Sweet Potato/Yam Dishes To Try?

For Thanksgiving I'm supposed to make a sweet potato or yam dish. Hmm. This is a food with which I'm not real conversant. I've usually had it in mash form. I'd like to try something different.

Would anyone have any suggestions? Would sweet potato work as a scalloped potato dish? How about deep fried as french fries, or as thick chips? Can you shred them then pan-fry as hash browns?

The rest of the dinner is quite traditional.

- Sister's roast turkey w/ gravy and stuffing

- My alternate main dish - undecided, won't do the customary ham due to our kosher guests. Maybe osso buco? I do have a shiny new pressure cooker . . .

- Creamed corn, sister's request

- Mashed potatoes (regular potatoes), SWMBO's request, I'm going to make them French-style

- Green bean casserole, for some reason I feel nostalgic for this, even though it isn't part of any childhood I ever had

- A multitude of pies - pumpkin, apple/quince, peach

- Wine, the essential food group

Serving 6 adults, 6 kids.
