Final questions before High Heat Roasting

I'm roasting two 15 pounders using high heat for my first attempt and want to get it right. I have a couple more questions for you veterans.

Because I'm cooking two, I think my best option will be in one decent sized pan side by side. I haven't tested the fit yet so here are my ?'s.

1. I've been told that extra room in the pan could lead to more smoke and possibly burnt drippings. What seems worse, a little extra room in the pan or the birds touching the sides of the pan in a few spots?

2. Should any onions, celery, etc sit on the bottom of the pan or will they likely burn at 500 degrees for about two hours.

3. Rack, or directly on the pan?

4. Any liquid in the pan to start or dry?
