Beef Stroganoff! Baked potatoes and whatever. Good on top of tacos. Slice cucumbers and onions into sour cream and add salt and pepper.

This is a good coffee cake.

*** Coffee Cake

1 cup sour cream
1 tsp bk soda

4 oz butter (or margerine)
1 cup sugar
2 eggs
1 1/2 tsp vanilla
1 1/2 cup flour
2 tsp bk pd

1 Tbsp cinnamon
1/2 cup loose br. sugar
2 Tbsp chopped nuts

Add soda to sour cream; set aside
Sift flour with bk pd; set aside
Combine cinnamon, br. sugar with nuts; set aside
Grease tube pan; set aside; heat oven to 350 degrees

Combine butter, sugar, eggs, flour mix the usual way. Blend in sour cream.
Pour 1/2 the batter into greased tube pan
Sprinkle with 1/2 cinnamon-br.sugar-nut mixture; add remaining batter,
top with remaining cinnamon-br.sugar-nut mix.
Bake at 350, 35-45 min. Cool 10 min. & remove from pan.

Peas & Pasta salad w/ bacon. Use half mayo/ half sour cream for the dressing. Black pepper, green onion & whatever seasonings that float your boat. I like a bit of tarragon.

This is a good chocolate cake even though it does use a mix. It's been very popular with everyone I've served it to.
I make it in a bundt pan.

Devils Food cake mix
1 small package instant chocolate pudding (3 something ounces)
4 eggs
1 cup oil
1/2 cup water
1 cup sour cream
1 bag chocolate chips
1 tea. vanilla

Mix everything together except chips- beat for a minute or two- then stir in chips.
Bake 45-55 minutes 350 until toothpick comes clean. Be careful because a chocolate chip might stick to the toothpick and look like batter. Check several places.

COLD CORAL SOUP

3 large cucumbers
1 small onion, sliced
1 cup tomato juice
1 Tbs. tomato paste
1 cup chicken broth
1 quart sour cream
1/4 cup dry fino sherry
12 small fresh basil leaves for garnish

Peel the cucumbers and slice in half lengthwise. Spoon out and discard the seeds. Cut into chunks and place the cucumbers in a blender or food processor. Add the onion, tomato juice, and tomato paste, and process until pureed.

Pour the mixture into a large bowl, add the broth, then whisk in the sour cream and sherry, beating until well incorporated. Cover and refrigerate for 3 to 4 hours.

Lade into chilled soup bowl and float 2 or 3 basil leaves in each. Makes 4 to 6 servings

Ann T's cream cheese danish takes a cup of sour cream, it's easy, delicious and freezes extremely well, makes a lot:

Cream Cheese Danish Coffee Cake

1 c sour cream
1/2 c sugar
1/2 c butter
1 t. salt
2 packages dry yeast (4 1/2 t.)
1/2 c warm water
2 eggs beaten
4 c all purpose flour

Over low heat in a small saucepan, heat butter, sour cream , sugar and salt until warm and sugar is dissolved. Cool to room temperature.

In large mixing bowl, dissolve yeast in warm water. Mix sour cream mixture with yeast and add beaten eggs and flour. Will be a very soft dough. Put in fridge overnite to rise. ( May be done same day. Put in fridge for about 2 to 4 hours, and then proceed. )

Turn dough out onto a well-floured surface and knead 6 or 7 times. Divide dough into 4 equal pieces and roll each piece out to 12 X 8 inches. Spread 1/4 of filling on to each piece and roll jellyroll style from long side. Pinch seams and ends to seal. Place seam side down on buttered baking sheet and cut X's in top. (About 6 X's) (Danish should be slightly flatten, and about 3 1/2 to 4 inches wide and about 12 inches long.

Cover and let rise until about double in size - approximately 1 hour Bake at 375 for 20 to 25 minutes or until golden. Let cool on wire racks.

Filling
2 packages 8 oz. cream cheese
3/4 c sugar
1 egg beaten
1 t. vanilla extract
1/8 t. salt
Filling: To make filling beat together cream cheese with sugar, add egg and vanilla extract and salt.

Glaze
2 1/2 c confectioners sugar
1/4 c milk
1 t. vanilla extract
toasted sliced almonds.
Combine the first 3 ingredients for glaze and drizzle over loaves with toasted almonds.

SALMON QUICHE WITH WALNUT CRUMB CRUST

Preheat oven to 375 degrees F

Pastry:
Easy - doesn't require rolling, just press down with fingers and back of a spoon into a 24 cm (9.5 inch) pyrex flan dish or pie plate.

1 - 1/2 cups flour
1/2 teaspoon salt
1 cup cheddar cheese (grated)
1/2 cup butter
1/2 cup walnuts finely chopped

Mix these ingredients in a bowl, cutting in butter with two knives until crumbly then press into a pie dish, including up the sides.
Bake in pre-heated oven for five minutes. Then remove from oven.

Meanwhile mix the following ingredients in a bowl:
Filling:

3 eggs beat till frothy
3/4 cup sour cream
1 cup mozzarella cheese (grated)
1/2 onion, chopped
1 can salmon (7 3/4 ounces) - I prefer fresh piece salmon that has been baked - 'smoked salmon' is really good too.
1/4 cup mayonnaise

Pour these ingredients into the pie crust - bake in oven approximately 45 minutes or until knife inserted in centre comes out clean.
The top is usually a nice golden brown colour. If you don't have salmon on hand, tinned tuna works well too in this recipe, but salmon is better.

If you have a Food Saver with the vac pac for pint jars, you can vacuum pack them in pints and store in the frig for a couple of months. I buy sour cream at Sam's Club in the 5# containers and it keeps for months if vac-packed in smaller portions.

BTW, I do the same with Hellman's Mayo.
