, but holds a wealth of information. 2. The Science of Cooking - by Peter Barham 3. The Inquisitive Cook (Discover How a Pinch of Curiosity Can Improve Your Cooking) by Anne Gardiner and Sue Wilson (you can find it in paperback and it's one of my favorites) There used to be a web site by this author. This book explains how vinegar works in pastry. 4. I also like Harold McGee's works, as others mentioned, On Food And Cooking AND The Curious Cook (which is more kitchen science and lore). 5. BAKING 9-1-1 by Sarah Phillips. You can also learn a good deal from her web site http://www.baking911.com/ 6. COOKWISE - by Shirley O. Corriher (another of my all-time favorites - I also love to see her when she appears on Alton Brown's show) 7. BREAD A Baker's Book of Techniques and Recipes by Jeffrey Hamelman (Director of the Bakery and Baking Education Center, King Arthur Flour) I like this book as well as Crust & Crumb by Peter Reinhart. 8. The Bread Book - A Natural, Whole-Grain Seed-to-Loaf Approach to Real Bread - by Thom Leonard

LOOKING for: Baked Salmon puffs

Hey Jessy! Give these a try. They draw raves every time I make them and you can fill them with almost anything! You might try a special salmon salad or a salmon Newbuerd type thing if you want it hot. Alexa ****************************************************** Herbed Profiteroles 8 tbsp unsalted butter 1 cup milk ½ tsp salt fresh ground pepper to taste 1 cup all-purpose flour 5 large eggs ½ tsp baking powder 1 tbsp assÂt chopped fresh herbs (basil, parsley, thyme, tarragon) Preheat the oven to 375. Line a baking sheet with parchment paper. In a small saucepan over high heat, combine the butter and milk and whisk until the butter has melted and the mixture has come to a boil. Stir in the S&P. Add the flour all at once and stir vigorously until the mixture comes away from the sides of the pan and forms a ball of dough. Remove from the hear and turn the mixture into the bowl of an electric mixer. Beat in the eggs, one at a time, until each is well incorporated. Add the baking powder and herbs and beat until the herbs are thoroughly distributed. Using a pastry bag without the tip, squeeze 16 generous golf-ball sized blobs of the dough onto the baking sheet. Bake until golden brown, smooth on the bottom and dry inside, for about 25 to 30 minutes. Remove from the oven and allow profiteroles to cool on a rack before filling.

Hope you are on the mend, Ann!
Our new infant grandson has been sick too, what ever his older siblings passed on to him, so congested, at the doc everyday, too young for any meds.
Your cookies look delicous! I didn't get to them. Could they be Cupid's little helpers for Feb.???

I haven't made those Santa's Helpers yet, I was going and just ran out of time. I think Kathleen has a great idea, they could be Cupid's little helpers!

Did you move again?? Three weeks seems like a long time to be sick... I hope you are feeling better - did you have the flu? I got a flu shot three weeks before traveling, and I'm glad I did, although I don't know how prevalent it is.

I agree that cookies can make you feel better. I seldom make them, but I did make butter cookies for Christmas while I was in Texas, and both my parents appreciated that quite a bit. I'm not sure what's in Sherry's Santa's Helpers, but it looks like they have nuts. I was lucky to get some pecans in Texas to bring home. DB shelled about three quarts of them.

Your cookies look SUPER! My husband asked me to make more. I couldn't believe it.

Don't they taste like little coffee cakes? I love them and have decided that they are my new favorite cookie!!

Yours look beautiful! Hope Moe is feeling good by now too!

This is a nasty bug. Just when you feel like you might be on the mend, it gets worse. I'm tired of coughing.

Maureen, the cookies are on the plate that Jessica sent me a couple of years ago. It is one of my favourites. Love the colours and the shape is perfect for many things.

Ann,

Try taking long hot showers and breath in the moist steamy air. Might help, can't hurt. And you'll be warm and relaxed for cookie therapy.
