Easy Dessert Recipe?

I'm hosting my book club tomorrow night, and we always do a dinner. I have already made my main dish - a stew called Pork in Cider, which I will serve with smashed red potatoes, spinash salad and bread, but I need an easy dessert that I can make tonight for tomorrow. I am expecting 8 guests. Something chocolate is always a hit - maybe an easy cake or pie??

We like chocolate chess pie - it's easy - it's good served warm with whipped cream also . . .

CHOCOLATE CHESS PIE

1/2 stick butter
1 1/4 c. sugar
3 tbsp. cocoa
2 tbsp. flour
2 eggs
3/4 c. milk
1 tsp. vanilla

Mix and pour into shell. Bake 35 to 40 minutes at 375 degrees.

If I need a quick dessert I make lemon icebox pie, without the usual raw eggs found in some recipes.

Lemon Icebox Pie

1 Lg Tub Cool Whip
1 Can Sweetened Condensed Milk
3 Lemons, cut in half, juiced, no seeds

Mix all three ingredients with large whisk in large bowl and pour into graham cracker or vanilla wafer pie crust, or if I'm really in a hurry I spoon into sorbet or wine glasses and refrigerate, then grate vanilla wafer and lemon zest over the top before serving.

It's not real cooking, but it's quick, pretty, and most everyone likes it.

A jello poke cake is always a winner at Kelly House. Bake a yello cake and poke it with a fork as soon as it is done. Make a small package of jello-it can be sugar free. Use whatever color and flavor you like. Pour this over the cake. Refrigerate-it is so refreshing when it's really cold. Top with cool whip. If you use diet jello and cool whip, this can be diet friendly. Another really simple thing is to buy an angel food cake and frost it with cool whip. You can slice it and use different colored cool whip in the layers. You can put a few drops of peppermint flavoring in the cool whip and make it tasty. Refrigerate this and then when slicing you have to make sure you use the right kind of knife-sharp and serated becaue it is hard to cut Or...an apple pie buy it or bake it-I have an great pie crust recipe I could share

Here's a couple "sauce on the bottom" cake puddings: Diane's Home Cookin Chapter: Pudding Cakes Cinnamon Pudding Cake ===================== 1-3/4 cups brown sugar 1 ½ cup cold water 2 tablespoons Butter 1 cup milk 1 cup sugar 2 tablespoons Butter 2 cups flour 2 teaspoons Baking powder ½ tsp. Salt 2 ½ teaspoon Cinnamon ½ c. chopped walnuts ( optional ) . Preheat oven to 350° Combine brown sugar, water & 2 Tbsp butter in small saucepan, bring to a boil, remove from heat & set aside. Cream together 2 Tbsp. Butter and sugar, add milk, then add flour, baking powder, salt & cinnamon.Spread in ungreased 9 x 9 x 2 in. Pan or oven proof dish. Back in the 1950's my grandmother made a frozen fruit cocktail salad. I'd like to find the recipe but everything I see calls for cream cheese or minature marshmallows in the mixture - neither of which were in her's. I'm wondering if these recipe ingredients are a regional thing. She lived in San Francisco if that makes a difference. Anyone from the bay area remember this salad as a child of the fifties?

Number of years ago, I tried the angel food with pumpkin and did not care for it at all. Pumpkin Angel Food Cake 1 cup canned pumpkin 1/4 teaspoon ground cloves 1/2 teaspoon cinnamon 1/8 teaspoon ground ginger 1 teaspoon vanilla extract 1/2 teaspoon nutmeg 1 16 ounce) box 1-step Angel Food Cake Mix 14 tablespoons Cool Whip Lite Heat oven to 350 degrees F. In a large bowl combine the pumpkin, vanilla extract, cinnamon and spices. Mix well and set aside. In another bowl prepare the cake mix according to the package instructions. Fold the pumpkin mixture into the cake batter. Spoon into an ungreased 10-inch tube pan. Bake for 38-44 minutes or until the top is golden brown. Remove pan from oven and turn upside down to cool. Slice cake into 14 slices and serve with 1 tablespoon Cool Whip. -

Tina, do you think the pie would do well if I used Splenda instead of sugar? Or at least half and half?

Vanilla ice cream, hot fudge, sliced strawberries or bananas, whipped cream, maraschino cherries and a hula hoop to work off the calories.

These are decadent and easy. One pan too!

Seven Layer Cookies

2 sticks butter
2 cups graham cracker crumbs
2 cups chopped walnuts
1 bag chocolate chips
1 bag butterscotch chips
2 cups coconut
2 cans sweetened condensed milk

Place butter in 9x13 pan and place in oven (350 degrees) while preheating.
When butter is melted add graham cracker crumbs and stir and pat down in pan.

Layer rest of ingredients in order and drizzle sweetened condensed milk over top.

Bake 30-35 minutes until top is golden brown. Cut into squares when cool.

Deedee - I love those - but we call them "Hello Dolly" bars and do not use butterscotch chips and use pecans in place of walnuts. YUM!

Oakley - I have not actually made a dessert with the full Splenda. I have used the half & half mixture, but not in this particular recipe. I think it would work, but I would probably try the half/half.

It is a very good - and chocolatey pie.

This is making me hungry!

Thanks Tina, I'm going to fix it this week for DH and myself. If it's easy, I'm there! lol

If I feel up to it tomorrow I'll make it but I'd have to make my own crust. Haven't done that in a long time. I have all the ingredients though so I don't have to go to the store. And yes, it does make me hungry!

Thanks for all of your suggestions! Everything sounds wonderful. I am already a big fan of the 7 layer bars (my grandmother also called them Hello Dolly bars). I make them every year for Christmas. That Chocolate Chess pie also sounds wonderful and perfect for a chocolate fix.

I hate to say it, but I didn't use any of your recipes. I was cruising around recipe sites and as soon as I saw this picture

I knew I had to make it. I will let everyone know how it tastes.

I was going to suggest a cheese cake; there's one on the Eagle Condensed site that uses angel food cake instead of graham crust.

I have seen the Hello Dolly Bars in one of my cookbooks and never read the recipe. It's a cuter name than 7 layer cookies!

Easiest ever and yummy!

Icebox cake

*one pkg Famous Chocolate wafers (I think they are by Nabisco-I usually find them on the top shelf of the cookie section in supermarket, but also available on Amazon)

* whipped cream (I use 16 oz. of heavy cream, but less would probably work, too. I have used almond extract as well as vanilla when I make the whipped cream, both are good).

Just spread the whipped cream on one side of wafer, stick to next wafer, add cream to another stick to the others and so on: whipped cream, stick together. Once you have a stack of about five together, you can put them in the dish, and keep adding wafers with cream to stick them together until you have the size log you want. Then spread whipped cream on top and sides. Takes about 10 minutes total (not counting time to whip the cream). Refrigerate for at least 4 hours before serving.

Best of all worlds-chocolate and whipped cream. Everyone always loves it and it is almost embarrassing how easy it is. I think the recipe is actually on the wafer box, but I just remember it as "Grandma's Icebox Cake."

Here's an easy hot fudge sauce recipe that is delish:

1 stick of butter
1 small can evaporated milk
2 squares unsweetened chocolate
2 cups powdered sugar

Melt butter and chocolate together in double boiler or heavy pan. Stir in evaporated milk. Slowly add powdered sugar, a little bit at a time. Stir constantly about 10 minutes until sauce thickens.

Terri, so...how was it? I'd eat all of that except I'd make the cake batter from scratch. It just sounds so decadent, please tell us it was wonderful?!

Well, I have to say, that I was a bit disappointed in the cake. The picture looked so ooey, gooey delicious, but it fell a bit short of the mark. Not enough gooeyness. I took the leftovers to work, and they were quickly eaten up, and I did get compliments on it. I should have made the chocolate chess pie.

I also love the ice box cake - one of my all time faves. I have made it for my book club before.
