Am. baking powder vs. German baking powder

There is a difference between the two. For some reason every store around here which used to carry German baking powder don't have it right now, even my mailorder site is out of it. Has anybody an idea how much Am. baking powder I would have to substitute for a pckg. of German (Oetker) baking powder?

I don't have any Dr.Oetker baking powder at the moment, although I do have their yeast. However I do have an Austrian brand of baking powder "Perlinger Reinweinstein Backpulver". On the back of the packages it says one sachet of 18 grams of baking powder is sufficient for 500 grams of flour.

I see the Dr. Oetker USA website describes their sachet of 20 ml (5 tsp) as suitable also for 500 grams of flour(4 cups).

Oh oh I see they also have a boxed Molten Lava Cake mix as well. Our neighbourhood German supermarket is full of Dr. Oetker baking products. I hope I'm not tempted.

I just noticed that was the Canadian website I linked to but I'm sure that's not any different from what is sold in the USA.

I don't shake my baking powder, nor any of my other "spices" I use for baking and cooking. I have a nice tupperware container from the 70's that I transfer my baking powder in to, when I get a new can. Then I write the expiration date on it, as I don't bake much anymore since my girls grew up. Here's an explanation from Cook's Illustrated. I think you need a membership only to access the winner of their product testing, but you don't need a membership to read the discussion/explanation of cocoa. Baking soda requires an acid to rise, as well as moisture. Baking powder has its own acid. Double acting has two acidic components--one that is activated by liquid and the other which is activated by heat. Things that rise with just baking soda: Buttermilk biscuits or pancakes (buttermilk is acidic). Molasses cookies (or even cookies with brown sugar). Vinegar cake. Baking powder has cream of tartar (acidic) or other acidic chemical and baking soda, Double acting has two different acids one for each action, unless it has monocalcium phosphate which reacts immediately to the liquid, and is changed to a form which reacts to the heat (or something like that--Lindac's the chemist). Other double acting baking powders have an aluminum component, which some people don't care for. You can make your own baking powder if you have baking soda and cream of tartar, especially if they're fairly fresh (sometimes that 20 year old can that some people have is discharged). That's one part soda to two parts CoT. If you really know your baking chemistry, you can use soda with other kitchen acid, but if you don't you can wreck your recipe.

I use my German baking powder in my American recipes and until now I haven't seen a difference. I use it 1:1.
I think the difference is that the German BP is not "double acting" but I don't know what a difference that makes when baking.
If you would like some German baking powder, I would be glad to send you some in exchange for some chocolate or butterscotch chips.

Thanks everybody for the offered baking powders. The trouble is that I have to bake today. The German baking powder is has an ingredient which our baking powder don't have and I was told use a bit more than it would be in the German recipes.
I am going to experiment today and make two, first 1:1 like Lisa and then about 1 1/2:1 and whichever works best, I use for my guests, the rest is for me.
