Indian Tacos

One of the things that I have really missed since moving away from Oklahoma is Dan's Indian Tacos. We always looked forward to these when we went to the Red Earth Festival or the State Fair or Festival of the Arts. Truth be told, Dan's Tacos were probably a good part of the reason we went to those events in the first place! Anyway, here's a run-down with a recipe on an Oklahoma blog:

Now, it's been a lot of years since I've had an authentic Dan's Taco so my memory is no doubt fuzzy but, at least as memory serves, the recipe linked above misses the mark although I'm sure that it will yield a tasty result and is faster & easier than the version that I've come up with after experimenting off n' on over the years.

Back over the Turkey Bird holiday, one of the kids mentioned 'Tacos'. The Taco word got me to hankering for a good ole Dan's Indian Taco and so the wheels started turning and, after a couple of days of ruminating...

I had had two problems from past trials. Getting the Fry Bread right and the Chili Gravy. I wanted a certain toughness to the taco and the flavor of yeast so that led me to seeking out a yeast dough instead of the dozens of baking powder leavened recipes that I had found. Google is my friend; the recipe turned out perfect.

Next was to tackle the Chili Gravy. This is a old food--I remember my grandmother (born in NM in 1900) talking about chili gravy but don't specifically remember her making it. But she must have because I have a vague recollection of what is was supposed to look and taste like. Once again, I put my nose to the Google trail & came up with a recipe that is pretty close to what I remember.

About the beans: I really don't like canned beans but have relented and used them in the past. DS actually likes canned refried beans so I still buy some canned beans but far fewer than I used to since discovering how easy & fast they cook up in the pressure cooker.

Indian Tacos

Chili Gravy with Beans

Cook about 1 1/2 cups of dried pinto beans in pressure cooker at 15 pounds for 14-16 minutes. (I kinda' guesstimate the cooking time depending on how old the dried pintos look. They darken as they age; really fresh ones are almost white mottled w/ brown.) Set aside. (These can be cooked a day or two in advance.)

CHILI GRAVY (Robb Walsh via Homesick Texan blog)

1/4 c. lard or vegetable oil

1/4 c. flour

1/2 t. black pepper

1 t. salt

1 1/2 t. garlic powder

2 t. ground cumin (used about 1/2 t.)

1/2 t. oregano, Mexican preferably

2 T. chili powder

2 c. chicken broth (I think beef broth would be a better choice.)

Combine fat & flour in skillet. Cook briefly. Add seasonings & whisk in chicken broth. Cook until thick.

Stir cooked beans into Chili Gravy.

Notes: Instead of chicken broth, I used some leftover broth from Carnitas that I had frozen...about three cups. Adjusted the am't of flour. Went light on the other seasonings because my broth was already flavored. Not found of cumin--2 t. sounded like waaay too much so I cut that back drastically.

HAMBURGER

Brown 1 pound of hamburger. Season as desired. (I used black pepper only.) Drain fat and set aside.

INDIAN FRY BREAD (MaryKayWow from snowwowl.com)

1 pkg. Yeast (I used instant yeast)

2 T. sugar

5 c. flour

1 t. salt

2 c. warm water

You can either proof the yeast in � c. of the water plus the added sugar or, using instant yeast, combine all of the dry ingredients & stir in the warm water. (Danish dough whisk works great for this.)

Place the dough in a greased & covered bowl & set aside to let double in bulk.

After the dough has doubled, punch down & squeeze off one-inch or so diameter balls of dough. Pat out into approximately 1/4 inch thick 'pizza crust-like' discs of dough. About 5-6 inches across. Immediately fry in hot deep fat, flipping after one side browns. These cook very quickly.

Notes: I made up a smaller batch of dough (using 3 c. flour), more than enough for the three of us.

TACO TOPPINGS

Iceberg lettuce, chopped

Tomato

Chopped onion

Cilantro

Cheddar cheese, shredded

Sour Cream

Salsa

Avocado or Guacamole

Chopped Tomato

Top the hot Fry Bread w/ layers, starting with the Beans in Chili Gravy, then hamburger, and finish with the lettuce and other Taco topping goodies to suit.

Leftover fry bread dough can either be refrigerated & used in a couple of days OR fried up for 'dessert' and topped w/ butter & honey.
