We've have had no challenges with our Cluny ovens and their size. We have one gas for roasting meats moistly (and slow cooking) and one convection for all my baking. Love this machine! We went to the factory in France and watched the assembly up close and saw all the newer color choices in 2008, long after our burgundy Cluny was put into service. It is really an affair of the heart to own one - and why not have this particular pleasure? The pleasure continues every day. Our only challenge has been cooking with the intensity of the simmer flame. We are finally going to adjust it down manually and also just ordered a flame diffuser. Just lazy not to have done it before.

I think the person I first talked to was Kelsey but I didn't get her name down properly so now feel like an idiot. I'm so tempted to use chelsea's direct number hmmm but really feel funny since she didn't give it to me directly and I'm not sure I should have it? But then again who cares, I want, need and gotta have my future, Lucy, Danielle, hmmm gotta think of a name now. LOL And I don't even have it yet. LOL. Chelsea must be use to desperate owners of Lancanche's want to be's. Frangipane was one of my color choices I'm thinking about. The woman on the phone said it was like a Kaki? Is that true? I'm also leaning toward, "Marron Glace". She said it was her favorite color. If it really looks like a light brown I will fall in love with it because it would match my granite perfectly like the Kaki color as well. I just had to go to Lacanche's french web site and it's very nice. I put the link for it below. I see a different model in their line that's not here and wonder if that's the one that may be here soon? However I'm not going to wait since I've seen to many price increases I think its time to buy and wait no longer. pluckymama, I guess it's just luck of the draw who I ended up talking to on my first call. I will ask for Chelsea from now on. And you may be right on the vacations right now. Although they are, or rather Lacanche factory has extended favorable prices until aug 1st and I wonder if they are on overload for orders before than. Colors I'm thinking of are Marron Glace or Frangipane. But to be honest with you I love them all! The color palette is truly beautiful I must say. I'm not worried though I know Art Culinaire will come through for me. I will be calling often to get things moving. Projective delivery date if I order before Aug 1st is sometime in November. Hi NewHome2015, Although I have ordered the Cluny 1400, I won't receive it till April and it won't be installed in my new home till most likely June, so I can't be of much help. I also had a similar concern. My mom is Chinese so I do a lot of stir frying and want the burner to be as hot as possible. The French top range also has an 18k burner, but it is set lower. Art Culinaire allows you to buy the Classique (with the 18k burner the same level as the other burners) and purchase the traditional (French top) grates separately. However, the flame will be very close to the french top grate and the flame may be erratic. Given that I will likely use the wok ring, I don’t think this will be an issue for me. The grates are available in stock in their warehouse, so if you decide on the Classique top and want the French top grate afterward, you won’t have that long lead time. Speaking of lead time, I haven’t received my range yet, so I can‘t speak to whether this hack works well. Here is a picture of the Classique with the French top grate, you can see that the burner is very close to the grate.
