Michelle, Salmon Recipe

This is a really easy way to prepare salmon and the butter makes it special enough for a dinner party. The recipe is from Fine Cooking magazine and currently in the cookbook "The 150 Best American Recipes", which I highly recommend.

Sear-roasted salmon fillets with lemon ginger butter

3/4 stick butter (I found this to be way too much, but maybe you like butter!)

2 T lemon juice, warm not hot

2 T peeled minced fresh ginger

2 T chopped fresh chives

Olive Oil for searing

4 salmon fillets

salt & pepper

Mix together the butter, lemon juice, ginger & chives, set aside

Preheat oven to 500.

Salt & pepper the fillets then in an ovenproof skillet over hight heat, sear each side for a few minutes. Put the skillet in the oven adn roast for about 4 more minutes, depending on the thickness and how well done you like your fish.

Transfer to a plate and top with a dab of butter.

This recipe is all about the fish, so make sure you get top quality. It was so easy and quick, I prepared it while clearing the soup bowls from the table and plating the side dishes.
