A couple of years ago I started making marshmallows just to impress my DGS. I wanted him to have the memory of Grammy making him marshmallows. Hasn't worked yet, I'll try your coconut marshmallows that might do the trick.

LOL, Jane, don't let them fool you, I STILL do that when trying to take "good" pictures. That's why mine are crooked, blurry, too close, too far away. Plus they have to be uploaded to a picture site and edited before they are posted here. It takes me days.....

those marshmallows look awesome, though. Do you just eat them like candy? Well, duh, I guess they are candy but I always think of hot chocolate when I think of marshmallows and winter, so do you ever make them without coconut? Would you roll them in something else? I guess I mean do you use them for anything else, like topping a cookie or making s'mores or topping hot chocolate or are they just inhaled immediately?

They look scrumptious! Your marshmallow thread inspired me to make them, but when I got ready to do so the forums got funny & I can't find the recipe. I looked up Martha Stewart's recipe that seems similar, but now they are predicting snow & rain. I believe marshmallows are not supposed to do well with humidity? I'll try them Monday, hopefully mine will turn out as nice as yours. I'm planning for chocolate dipped ones, in hopes that they will keep til Wednesday for our family get together.

How pretty! And I bet they taste awesome too. I've made the marshmallows and everyone loved them. I remember thinking that they were ok....but still just marsmallows LOL. Anyways, keep the pictures coming!

I keep telling myself that I will set up a ready to go kitchen camera to keep in my pantry. Yeah, right. My husband generally has batteries in his, but I have to find it, and then I have to bother him to unload it as I don't know how to unload from his camera to my computer and can't manage to remember to ask him to show me how. I know how to download mine, but I never have batteries.

After all that, Jane, your photo was good enough to show they look yummy!

Annie, the coconut ones are just meant to be eaten like candy, but I've also made plain and chocolate coated plain ones and cut them smaller for cocoa. December's Fine Cooking magazine has a cake on the cover that is topped with homemade marshmallows cut in tiny cubes.
On another forum, someone is packaging homemade marshmallows along with a cube of chocolate (molded in an ice cube tray) speared on a candy cane stick. The idea is to heat a cup of milk, then stir with the chocolate cube/peppermint stick to melt the chocolate into the milk and top with the marshmallows - upscale cocoa. I'm going to try to remember that idea for next year. I'll take pictures! LOL
