Whistle - Here you go.... 1. Scalded the milk and cooled it. Mixed warm milk, warmed water and o.j., egg and agave nectar (or honey if you are using it) in the bottom of the pan. 2. Mixed together flours (and vital wheat gluten and flaxmeal, if used) and add to the top of the liquids. 3. Add the yeast to the top of the flour. (Note I added the fat and salt later during the kneading. It takes stress off the bread machine with this much bulk to mix the dough WITHOUT the salt. The gluten develops quicker, and once the salt is added, the gluten strands tighten up making kneading a little more difficult. 4. Set Zo. on QUICK DOUGH. Press START. 5. After 5 minutes of mixing/kneading, be sure to check to make sure the dough has the correct hydration and adjust it if you need to. You want a nice soft dough ball. 6. After 10 minutes of kneading (or when it looks like the gluten is developing nicely, add the melted butter and salt. When the add-in beep sounds, add 1/2-3/4 c. multi-grain cereal (if using it - I milled a mixture of barley, rye, triticale, spelt, oats and rice). 7. When the kneading is complete, remove the dough from the pan and place in a dough rising bucket (or however you normally work your dough). DO NOT allow the dough to rise in the bread machine because this is more dough than suggested for the machine. 8. Allow the dough to rise to just under double. Punch down. Divide dough (I had 3 portions that weighed around 1-lb. 2-oz. each. Round the dough (so you have the ball formed into a tight ball with NO shaggy edges from the dough being cut, and the gluten strands are going from the top to the bottom of the ball), cover (I use plastic wrap) and allow to rest 10-15 minutes so the gluten can relax. Form, cover (plastic wrap), and allow to rise to just under double...... I made one portion into 9 dinner rolls (8-inch square pan) and baked the bread in 8"x4-1/2" NORPRO pans, but I also use heavy-gauge Calphalon pans that are the same size, or will use some ancient Bake King loaf pans that are 7-1/2"x3-1/2" (for dough amounts between 12-16 ounces). If the dough is over 1-pound, I'll use the larger pans. I baked my loaves to 200°F. when tested with an instant read thermometer. -Grainlady

I made the bread this morning and had some for dinner. It was excellent...tasted even better than what I remember at the safari camp! It is a very easy recipe and definitely a keeper. Actually, half the loaf is already gone! The following shows the substitutions I made. Thanks for the tip about not using pastry flour. I didn't change any of the quantities and I think both taste and texture came out very well...except for the mess in my oven and a sunken middle from over proofing! Seeded whole wheat bread (&Beyond cookbook) 2 c cake flour [sub'd spelt] 2 c nutty wheat or whole wheat flour [sub'd white whole wheat flour] 1 c oats 1 c digestive bran [sub'd wheat bran] 1 Tbs instant dried yeast 1 tsp salt 1/4 c poppy seeds 1/4 c sunflower seeds or linseeds [used sunflower seeds] 1/4 c sesame seeds 1/4 c golden syrup [sub'd agave nectar] 1 Tbs olive oil 2 1/2 c lukewarm water Preheat oven to 160 C (320 F). Place all dry ingredients into a large mixing bowl. Mix together syrup, olive oil and water. Add liquids to dry ingredients and stir until well mixed. The mixture will be slightly wet. Spoon into a greased small loaf pan [I used a 9"x5" loaf pan] and allow dough to rise in a warm place in the pan. [I forgot and let it proof for too long...about an hour...made a mess in the oven!] Sprinkle with some extra seeds. Bake in the preheated oven for about 1 hour or until a skewer is inserted and comes out clean. Allow to cool in the tin for a few minutes and turn out on a cooling rack to cool completely.

FLsandytoes- Proofing the yeast was an interesting "new" twist to making fluffy bread in a bread machine, and one I've never come across. I think there are probably much better methods, but one just never knows..... I had a friend who used fresh yeast in his bread machine and it had to be proofed, so there are some applications for this process in a bread machine. I have a recipe for white sandwich bread that uses 1 cup of white cake mix, as another interesting example for making "fluffy" white bread, due to the soft wheat flour in the cake mix. FYI -- Two tablespoons of non-fat powdered milk, reconstituted, equals 1/2 c. of milk - which is a reasonable amount of milk in a bread recipe without causing crumb and crust problems. Much more than that and you will need to scald the milk first to avoid the textural problems caused by too much milk (from the milk whey protein). Heating the milk denatures the problematic protein. Try the recipe with 1/2 c. of milk and the remaining liquid water and see if you get different results. You will STILL need to adjust the dough for correct hydration (soft sticky ball) while it's starting to knead. --To improve 100% whole wheat bread, add an acidic ingredient, such as ascorbic acid. Some yeast products add ascorbic acid to the yeast. Yeast works better and longer in a slightly acidic atmosphere. There is a substance in wheat germ called Glutathione which breaks down the gluten - and is why we have trouble getting high-rising, fluffy, loaves of whole wheat bread without lightening the loaf by adding bleached/unbleached flour. By adding ascorbic acid it will help counteract the negative effects of Glutathione and will help repair broken gluten bonds (which is the cause of short, compact, squatty loaves). Add 1/8 t. of ascorbic acid (Fruit Fresh will work - it's a mix of ascorbic and citric acid) per 3-cups of flour. You may also find some recipes for 100% whole wheat bread that add lemon juice or vinegar for the same acidic effect, but it takes a lot more lemon juice or vinegar than it does ascorbic acid. You would have to use 6-times as much lemon juice to be as effective as ascorbic acid. -- Another way to lighten 100% whole wheat bread is to do a sponge with a portion of the flour for at least 1-1/2 hours, and as long as overnight. When I incorporated this method I got high-rising loaves of 100% whole wheat bread that were equal to any light-wheat and white breads I made. Soaking whole wheat flour helps lighten the loaf by softening the bran (bran cuts the gluten) and it gives the gluten time to absorb moisture, which creates strong gluten bonds without manipulation (kneading). I always use a sponge method for 100% whole wheat bread made in the bread machine. -- When adding 10-Grain Cereal Mixture, add it towards the end of kneading at the add-in beep. This goes for anything that may have a sharp edge, like nuts, dried fruit, etc. Adding dried fruit (raisins) early in the process and the kneading will pulverize them. If you add this coarse grind of grains/seeds/beans early in the dough making process it will cut the gluten strands as the dough kneads and you'll end up with a short squatty loaf because of the cut gluten. I prefer adding a dry mixture at the add-in beep because I like the "toothy" nuggets from the cereal mixture. If you don't want that much texture, you may want to soak the mixture first, but still wait to add it at the add-in beep towards the end of kneading. -- Another way to improve 100% whole wheat bread is to wait to add the salt and fat after the dough is kneading and the gluten is well developed. Once you add salt, the gluten tightens and kneading is more difficult - with a bread machine or by hand. Adding the fat early in the mixing/kneading "shortens" the gluten strands and development for a finer textured loaf. You can make the exact same recipe, and by adding the fat early or adding the fat late, it will alter the crumb and size of the loaf. Adding fat early for a close crumb (bread used for sandwiches), add it late for a more open crumb (bread used for toasting). These options are neither right or wrong - but are options to help control the crumb of the bread. --The same bread making rules and techniques that apply to making bread without the bread machine also apply to making bread IN a bread machine - such as when to add salt and fat. Bread machines are designed to make bread quick and easy and doesn't always take into considerations these rules and techniques. -- Check the dough for proper hydration while it's kneading, not after it's rising, while you still have time for the ingredients to be mixed into the dough. -- I only use the bread machine for mixing and kneading dough. As soon as it has completed the kneading I stop the bread machine and remove the dough and place it in a dough-rising bucket. I don't want a machine with a timed rise to determine when the dough has "doubled", which is actually determined by the strength of the yeast, moisture and ambient temperature, not a clock. If I have 1-quart of dough patted into the bottom of the dough-rising bucket, I know it has doubled when it gets to the 2-quart line -- whether it takes 25-minutes or 1-hour. In fact, it's better to only allow dough to rise to just UNDER double because our flour no longer has the extensibility it did as when it was bromated, and whole wheat flour was never bromated. The reasons not to use milk for proofing: 1. Water is more reliable than milk. 2. When proofing yeast in milk use 4-times the amount of milk as yeast. Yeast also tends to clump in milk and not proof as well. If you have to stir the milk/yeast mixture, you will end up killing some of the yeast. 3. Yeast works best with sucrose (table sugar) over lactose (milk sugar). 4. Yeast granules can become coated with milk fat (much like fat coats flour when making pastry) which can restrict water from entering and dissolving the yeast. -Grainlady

That's odd about the orange juice. It's really supposed to be there to help neutralize anti-nutrients, but it only works for a long rise. I use vitamin C crystals instead. Fresh whole wheat flour isn't bitter unless it's an old fashioned hard red wheat that Grainlady told us about. The I have several kinds of wheatberries and they're always sweet when freshly milled. Once milled, whole wheat flour can go rancid fairly quickly because there are more natural oils in it. This can also make the bread bitter, and it's my theory that that's why so many people put sweetener in their whole wheat breads. 100% whole wheat is tricky because the bran can cut the gluten. It doesn't rerise well, and doesn't want to be handled a lot. Additionally, it doesn't usually rise as fast or as high. though there are some who say they have the knack. For the moisture, however, you need time for the flour to absorb the water. Both for dough quality (including the moistness) and better nutrition you should do a preferment and a soaker, which is the opposite of most bread machine recipes. You should be able to adapt a recipe, however. I don't use a bread machine but as I understand it, it uses instant (rapid rise) yeast for a fast rise. Instead, use small amount of regular yeast, and start it with a small portion of the flour and water. Set it aside to rise and for the yeast to multiply. Like overnight. It should double. Meanwhile, combine the rest of the ingredients to soak up the water. It'll start off seeming very dry, but it'll be moist and sticky after at least 8 hours. You can probably mix it right in the machine and turn it off to soak. Then mix in the preferment and knead. Turn it off again to let it rise. Then bake. You might do well baking right in the machine. Otherwise, let it rise on whatever pan you mean to bake it in. If you don't handle it once it's risen, you won't lose so much of your rise, giving you a better sponge and more chance that it won't be dense or heavy. Good luck!
