Need a cookie recipe.....

I want to make a chocolate cookie and when they come out of the oven, put a mini Reese's cup in it similar to the Peanut Butter Bloossoms recipe with Kisses.

Anyone have a delicious chocolate cookie recipe they will share with me?

Do you mean the recipe made in mini muffin tins? You'll find the link below.

Thank you for looking for me, but I don't want to use a peanut butter cookie, I want to make it with a chocolate cookie.
I am already making peanut butter blossoms which are a peanut butter cookie with a Hershey's Kiss in the middle. Wanted to use a different kind of cookie for the Reese's.

Oh yes Maureen they sure do make it. Should be able to find it in most any baking supply place. The craft places probably even carry it these days. Did you ever eat Toblerone or some of the Italian nougat stuff? That had edible paper on it. Made of rice if I recall correctly. This modern stuff is better though. You can Google it to find out what might be near you. If you did that though you'd want to use the edible ink markers. Yes, those are cool too. LOL.. The regular parchment paper would be a nice simple solution, since you might get real complicated with rest of meal before we get done with ya. Smiles. LOL at the bling. Well, I was just trying to think of what a diploma thing might have on the edges.

Here is the long-ago original recipe from the Quaker Oatmeal box. I understand the one printed there now is different. This is the one that I have always used and everyone enjoys so very much Original Quaker Oatmeal Cookies 3 cups Quaker oats, (quick or old fashioned, uncooked) 1 cup all purpose flour 1 tsp salt 1/2 tsp baking soda 3/4 cup vegetable shortening 1 cup firmly packed brown sugar 1/2 cup granulated white sugar 1 egg 1/4 cup water 1 tsp vanilla Heat oven to 350. Grease cookie sheet. Combine oats, flour, salt and baking soda. In large bowl, beat together shortening, sugars, egg, water and vanilla until creamy. Add dry ingredients, mix well. Drop by rounded teaspoonfuls onto prepared cookie sheet. Bake for 12 to 15 minutes. For variety you can add chopped nuts, raisins, chocolate chips or coconut

How about ground chicken with added flour and egg ( can he eat egg?) to hold it together? I would cook chicken and put it into the food processor to chop very fine....not make mush but finely chopped. Then stir it up with egg, and flour and perhaps a little milk for moistness....and shape into patties and bake crisp....sort of crisp. Or you could just season the ground cooked chicken and roll into crumbs and bake. Soon he will have enough teeth to just take pieces of chicken and roll in crumbs and abke... My son would eat anything that looked like dip....that he could scoop upw ith a chip of a cracker. So I blended cottage cheese with garlic powder and sometimes blue cheese and a little milk and he would eat that by the bucket....but don't give him a dish of cottage cheese!! Kids! Linda C

Mint Chocolate Cookies Bon Appétit December 2000 YieldMakes about 48 Ingredients 16 tablespoons unsalted butter, room temperature 1 3/4 cups sugar 2 large eggs 3/4 teaspoon peppermint extract 2 cups all purpose flour 1 cup unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt Preparation Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Using electric mixer, beat butter and sugar in large bowl until well blended. Beat in eggs and peppermint extract. Add flour, cocoa powder, baking soda, baking powder and salt and beat until well blended. Form dough into 1-inch balls. Place 2 inches apart on prepared baking sheets. Flatten balls slightly to 1 1/2-inch rounds. Bake cookies until edges begin to firm but center still appears soft, about 13 minutes. Cool on baking sheets 5 minutes. Transfer cookies to racks and cool completely. (Cookies can be prepared up to 5 days ahead. Store in airtight container at room temperature.)

Lisa, here is a recipe that I had, never tried it, but it looks yummy. I think you could sub the PB cup for the Kiss.
I also make a PB cookie and bake it in a mini muffin tin and then press a PB cup in the center after it bakes and that's really good as well!

Chocolate Thumbprint Cookie
ÃÂ· 1/2 cup butter
ÃÂ· 2/3 cup sugar
ÃÂ· 1 egg, separated
ÃÂ· 2 tablespoons milk
ÃÂ· 1 teaspoon vanilla
ÃÂ· 1 cup all purpose flour
ÃÂ· 1/3 cup baking cocoa
ÃÂ· 1/4 teaspoon salt
ÃÂ· 1 cup finely chopped walnuts
ÃÂ· .
ÃÂ· Filling
ÃÂ· 1/2 cup confectioners sugar
ÃÂ· 1 tablespoon butter(softened)
ÃÂ· 2 teaspoons milk
ÃÂ· 1/4 teaspoon vanilla
ÃÂ· 24 milk chocolate kisses, unwrapped
Preparation:
In a large mixing bowl, cream butter, sugar, egg yolk, milk and vanilla until light and fluffy.
Combine flour, cocoa and salt in a separate bowl; gradually add to creamed mixture, stirring until well blended. Cover and chill cookie dough for one hour, or until firm enough to shape into balls.
In a small bowl, lightly beat egg white. Shape chilled dough into 1-inch balls, dip in egg white, then roll in chopped nuts. Make an indentation with thumb in center of of each cookie. Bake at 350ÃÂ° for 10 to 12 minutes, or until center is just set. Combine the first four filling ingredients in a bowl; mix until smooth. Spoon about 1/4 teaspoon of filling into each warm cookie indentation, and gently press a chocolate kiss in the center. Carefully remove chocolate thumbprint cookies from baking sheet to wire racks to cool. Makes 24 cookies

Thanks, Gina. That sounds good. I could even roll them in chopped peanuts instead of walnuts.
I also found a delicious sounding chocolate cookie at the Hershey's site Grainlady sent me to.
