Homemade Whipped Cream in Advance?

How far in advance can I whip cream? I've always hosted and made it right before I served dessert, but this year I told everyone I was taking a year off hosting :) so we're going to a friend's home - she asked me to bring the homemade whipped cream among other things -- her kitchen is not as overflowing as mine is, so making it there would entail bringing my own mixer, which I would rather not do........

I've made it as much as four hours ahead, but IMO the texture suffers after that. And it needs to stay cold the whole time. (Ice packs under the bowl while trnsporting it will help.)

You really don't need a mixer. A whisk whips up a batch easily in no time at all. Surely she has a whisk.

Hmmm I've made it and it's fine over night to the next night..by the second night it starts to weep and separate, but the top (whipped cream) is still tasty and fluffy..

You'll be fine.

The whipping cream I buy has no carageenan in it...just cream. And I buy real pure vanilla extract and use lots... Ton't turn the crank so fast....when you beat the eggs...just mix well, don't make then frothy. And home made ice cream needs to "ripen"...the usual way is to remove the dasher and pack the container with more ice and cover well with newspapers and a rug ( not sure why a rug....but that's the way!!) And let it sit for at least an hour....2 or 3 is better. Linda C

Here is the recipe I use from Joy of Baking. Please note, if it cools to long, it becomes rubbery, so I only let it cool so it's not hot. So, I whip the cream, refrigerate it, and then make the stabilizer. Otherwise it cools too long and becomes rubbery, and you have to heat it and cool it all over again. I have never had a bad texture from it. Sherry STABILIZED WHIPPED CREAM ICING 1 tsp. unflavored gelatin 4 tsp. cold water 1 c. heavy whipping cream (at least 24 hours old and very cold) 1/4 c. confectioners' sugar 1/2 tsp. clear vanilla extract Combine gelatin and cold water in small saucepan. Let stand until thick. Place over low heat, stirring constantly just until gelatin dissolves. Remove from heat and cool slightly. Whip cream, sugar and vanilla until slightly thickened. While beating slowly, gradually add gelatin to whipped cream mixture. Whip at high speed until stiff. Yield: 2 cups Cakes iced with whipped cream must be kept refrigerated. (This is the commercial recipe used by bakeries).

David, yup, no raisins. Glad to know I'm not the only one to hate raisins. Thanks Sooz, this recipe is so easy I'll make it for Moe often. Tracy, you understand right. No ice cream maker necessary. Just a blender or food processor. I used the blender. The recipe doesn't call for stirring the mixture after it goes into the freezer, but I think it really helps set it up and keep it creamy. Jenn, the cookie time wasn't adjusted for the round cookies. But for the dough I baked in the small cookie sheet for the bars, I did have to add a couple of extra minutes. I cut the bars while the cookie was still slightly warm. FOAS, looks great. Moe would love both the strawberry and blueberry. I have some raspberries in the freezer that I'll use for the next batch. I like home made, but I also don't object to real whipped cream (not artifical) in a can. It's convenient and stores well, and can be used quickly in small doses. I keep a can around during hot chocolate season and a backup (hidden downstairs) all through the holiday season. If it's out where the kids can see it, they're prone to take a squirt directly as a snack. :-p The most abuse I've seen is that they put the can back as close to empty as it can be without ACTUALLY being empty, so that the next time I need it I get a splutter instead of a squirt. I'm not sure if they're trying not to be wasteful or just in denial that yes, they really *did* just eat a whole can of whipped cream. :-p (OK, yes, I do know...) Cj

I've had the same experience as Terri. My secret may be that I use organic whipping cream. But then, I also drink their 2% organic milk. YUMMMMMMM

I find whipped cream waters out even after maybe 3 hours...
But you can add a bit of gelatin to make it keep longer.
I have never done it but surely someone here has.
I'm with take the bowl and a whisk camp...I went a lot of years without an electric mixer and for sure always had whipped cream on my pumpkin pie and strawberry shortcake!

Just bring your Whipped Cream Dispenser and you won't have to make it ahead of time. Oh that's right it's me who has one.

Just being obnoxious since I got my new dispenser this week. Love it!

My goodness! I ALWAYS whip cream in advance. It keeps at least 36 hours. I often add 10X powdered sugar and vanilla, or cocoa, powdered sugar and vanilla, or sometimes rum extract, and sometimes leave it plain. Never added gelatin or stabilzers, either. I've never had it separate, and the texture doesn't change. I use ordinary ultra pasteurized cream. I use it instead of frosting between the layers of lemon cake, and a chocolate-praline-ganache cake that gets raves - the next day!

I do use an electric mixer, though. Once I over-mixed it and made butter! If I were you, I'd risk a half-pint and whip it up. Store it in a jar overnight and I'll bet you'll be pleasantly surprised! Then you''ll know you can safely whip it in advance of your party.

Mustangs, I have a feeling that dispensor is going to get a workout this holiday season. :D You will become a whipped cream artist! You got it already? That was fast.

Maybe there is a difference in how long whipped cream lasts made with ultra pasteuried vs less processed. We use so little whipping cream that I usually buy the local organic.

Mine usually stays good for 6 - 7 hours. But it will water if kept overnight. If I need it in the morning I whip it late at night. If for dinner, I whip it up in the morning. Al
