Hi,

I'm looking for a recipe for chocolate I can use to dip truffles and biscotti. I've tried melting chips and it tastes good but doesn't get hard enough unless refrigerated. Any ideas?

Had this, not too long ago, and made it myself, was enjoyed by all.

Chocolate Mousse

2 squares BAKER'S Semi-Sweet Baking Chocolate ***after I made this, I found Nestle's melted chocolate, that you can buy. Gonna try it the next time I make this.

1-1/2 cups thawed COOL WHIP LITE Whipped Topping, divided

HONEY MAID Grahams Chocolate Sticks

PLACE chocolate in small microwaveable bowl. Microwave on HIGH 1 min., stirring after 30 sec. Stir until chocolate is completely melted.

ADD 1/2 cup of the whipped topping; stir until well blended. Gently stir in remaining 1 cup whipped topping; cover.

REFRIGERATE at least 30 min. Serve as a dip with the graham stick or whatever.

Chocolate chips should get as hard as they were before they were mnelted unless you add something like oil.
That's what I use....and the better qualuty the chips the better the taste.
Oh yes and add a small amount of parrafin to insure they really firm up.

Ginger - I only had 1 hour to make these things and it was Murphy's Law at work. The chocolate was not cooperating and I was rushing. I was trying to submerge the entire raspberry and it was a disaster. I had to settle for dipping as much of the raspberry as possible and then spooning some over them on wax paper. I couldn't find my squeeze bottle, but I think that would have helped. I thought of two different ways of trying them next time. Yes, I am trying them again. I may sit them on a rack and squeeze chocolate all over the top and let that set and then do the other side with them sitting on wax paper. OR I may use a chocolate mold, one that is deep. Put in a little chocolate then a raspberry and cover with chocolate. I think one of my problems was that I had to wash the raspberries and they are a lot harder to dry than strawberries, so they may have been a little moist and didn't allow the chocolate to adhere well. Mine weren't attractive, but they were quite tasty. They were gone by the end of the night and one of my friends called this morning to see if I had anymore for him LOL.

They are very good and so easy. I made them last year and we really enjoyed them. Christy was off last week and by the time I would have made candy, my shoulders were all used up, so none this year. I did make some of mine with coconut. I just kneaded the coconut into them. Worked great. Even made a few for me with what you'd consider double coconut and still worked fine. Oh, and I did make one big one. When I was a kid we always got one big one that we'd slice. That was fun to recreate that memory. Some of last years batch.

Jude - Believe me, a lot of people were tempted to touch them. But the boy kept saying, don't touch me, I am already taken!lol That night I ate so many fruits covered in chocolate. When buying chocolate I always get them with nuts like hazelnuts but being in this chocolate fest let me sample fruits covered in chocolate that can only be used fresh and not for sale outside. I have had the same problem. I tried a package of ghiradelli, and I agree with the others. These are the best by far. I found that microwave works best for melting them. Also, if you are having trouble getting white chocolate smooth enough, a tsp of shortening will smooth it out a lot.

I use Ghirardelli semi-sweet blocks from Trader Joe and add a little of paraffin melted in a double boiler. I dip, set the item (biscotti for me) onto Reynolds release foil on trays and slide those into my big freezer for a few minutes. They pop right off and I reuse the foil. If you don't refrigerate or freeze I find the chocolate takes a while to really set up again.

Thanks so much. I have some paraffin too, just didn't know to use it. That mousse sounds yummy too.

I only use the bit of paraffin if I'm packing and shipping my dipped yummies. A common ratio is 6 parts chocolate to 1 part paraffin but I use less. Not everyone approves of the paraffin as it is considered "non-food."

I just use 1 T shortening to 1 bag of chocolate chips. Used this to dip my buckeyes over the weekend.
