blackeyed peas for breakfast??

I'm having a small gathering New Years Eve, with friends spending the night. In the morning I plan to serve a breakfast casserole, sweet rolls, other bread, juice, tea & coffee & possibly fruit. I'd really like to incorporate the traditional black-eyed peas into breakfast, as my out of town company will leave right after breakfast.

All I can think of is a Texas Caviar type of dip/salad. Any other ideas? This will be a casual buffet, and I hope to do as much as possible beforehand. Since my company arrives the evening of the 28th, I'd love to have something I could do the afternoon of the 28th, and serve 4 days later on the 1st.
