4 gallons? In a single can or 4 1-gallon cans?

I am having trouble imagining using 4 gallons all at once. But, if I had to I would probably make many batches of Roasted Pepper and Artichoke bites and other apps along those lines and take my chances of freezing them in smaller containers.

Hearts or the whole artichoke?

They are 4 1-gal cans of quartered artichoke hearts in water. Once the can is open do you think I can freeze some of it? Patsy

I don't see why you couldn't freeze some. I might try putting some in a jar with garlic, herbs, vinegar and olive oil and keeping them in the fridge to put on salads. Otherwise, cream of artichoke soup, French fried artichokes, artichoke salad sandwiches, artichoke and (your choice of meat) omelets, artichoke tapenade, grilled cheese and artichoke sandwiches...

Jealousy! Let me just add spinach and artichoke dip to rachelellen's list... And actually, one of the best versions of hummus I've ever had included artichoke hearts...

For salad suggestions, I once had a chicken and arugula salad with artichoke quarters and cilantro in a light vinaigrette that was absolutely delicious. Lucky you!

I jsut added this to the Dinner Party thread, but it would use up a good portion of a gallon can and it is delish!

Ingredients for Marinade:
1/2 cup light olive oil
1/2 cup balsamic vinegar
3 Tbs. fresh parsley, chopped
1 head garlic, diced
Salt and pepper to taste
4 sprigs fresh oregano, chopped
1 cup pitted black olives, halved
8 boneless, skinless chicken breasts
3 bay leaves
8 shallots, diced
2 Tbs. olive oil
3/4 cup brown sugar
1 cup sun-dried tomatoes, halved
Two 16-ounce cans artichokes, halved and drained
1 cup red wine
Preparation:
In a bowl, combine olive oil, balsamic vinegar, parsley, garlic, salt and pepper to taste, oregano and halved black olives. Pour over chicken breasts in baking dish and top with 3 bay leaves. Cover dish with plastic wrap and refrigerator overnight.
After chicken has marinated overnight, saute diced shallots in 2 tablespoons olive oil and drizzle over chicken. Add light brown sugar, halved sun-dried tomatoes and halved and drained artichokes. Pour red wine over all and bake in 350-degree oven for an hour
