Question about Yeast

I use regular-active yeast in my breadmaker. I buy it in bulk and it's so much cheaper than buying breadmaker yeast in the little jars.

My next-door neighbours makes great buns and crescent rolls. She uses her KA mixer; doesn't have a bread machine.

I doubt if I proofed my yeast enough the one time I used my KA mixer, and the loaf didn't rise as high as it should have.

My neighbour brought me some of her yeast to try, and it's "instant" yeast. She says it starts working as soon as she stirs it with the milk and sugar. I do know that she can have her buns baked, and my loaf of bread is still rising.

Can yeasts be inter-changed? What is instant yeast generally used for? (She says she put 4 tbsp with her 7 cups flour). That sounds like a lot to me!
