Marigene here's the recipe:
Sumac Roasted chicken with Cipollini onions
One 2 1/2 lb grain fed chicken
sea salt and fresh ground black pepper
1/2 lemon quartered
Juice of 1/2 lemon
1 bay leaf
1/4 c extra virgin olive oil
1 tbsp greek oregano
1 tsp seal salt
1 tsp worcestershire sauce
2 tsp ground sumac
1/2 lb cipollini onions, blanched, peeled
1 carrot peeled and cut into 2 inch sticks
4 med red potatoes, scrubbed and quartered
Oven 400F.
Pat chicken dry and season inside cavity with half of the salt and pepper. Fill the cavity with the lemon quarters and bay leaf. Truss the bird and rub the outside all over with half of the olive oil, juice of 1/2 lemon and worcestershire sauce. Sprinkle with the oregano, sumac, and some sea salt and pepper to taste.
Place the bird in a roasting pan and arrange the veggies around the chicken. Drizzle the veggies with the rest of the oil and season them with s/p. Roast for 55-65 min or until the juices run clear and internal thigh temp is 180F (85C). If the skin is getting to dark and the chicken still isn't cooked, reduce the oven temp to 350F for the last fifteen min of roasting. Let rest for 5 min before carving.
