Are You Fixing Supper?

I am planning on fixing fried chicken breasts, of course I like the dark meat better, but will eat the white. I have also made kidney bean salad and probably a baked potato to go with it. It is so nice out here, up to 60+ I think. Izzi and I just walked out to the club house and heard and saw little frogs jumping into the ponds. I didn't see any fish though. I will probably get some kind of fruit out like strawberries and bananas in glaze to go with supper. Are you fixing supper?

I'm fixing Enchiladas that I made a week ago and froze.I have to decide what kind of sauce I'll put over them but dinner is half done!

I've barely cooked for two weeks. If I don't sit down and plan out menu ideas and get the shopping done, I'm just in a quandary. I hate, hate, hate trying to think up with something for dinner at the last minute. DH fried up some venison steaks and hash browns for himself last night. I didn't have anything and I'm starving now, but too lazy to run down to the store to pick something up for lunch. I've got to start bringing stuff to keep at the office for lunches.

My first post on this newly free site. (I may become addicted since it is much easier to be on-line than organizing my newly renovated space.). I am also trying to think through this condiment issue--since I am re-thinking all my old routines. Pre-renov solution was to assign the putting of salt on the table to DH (I think I do an okay job of seasoning while cooking but he craves more.) That and cutting bread are his only pre-dinner tasks. I am thinking as I read this thread that I will look for a pretty ceramic container with sea salt/spoon and leave it near the table where we eat. As for ketchup -- my father always said no bottles on the table and everytime I take it from fridge to table, I feel a pang of guilt. Is there any downside to transferring ketchup to a lidded ceramic container that lives in the fridge and just using that?

Every great once in awhile, I get the yen for a really *good* cheeseburger. Somehow, those from even nicer restaurants simply aren't as good to us as those I make at home. I combine a fatty ground meat with a leaner ground meat - it's my opinion that the greasier the burger, the better it tastes but my arteries might complain so I try to compromise *LOL* I chop up some yellow onion, some garlic powder, some Tony's seasoning, some buckeroo marinade sauce and a bit of cooking oatmeal. Freshly ground pepper, and mix it up without overworking the meat. I don't know why, but it sometimes just tastes so much better! I don't want a burger often, but when I do, I do. That, some baked beans, a "busy" salad ;) and a good movie while we eat - my husband is off work tomorrow for a 3 day weekend so we are going to be lazy tonight - we are putting in two trees tomorrow so we must reserve our strength - at least that's what we are telling ourselves *LOL*

I'm having a great day! I watched Oprah this morning. She had a lady on that went to a foreclosure auction and ended up buying a woman's home and giving it back to her. She started a foundation to save other people from foreclosure. I donated 100.00 to the fund. After that I went to a Focus group on oral care products. We were being paid $150.00 for 2 1/2 hours to give our opinions. They called 8 people's names and left me and another guy sitting alone in the room. They told us they overbooked and we could go home. We still got paid the money. I know it was good Karma coming back to me for my $100.00 donation. If any of you want to donate I linked it below. We're getting ready for our 21 year-old granddaughter's visit. She flies in Saturday morning and we'll pick her up in Orlando. She's just a sweetheart and I haven't had her all by herself since they moved from Florida when she was 3 or 4. Guest room is ready and just need to do some last minute clean-up. I'm so excited!! She's a great photographer and takes all the pictures for her college yearbook. She made me a Mother's Day card which was a collage of nature photos she'd taken. She's going to give me lessons while she's here so I can post pictures. Paid bills, made out a grocery list and a list for Wal-Mart. Did the ususal daily stuff--pick up, make the bed, etc. Dinner tonight is a chicken breast that's in the crockpot right now with a tarragon mustard sauce. We'll have that with rice and DH's favorite--peas. Still have picnic cake. I should have brought it to the KT!!

Dinner for lunch, per usual, out.
Starting to go to Bogue's every Wed for their baked pork chop and baby green lima's.

SKIPPED their homemade cinnamon rolls, AGAIN! Yea!

Cooking up some onions, garlic and sweet Italian sausage meat to go into the lentil soup mix I have cooking already, and making corn muffins. Like Glenda...prefer out, but was out last nite...in tonite.

I have left-over mashed p;otatoes and a piece of chicken fried steak; maybe make some cole slaw or Prairie Woman's Onion strings to go with it.

I'm actually cooking! I have chicken and BBQ sauce in the crockpot. I downloaded an i-phone app for All Recipes. It's so neat to find a recipe on my phone and if I go to the store I can pull up the recipe so that I don't forget to buy any of the ingredients.

Left over chicken drummies, a roll and veggies. Have to watch the carbs for DH, and dessert after church, maybe. Need to loose those 10 pounds

I happened across raggiemom's Little Chicken recipe and thought I would fix that, and when I went to the freezer to get the chicken I found I still had one pack of Costco's Rotisserie noodle soup, so I'm having that. I'll do the chicken tomorrow.

I like quick and easy!

I did the Little Chicken and Pioneer Woman's Onion Strings the other night. LOL
Bloomin Onion dip for the rings and chicken. Next time I'll make my sweet and sour sauce for the chicken.

Nope, I didn't. We had to run to Gainesville for an eye dr. appointment for Harry and went to the Gainesville Ale House for lunch afterward. It was about 3:30 by that time and Harry took about 2 bites and said he didn't feel so good, so I got the waitress to bring "to go" boxes and we came home.

I dropped him off and went to get our mail since we hadn't picked it up for a few days. Then I went to Publix and did our shopping. I haven't grocery shopped alone since we retired because Harry really likes to do it. I make a list for him and one for me so we can finish quicker. (Which never happens.)

He ate an orange when he got home and took a nap and says he feels better now. He's borderline diabetic and hadn't had anything to eat since breakfast so I think he's blood sugar got out of whack. Either that or he has that virus Moni had because he did have that problem, but not since I've been home. (Crossing fingers!)

I don't feel hungry when he's not feeling well so I'm not eating either unless I get hungry later.

Opened a couple of cans of cream of chicken soup,added some sour cream and green chilies and poured it over the enchiladas.Topped with cheese and just took it out of the oven.Smells good.DH is eating some now and said it is really good.Quick and easy.
