Woodie- Can you direct me to the Turkey Gravy recipe please?

For some reason I can't find the do ahead gravy recipe that you posted recently. I opened my big mouth and promised it to a co-worker and now I can't find it! I think I saved it at home, but I'm at work!

Anyone else have it?

Hi Ellen, here it is! I hope your friend likes it, I'm making mine right this minute (I don't use the giblets, I think they're ick).

Make-Ahead Turkey Gravy
Makes about 2 quarts
For more flavor, after roasting the turkey you can skim the drippings from the pan and add them to the gravy just before serving. It's best to discard the strong-tasting liver before using the giblets. This recipe makes enough to accompany a large turkey and still have plenty for leftovers.

6 turkey drumsticks, thighs, or wings
reserved turkey giblets
reserved turkey neck
2 carrots , chopped coarse
1 head garlic , halved
2 ribs celery , chopped coarse
2 onions , chopped coarse
Vegetable oil spray
10cups low-sodium chicken broth
2 cups dry white wine
12 sprigs fresh thyme
1/2 cup all-purpose flour
Table salt and ground black pepper

1. Adjust oven rack to middle position and heat oven to 450 degrees. Place giblets, neck, drumsticks, carrots, celery, onions, and garlic in roasting pan, spray with vegetable oil, and toss well. Roast, stirring occasionally, until well browned, 1 to 1 1/2 hours.
2. Transfer contents of roasting pan to Dutch oven. Add broth, wine, and thyme and bring to boil over high heat. Reduce heat to low and simmer until reduced by half, about 1 1/2 hours. Pour through fine-mesh strainer into large container (discard solids), cover stock with plastic wrap, and refrigerate until fat congeals, at least 2 hours.
3. Using soup spoon, skim fat and reserve. Heat 1/2 cup fat in Dutch oven over medium-high heat until bubbling. Whisk in flour and cook, whisking constantly, until honey colored, about 2 minutes. Gradually whisk in stock, bring to boil, reduce heat to medium-low, and simmer until slightly thickened, about 10 minutes. Season with salt and pepper. (Gravy can be refrigerated for up to 3 days or frozen for up to 2 months.) Reheat gravy in saucepan over medium heat until bubbling.

I'm doing Christmas this year and am going to make this do ahead gravy. I'm OK with a turkey dinner for a large gang but making the gravy at the last minute always ticks me off.

Wish I was OK was some of the make ahead mashed potato recipes because that is the other major PITA but I'm not convinced they will hold well for a large group.

However getting the gravy out of the way will make the mashed potatoes less of an issue.

Thanksgiving is the only day we eat turkey. The rest of the time, give me a roast capon or a duck prepared almost any way at all. DH and I are just not turkey lovers. My niece makes a very fine brined and roasted turkey, but once a year is enough for us. We're sauce and gravy people. Stews, braises, casseroles - we love them. I do a fair amount of cooking and a lot of dining out, and we hold that a fine sauce is a work of art. Even though we eat a lot of steaks and roasts, a great sauce is always to be admired. There are too many bad ones around to not acknowledge when something is done correctly. One of our favorite restaurants does a great poached monkfish. This is the fish known as "the poor man's lobster" for both its taste and texture. It's a great little fish, with wonderful flavor. But nap it with Amoricaine sauce, and it rises to a whole 'nother level. This is a Bretonnese classic, and for good reason. Red wine and marrow Bordelaise on a rib-eye? Absolutely! Black truffle cream sauce on a filet? Yum! Mop that goodness up with a well made starch - roasted fingerling potatoes, barley risotto, fresh pasta, freshly baked bread rolls. Gravy and sauce was the way to extend meat to feed a lot of people. Most of the world still loves sauced dishes as treasured childhood memories. Like soup, they are warmth and comfort, soothing and homey. Chicken strips that are velveted and steamed with lop cheong sausage (classic Chinese technique) are stunningly tender, almost as soft as sous vide but we like the flavor and texture better. Perfect with a roasted garlic-oyster sauce gravy over lots of rice! Far better than stir-frying or roasting. As Charles Phan of The Slanted Door restaurant in SF points out in today's WSJournal, steaming is considered the ultimate test of a professional chef in Asia. Getting back to the NY Times' and Pepin's suggestions for steaming, one of the greatest dishes in Chinese cuisine is steamed sliced chicken breast with thin slices of Hunan ham. My mother introduced me to this dish (she took classes from one of the leading Chinese restaurateurs in San Francisco) and it still ranks with DH and me as one of the three finest poultry dishes we've had in our 45 yrs of dining. A glaze should always be light. Heavy-handedness is the mark of a bad cook. Peking Duck would not be the same without the glaze applied, for example.

Jeri, thank you, I hadn't seen your make ahead au jus. I like its fundamentals -- roasted soup bones and beef shank and onions. I will probably triple the onions, then deglaze the roasting pan with some red wine (a la Woodie's turkey gravy) and then proceed with additional stock, carrots, and celery for lengthy simmering. Strained it should make a great au jus. I'll probably gravy-tize it with a roux and stir in sauteed mushrooms and lots of ground pepper at the end. (Ummm, only 24 days til Christmas . . .)

My DH loved the way this is prepared at an Italian restaurant we frequent, and I thought it must be simple to duplicate. Here's the photo from the restaurant version and then the one I made which tasted even better - guess I used more cream and maybe I poured on too much sauce for the photo. Turkey & Noodles in Curry Cream Sauce *********************************** 2 - 3 portions 1 lb turkey breast, cooked and cut into chunks butter - 1 heaping TBS flour - 1 heaping TBS milk - about 1 1/2 cups heavy cream - about 1 1/2 cups 1 chicken stock cube or spoonful of chicken bouillon mix 1 heaping TBS curry powder (I used Sharwoods's mild) fettuccini noodles for 2 - 3 servings fresh ground pepper butter 1) Put water on to boil for noodles. 2) If turkey is not already cooked, it can be done in microoven with 3 TBS water until just done 3) Melt butter in saucepan, take off stove and mix in flour to make a roux, gradually adding warmed milk a few drops at a time and stirring to keep smooth. 4) Put back on low heat and finish adding milk, then cream a little at a time and stirring. Crumble in chicken stock cube and curry powder. Stir to blend. 5) Add turkey chunks and heat gently, keeping warm while cooking noodles in pot of water. 6) Drain noodles, add butter and fresh ground black pepper. Pour sauce over noodles and mix. Serve on hot plates and add grated parmesan. Note: The Spanish and German chicken stock cubes and chicken sauce bases are excellent and quite different than the ones I saw in Canada. This dish tastes better than the version in the Italian restaurant and goes well with a nice crisp green salad. ******************************** I usually make a turkey curry at the end of our Christmas bird. The dressing and cranberry sauce as well as the gravy all goes with this. The recipe is taken from a Sharwood Curry Powder advert for chicken curry which I also make but here I substitute leftover turkey. TURKEY CURRY **************** Serves 4. 1 apple, peeled and chopped 1 onion, chopped 2 TBS oil 2 TBS curry powder 1 level TBS flour 15 fluid oz (scant 2 cups) stock (boil turkey bones to make stock) 1 TBS chutney (I use Sharwoods Mango Chutney) 1/4 to 1/3 cup (60 grams) sultana raisins 8 oz (225 grams) diced turkey (include different sized small pieces from the leftovers on the turkey platter) salt 1) Fry chopped apple and onion together in 2 TBS oil. Add curry powder and flour. Fry gentry 1 minute. 2) Blend in the stock, bring to boil. Add 1 TBS chutney and the raisins. Simmer, covered - 30 minutes. 3) Add turkey pieces to the sauce, season with salt and simmer very gently 10 - 15 minutes more. If you have some leftover turkey gravy - that also goes well added into the curry sauce. 4) Serve over rice and pass around cranberry sauce, warmed turkey dressing, mango chutney and chopped walnuts. I love turkey meatloaf and have saved these recipes. I'd like to try the turkey meatball stew recipe, too, gardenlad. This recipe is one I've made often, from Eating Well magazine, flavored with sweet onions simmered in beer. I use dark beer, if I have it, but the recipe says amber will work as well. I also use all ground turkey, instead of half turkey, half beef. Blue Ribbon Meatloaf (Eating Well) 2 teaspoons canola oil 1 medium sweet onion, chopped (2 cups) 1 12-ounce bottle dark or amber beer 1 teaspoon dried thyme leaves 1 teaspoon dry mustard 3/4 teaspoon salt Freshly ground pepper to taste 1 1/4 pounds lean ground beef 1 1/4 pounds lean ground turkey 1 cup fresh whole-wheat breadcrumbs 1/4 cup chopped fresh parsley 1 large egg, lightly beaten 1 egg white, lightly beaten 1. Preheat oven to 375Â°F. Coat an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. 2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until translucent and starting to brown, about 5 minutes. Pour in beer and increase heat to high. Bring to a vigorous boil; cook until the liquid is quite syrupy and the mixture reduces to about 3/4 cup, 8 to 10 minutes. Transfer to a large bowl. Stir in thyme, dry mustard, salt and pepper. Let cool for 10 minutes. 3. Add beef, turkey, breadcrumbs, parsley, beaten egg and egg white to the onion mixture. Mix thoroughly with clean hands and transfer to the prepared pan. 4. Bake the meatloaf until an instant-read thermometer registers 160Â° when inserted into the center, about 1 hour 20 minutes. Let rest for 5 minutes; drain accumulated liquid from the pan and slice. Serve hot or cold or in a sandwich. NUTRITION INFORMATION: Per serving: 275 calories; 13 g fat (4 g sat, 4 g mono); 104 mg cholesterol; 8 g carbohydrate; 29 g protein; 1 g fiber; 353 mg sodium. I've copied him and sent another copy to myself. I can't imagine finding the time to make a decent gravy at the last minute, at least in my hectic world!
I might contribute this to our group's dinner at our friend's home. Otherwise it's canned or bagged gravy for sure!
What brand of chicken broth do you use?

I would suggest you skip the chicken broth, and use water and add about 3 to 4 pounds of chicken wings. They make the best broth....flavorfull and...just plain good!...But if you omit the broth you will need a little more salt.
And I would cook the whole mess a lot longer before straining. The longer you simmer, the better it gets.

No doubt homemade broth would be the best, but I use either Imagine or Swanson Organic Free Range.

Just use chicken in with the turkey and cook it longer....really very very little more work....just more flavor...you could even add the chicken broth too...I just find that wings add such a lot of depth...

I missed Woodie's recipe, but am in the middle of making a very similar recipe from this months GoodHousekeeping. They said to use cornstarch, but I plan to use a bit of the skimmed fat and make a roux with flour.
My guest list grew from 6 to 11 and I didn't think my already purchased six-pound bone-in breast would be enough ... so I bought a larger whole turkey, cut out the backbone and spatchcocked it. I'm using the backbone plus the bones from the breast (froze the boneless breast) for the gravy base.

Just added the wine and it's smelling great!!!! Now I'm going to test the leftover wine

I'm glad to see this and all the accompanying tips. I know my mom did something like this when she would make turkey, she'd have a big dutch oven of it on the stove the day before, but I didn't how or what she put in it.

As I never have enough gravy, I made Woodie's gravy yesterday, and it's great! I combined it with the pan juices today and everyone really liked it. Not only was it tasty, the color of the gravy is a very rich carmel. Excellent!
