Trying to wing chicken thighs - help!

I usually cook vegetarian but I'm trying to POOF some roasted vegetables and chicken thighs and I'm out of my element! (POOF, for newbies, is Pull it Out Of the Fridge).

I have the thighs, (4) and some potatoes, an onion, two apples and two potatoes. My thought is to roast the veggies in a baking pan topped with the thighs. But I don't know the temp. to use. Also wondering about seasoning. My plan at the end is to take some languishing pepper jelly and make a sauce to put over it at the last 15 min. I'm probably going to use a lemon pepper kind of mix but I'm wondering about maybe some rosemary??

Any ideas on temp. and seasoning? If I don't get any replies I'll try it out and let you know how it goes.

Originally I was going to have tofu stir fry for dinner but I just want to put something in the oven and forget about it for a while. I was going to make the chicken in the crockpot but I think the veggies will be better roasted.
