What's for dinner 12/26?

Don't know about you, but I'm ready to get things back to normal. We had a wonderful Christmas day and Christmas dinner and hope you all did, too.

Tonight we're having smoked sausage with steamed cabbage and macaroni and cheese (a Lean Cuisine that my daughter left in the freezer when they were here). Pumpkin pie for dessert. We didn't even cut it last night because we'd eaten so much!

Christmas Brunch here:

eggs benedict casserole with hollandaise sauce
EXCELLENT
pineapple casserole
Mary B's mini biscuits topped with cracked pepper and champagne jelly

Dessert: Rosemary Olive Oil cake Better warmed and served with blueberry sauce

Lots of sweets and snacks, which they took home cause I SURE didn't need them around me.

Good Morning Ladies How is everyone doing?? I am feezing never thought it would get cold here in Cali:) Our summer seemed to last forever, the poor trees went through fall and winter in a weeks time. I am finally all ready as long as my DD's do not call and say oh by the way so and so is coming to dinner too:) My younger DD may have her new BF come, but I can run to the grocery store and get a GC pretty easy they sell so many kinds there. I feel bad if everyone does not have something to open. Not going to tell you all how I am doing on my eating:( Have a fun day, I just finished a book and am starting a new one as soon as I get off here:)

We had tacos one day last week. We love them too Sue! I had mini-sausages (breakfast sausages), stir-fried with peppers, onions and pineapple chunks in a soy, brown sugar, pineapple juice sauce over rice. The rest of the apple pie and leftover chocolate-zucchini cake for dessert.

Cheryl made lasagna and Alfredo pasta, I made sandwich rolls and we had the left over veggies, and left over desserts. There were not many leftovers and I also baked a cherry pie and added to the supper. Six of us again to eat. Sue

There were six of us again this evening. Cheryl brought round steak and I fixed chicken and noodles, mashed potatoes, corn, broccoli, coleslaw, roasted carrots, veggie tray, yeast rolls, and Cheryl also brought a black raspberry pie and a pumpkin pie. Iced tea for me to drink. It is really blowing snow out now and getting colder. Sue

My son brought me leftovers today from his Christmas dinner yesterday. I really appreciate having food dropped off so there's no need to cook.

Here in N. NV we have alot of Indians. Few reservations in the area. They sell these on the corners sometimes and at area events. You take bread dough pull it out into a circle, put a hole in the middle,Think bagel and deep fry it.... yea, low cal hahahaha It puffs up and without the hole in the middle, which kinda gets real small with the puffing of the fried bread, it would be soggy in the middle. Then top with all your taco favorites. Meat, cheese, lettuce, tomato whatever. Either pick it up or eat with knife and fork. Yummy.

I just fry mine up in a deep skillet with veg oil. Don't have a deep fryer.

Ham and eggs for me, ham, eggs and french toast made from Christmas bread for DH! For dessert we split a wonderful orange and pear!

well, the bread baked instead of rising.... had the low temp on too long in oven, hoping they would rise a bit.... well..... found out too late to go to store to get dough or make new stuff. Had a roll of cresent rolls in the fridge.... used that. Kept them in pairs of two, pressed seam together and fried them up.... a bit more greasy and flakey, but man were they good! hahahahah Would have made really great sopapillas. Will have to remember that! Easy to do.
