Easiest ever and yummy! Icebox cake *one pkg Famous Chocolate wafers (I think they are by Nabisco-I usually find them on the top shelf of the cookie section in supermarket, but also available on Amazon) * whipped cream (I use 16 oz. of heavy cream, but less would probably work, too. I have used almond extract as well as vanilla when I make the whipped cream, both are good). Just spread the whipped cream on one side of wafer, stick to next wafer, add cream to another stick to the others and so on: whipped cream, stick together. Once you have a stack of about five together, you can put them in the dish, and keep adding wafers with cream to stick them together until you have the size log you want. Then spread whipped cream on top and sides. Takes about 10 minutes total (not counting time to whip the cream). Refrigerate for at least 4 hours before serving. Best of all worlds-chocolate and whipped cream. Everyone always loves it and it is almost embarrassing how easy it is. I think the recipe is actually on the wafer box, but I just remember it as "Grandma's Icebox Cake."

A simple fruit dessert would go well. Pears poached in wine comes to mind, but pears usally need a few days of ripening after they are purchased. It's a little late for that. Cherries Jubilee would be nice, although not really light. Some sort of dessert crepes might be the answer. They can be made ahead and quickly assembled before serving. Or maybe Bananas Foster. Or just some very good fresh fruit, artfully presented with a couple of good vanilla cookies. Brilliant of you to post that link to the Tom Jones film, Arley. I had not seen it since it was in the theaters in 1963. It certainly was the rage back then, if only for that one scene. Now, if that could be recreated at home for Valentine's day...

I've been preparing tomorrow's dinner. I just shared a few extra sausage stuffed mushrooms with DH and we will have the left over Chinese from last night. I still have to make tomorrow's dessert and clean up my mess.

No. no dessert today. Dessert is something I usually wish people wouldn't make for me, as unfortunately I fear sugar is over-rated. Occasionally I like ice cream or I like a bit of a dark chocolate bar. But otherwise, while I'll cook it once in a while... I really don't desire desserts. Most of them ruin the taste bud sensations of the veggies, seafood or meats that I just consumed.
