? Are you absolutely sure it is 100% WHOLE wheat flour or is it labeled "wheat flour"? "Wheat flour" would include unbleached and bleached flour as well as whole wheat flour because it is all derived from wheat - hence - "wheat flour". ? Are you talking about a panned loaf or free-formed? The suggestions shared above are great resources and a good place to begin studying the subject. My biggest suggestion is to use an older bread-making method -sponge/pre-ferment/soaking method - instead of the more common direct dough method. The direct dough method was developed to make bread quickly and isn't as good a choice for 100% whole wheat breads. I was never happy with my 100% whole wheat bread recipes until I started using an overnight sponge (and no less than 1-1/2 hour if I was in a "hurry"). I also think it's important to add an acid due to glutathione in wheat bran, a substance that will have negative effects on bread by preventing the gluten from bonding, another reason for short squatty loaves of whole wheat bread. I always added 1/8 t. ascorbic acid per loaf, but you will find recipes that include lemon juice or vinegar as the acid. Yeast grows best in a slightly acidic medium, and the acid will counteract the negative effects of glutathione, and will allow the yeast to work longer. The acid helps promote yeast growth which aids the yeast to work longer and faster. Most yeast products includes ascorbic acid in the yeast for the same reasons. If you are making a naturally-fermented bread (aka sourdough - and an even better method for a LOT of reasons), do NOT add an acidic ingredient because it is already acidic. -Soaking 100% whole wheat flour will soften the bran AND develop the gluten without manipulation (kneading) - or it will take less kneading. -Bran (in the whole wheat flour) has sharp edges which tend to cut the strands of gluten during kneading and results in a short, squatty loaf of 100% whole wheat bread. FLsandytoes- Proofing the yeast was an interesting "new" twist to making fluffy bread in a bread machine, and one I've never come across. I think there are probably much better methods, but one just never knows..... I had a friend who used fresh yeast in his bread machine and it had to be proofed, so there are some applications for this process in a bread machine. I have a recipe for white sandwich bread that uses 1 cup of white cake mix, as another interesting example for making "fluffy" white bread, due to the soft wheat flour in the cake mix. FYI -- Two tablespoons of non-fat powdered milk, reconstituted, equals 1/2 c. of milk - which is a reasonable amount of milk in a bread recipe without causing crumb and crust problems. Much more than that and you will need to scald the milk first to avoid the textural problems caused by too much milk (from the milk whey protein). Heating the milk denatures the problematic protein. Try the recipe with 1/2 c. of milk and the remaining liquid water and see if you get different results. You will STILL need to adjust the dough for correct hydration (soft sticky ball) while it's starting to knead. --To improve 100% whole wheat bread, add an acidic ingredient, such as ascorbic acid. Some yeast products add ascorbic acid to the yeast. Yeast works better and longer in a slightly acidic atmosphere. There is a substance in wheat germ called Glutathione which breaks down the gluten - and is why we have trouble getting high-rising, fluffy, loaves of whole wheat bread without lightening the loaf by adding bleached/unbleached flour. By adding ascorbic acid it will help counteract the negative effects of Glutathione and will help repair broken gluten bonds (which is the cause of short, compact, squatty loaves). Add 1/8 t. of ascorbic acid (Fruit Fresh will work - it's a mix of ascorbic and citric acid) per 3-cups of flour. You may also find some recipes for 100% whole wheat bread that add lemon juice or vinegar for the same acidic effect, but it takes a lot more lemon juice or vinegar than it does ascorbic acid. You would have to use 6-times as much lemon juice to be as effective as ascorbic acid. -- Another way to lighten 100% whole wheat bread is to do a sponge with a portion of the flour for at least 1-1/2 hours, and as long as overnight. When I incorporated this method I got high-rising loaves of 100% whole wheat bread that were equal to any light-wheat and white breads I made. Soaking whole wheat flour helps lighten the loaf by softening the bran (bran cuts the gluten) and it gives the gluten time to absorb moisture, which creates strong gluten bonds without manipulation (kneading). I always use a sponge method for 100% whole wheat bread made in the bread machine. -- When adding 10-Grain Cereal Mixture, add it towards the end of kneading at the add-in beep. This goes for anything that may have a sharp edge, like nuts, dried fruit, etc. Adding dried fruit (raisins) early in the process and the kneading will pulverize them. If you add this coarse grind of grains/seeds/beans early in the dough making process it will cut the gluten strands as the dough kneads and you'll end up with a short squatty loaf because of the cut gluten. I prefer adding a dry mixture at the add-in beep because I like the "toothy" nuggets from the cereal mixture. If you don't want that much texture, you may want to soak the mixture first, but still wait to add it at the add-in beep towards the end of kneading. -- Another way to improve 100% whole wheat bread is to wait to add the salt and fat after the dough is kneading and the gluten is well developed. Once you add salt, the gluten tightens and kneading is more difficult - with a bread machine or by hand. Adding the fat early in the mixing/kneading "shortens" the gluten strands and development for a finer textured loaf. You can make the exact same recipe, and by adding the fat early or adding the fat late, it will alter the crumb and size of the loaf. Adding fat early for a close crumb (bread used for sandwiches), add it late for a more open crumb (bread used for toasting). These options are neither right or wrong - but are options to help control the crumb of the bread. --The same bread making rules and techniques that apply to making bread without the bread machine also apply to making bread IN a bread machine - such as when to add salt and fat. Bread machines are designed to make bread quick and easy and doesn't always take into considerations these rules and techniques. -- Check the dough for proper hydration while it's kneading, not after it's rising, while you still have time for the ingredients to be mixed into the dough. -- I only use the bread machine for mixing and kneading dough. As soon as it has completed the kneading I stop the bread machine and remove the dough and place it in a dough-rising bucket. I don't want a machine with a timed rise to determine when the dough has "doubled", which is actually determined by the strength of the yeast, moisture and ambient temperature, not a clock. If I have 1-quart of dough patted into the bottom of the dough-rising bucket, I know it has doubled when it gets to the 2-quart line -- whether it takes 25-minutes or 1-hour. In fact, it's better to only allow dough to rise to just UNDER double because our flour no longer has the extensibility it did as when it was bromated, and whole wheat flour was never bromated. The reasons not to use milk for proofing: 1. Water is more reliable than milk. 2. When proofing yeast in milk use 4-times the amount of milk as yeast. Yeast also tends to clump in milk and not proof as well. If you have to stir the milk/yeast mixture, you will end up killing some of the yeast. 3. Yeast works best with sucrose (table sugar) over lactose (milk sugar). 4. Yeast granules can become coated with milk fat (much like fat coats flour when making pastry) which can restrict water from entering and dissolving the yeast. -Grainlady

yes, Beachlily is right, that was a problem from the first time I posted the recipe and forgot to add the egg! I corrected the recipe but that old mistake just keeps coming back to haunt me! It's Elery's favorite bread and I made it just like you did, I let the bread machine do the work and then shape it and bake it in the oven. I've never made it without the egg, though, that's good to know in case I have a day when I'm out of eggs, so thanks for doing that "research". Now I don't have to. (grin) I have occasionally added half a cup of orange juice in place of some of the liquid, it gives a nice flavor and adds some acidity. Some people think whole wheat bread is bitter (although I love it) and the OJ seems to cut that. I think Grainlady also gave the scientific explanation of why to add citrus juice or acidity to bread dough, although the short version is that yeast likes an acidic environment and so the OJ creates an environment that yeast loves to grow in. You could actually do the same thing with a pinch of ascorbic acid (vitamin C) or a tablespoon of vinegar, but I like the orange flavor sometimes. Anyway, I'm glad you like it! Annie

This recipe was given to me by a dear friend, Mildred, from Arkansas. She got a similar recipe from Pleasant Hill Grain but wasn't happy with it, and together we "tweaked" it. This recipe is designed for a Zojirushi Bread Machine (make the dough only - not baked in the bread machine), but it will work if you want to make it by-hand. We call it "Mildred Bread" at our home, and there is a 3x5 recipe card with the ingredients safely taped to the bread machine. It's our everyday bread. I make loaves, dinner rolls, burger buns, hot dog buns, cinnamon rolls, etc. all from this same dough. Sometimes I'll make one 1-pound or 1-1/2-pound loaf and use the remaining amount of dough for rolls, cinnamon rolls, burger buns, etc.... This recipe is a bit wordy with explanations (that's the teacher in me from teaching so many bread classes ;-), but once you've made it, you'll be able to follow a 3x5 recipe card with the ingredients listed on it, like I do. CAUTION: Not all bread machines are capable of mixing 100% whole wheat bread dough, so check your user's manual. Enjoy, -Grainlady 100% WHOLE WHEAT BREAD Sponge: The night before, remove the bread machine pan and add the ingredients: 3/4 c. warm buttermilk (I use homemade kefir) 3/4 c. warm water 2\-1/2 c. freshly milled hard wheat (red or white) flour 1/4 t. ascorbic acid (if you don't have, or can't find, ascorbic acid, use Fruit Fresh \- but the acid is important!!!) 2 t. SAF\-Instant Yeast (I suggest SAF\-Instant Yeast and have never used anything else for this recipe) Place the pan into the bread machine and set on the Quick Dough setting and allow the ingredients to mix together well for a few minutes (you may need to scrape down any dry particles with a spatula), then turn the bread machine off (at the button, don't pull the plug or you risk damaging your bread machine computer). Shut the lid, and allow this mixture to set overnight. (If you are in a hurry, let the ingredients sponge for 1\-1/2 hours and then finish making the bread.) \*\*If making the recipe by hand, mix the ingredients well using a Danish Dough Whisk or a wooden spoon. Cover the bowl (using a shower cap, a Quick Cover, or a sheet of plastic wrap) and allow to sit on your counter at room temperature. If you have a dough\-rising bucket, use it for mixing the dough as well as for rising. After mixing in a dough\-rising bucket, snap on the lid and allow the sponge to sit on your counter. The next day (or anytime after 1\-1/2\-hours), remove the bread machine pan and add these ingredients to the sponge: 2 T. coconut oil (melted \- or use vegetable oil or melted butter) 2 T. honey or agave nectar 1 egg (I also add 1/3\-1/2 c. of chia seed gel, but that's optional.) On top of these ingredients in the bread machine pan add: 2\-1/4 c. freshly\-milled whole wheat flour 2 t. salt Place the pan back into the bread machine. Set bread machine to Quick Dough Cycle and start the machine. After it has been working for 5\-minutes, or so, be sure to check the hydration of the dough. You want a nice soft ball that is slightly sticky to\-the\-touch. It's better to err on the side of a wet dough than a stiff dry dough, so adjust the dough by adding more flour, or adding more water, if necessary. As soon as the dough has completed the kneading cycle (don't allow the dough to rise in the bread machine), turn the machine off. Remove the pan from the bread machine and dump the dough out onto a SILPAT (no flour necessary). With oiled hands so the dough doesn't stick, pat the dough into a dough\-rising bucket (I use a 2\-quart plastic food storage container that has graduated measurements on the side. I got the container at the local restaurant supply store, but you can find dough\-rising buckets at King Arthur Flour and elsewhere on\-line. I have them in three sizes for different amounts of dough.) Snap the lid on the dough\-rising bucket and allow it to rise until just under "double". (If the dough comes up to the 1\-quart line, it will be double when it reaches the 2\-quart line.) Check the rise after 20\-25\-minutes. It rises quickly if your kitchen is warm, and slower if your kitchen is cool. \*\*If making the dough by\-hand, add the 2 t. salt, 2 T. agave nectar (or honey) and egg to the sponge mixture, and then add enough of the 2\-1/4 c. of whole wheat flour to make a nice soft dough (add more flour than 2\-1/4 c., if necessary). Add the flour gradually \- a little at a time, and beat each addition of flour into the mixture before adding more. A Danish Dough Whisk is the perfect tool for this process (as well as stirring all batters and doughs), but a wooden spoon will also work well. If you do a good job of mixing, you won't need to spend as much time kneading. When making bread dough by\-hand, you need to spend a good deal of time beating the dough with the spoon or Danish Dough Whisk. You develop the gluten during the mixing, as well as during kneading. When you don't have the strength to mix it with a spoon anymore, place the dough on an oiled counter top and knead until the gluten has developed (6\-10 minutes). If you use an oiled counter top you won't have to add flour to the dough. By doing a good job of mixing, you will need only a little additional flour \- or none at all. If your dough is a shaggy sticky glob, you didn't do a good job of mixing. Oil your hands so they don't stick to the dough while handling it. Place dough in a dough\-rising bucket, snap on the lid, and allow the dough to rise until it's just below "double". Follow the remaining instructions... \-\-\-\-\-\-\-\-\-\-\-\- When the dough has doubled in bulk, you will need to take the lid off the dough\-rising bucket and punch it down. To do that, oil your hand and make a fist. GENTLY drive your fist through the center of the dough. Now grab the outer edge of the dough and pull it into the center hole. Do this all the way around. This moves the cooler outside dough to the inside (you have essentially turned the dough inside\-out.) This method degasses the dough and also redistributes the yeast throughout the dough. Place the dough out onto a SILPAT (a silicone mat). Handle the dough with oiled hands \- no flour necessary. If you are making more than one loaf from this dough, now is the time to scale it (weigh it on a kitchen scale), and divide the dough into equal portions. Round each portion. You round the dough by cupping both hands around the dough ball while it sits on the counter and gently pull the dough from the top to the bottom, moving it slightly each time you pull it down, until you have a nice, smooth ball of dough. A smooth ball of dough will get the gluten strands running in one direction and will hold in the gasses in. Cover the dough (I use a bowl or my dough rising bucket, or a sheet of plastic wrap) and allow it to rest for 10\-15\-minutes. This allows the gluten strands to relax. To form a loaf... With oiled hands, pat the dough out on the Silpat until it's about 1\-inch thick and the width of the pan you are going to use. Roll the dough up and pinch the seam closed. Tuck the ends under the bottom. Place the dough, seam side down, into a greased loaf pan/s and cover with plastic wrap. Allow it to double in bulk. Bake in a preheated 375 degrees F oven for about 25\-minutes, or until it's between 195\-200\-degrees F when you check it with an instant read thermometer.
