Cake Icing Help Needed!

I will be making a cake for my boss's birthday next week - chocolate with a ganache icing, easy enough. However, the ganache icing is to be poured over the cake, the instructions tells you to do this while the cake is on a wire rack. My question is - how the heck do you transfer the cake from the wire rack to the cake plate easily?

Last year I made the cake and frosted it on the plate - not very neat at all.

Any and all suggestions gratefully accepted!

The easiest way is to put the cake on a cake board that is ever so slightly smaller than your cake. You can buy these, usually covered in silver foil, at cake decorating supply stores or you can make one from a circle cut from corrugated cardboard or foamcore or anything fairly rigid. Just make it small enough so it doesn't stick out from your cake. Then you can just slip a wide spatula under the cake board and lift it up.

Before you place the cake on the wire rack, put it on a cardboard cake board, cut exactly to size. After the ganache has been poured, you won't see it and you can easily slip a long spatula or cake lifter under the cardboard to transfer it. Next time you frost a cake on a plate, tuck strips of waxed paper under the cake edges. After frosting, slip the strips out and you'll have a clean cake plate :)

Greenhaven, in the Pacific North We(s)t, rain is a fact of life, and with it, comes Botrytis cinerea. You are right, some roses, are more susceptible. So, the rose umbrellas gives a degree of protection. But more importantly, for those of use who enter roses in shows, it's one more step to get those perfect blemish free petals the judges are looking for. I also use a lot of discarded styrofoam packing boards for the same purpose. We don't have JB's here, thank goodness, but I guess if you can find a way of sealing off the bottom, it probably will keep those out too. Blackspot? Yes, it does give the upper most leaves from some protection, unless the rain comes with winds. But I think the best part was the ice cream cake, on a hot late June day.

An update on my chocolate cake and chocolate frosting. I used the Ghiradelli Double chocolate cake mix and the same brand for the icing. I added an extra egg, butter instead of oil and milk instead of water. Thanks Tina and Mtn! The cake turned out amazing and my friend loved it. I actually thought it was delicious as well (given I am not a big fan of chocolate). I have never made chocolate frosting before. I used loads of butter, half and half, cocoa powder and confectioner's sugar and vanilla extract. It turned out perfectly. My friend loved the cake and took it home. I would share a photo but it wasn't a pretty cake. I did a bit of decorating in the limited time I had (and I live in a small apartment) and made her wear this banner which she loved. We drank champagne and played some silly games and we had a blast. It is so wonderful when you and your best friend get together and it feels like you had a huge party! Thanks so much for everyone's input!

You can also use a big thin flat spatula or two to transfer the cake without a cardboard under it.

Or put the un iced cake on the serving plate with small pieces of waxed paper or parchment beneath the edges. After the cake is iced pull out those strips of paper and with them the messy frosting.

You will want to use 2 spatulas to move the cake,with or without a cake cardboard underneath as some spatulas have a lot of spring to them & your cake may take off as the spatula goes down. Be sure you have a large working area so even if it gets away from you, you can just pick it back up & do touch up on plate so save a little bit of icing for such an event. Always smart to have a cake cardboard(Michael's or your cake decorating store) under any cake as it saves the serving plate,silver tray or China plate from getting scratched up. Be sure to put about tbs of icing in center of plate so it helps keep cake from slipping, or if you trip not as likely to go flying.

Thank you for your suggestions - I will give the board a try - I don't have much faith in my hand steadiness using just a spatula!

This is the recipe I will be using for the cake, the frosting recipe doesn't specify the wire rack but most of the others I have researched do.
