Canadian flour

Late in Sept. we visited friends in Canada. Hosts supreme! Well, this evening they delivered the flour I selected last month: Five Roses and Robin Hood Pastry Flour. Now that I have them, how do I use them? I'm experienced in breads, pie dough, muffins, waffles, etc. I know that Five Roses is AP but how is it different from King Arthur flour?

This is going to be major fun! I've read about these flours on this forum and now I can experiment. Can you help? Thanks!!!
