Are You Working on Supper?

I won't have to fix anything for my husband tonight. I am going down in a bit and mix up a cake as he is out of his dessert! I am a bit tired. I started moving things out of the sewing room that don't belong there. Some things got put in there in readiness for Christmas. I really haven't organized it yet. That will have to be worked on some other day or days. I am not sure what I want for my supper, it might just be some cereal. I will decide when it gets closer to supper time. How about you what have you been doing and what are you having this evening that is good?

Nope, just got back from the Nail salon.
I'm thinking Shrimp Scampi. It's quick and no mess.

Monica, can I ask how you fix your shrimp scampi? :o)

I am thinking a grilled grouper sandwich with lettuce, tomato, cheese and tartar sauce on it like I love. I'll do some oven fries...that should be good.

Seems like I've been on the phone most of the day, either making appointments, changing reservations or talking to people. Oh, and finding out how much a new battery would be for Harry's scooter. Dinner tonight is leftover from last night. A few weeks ago Glenda posted a recipe and picture of a dish she'd made with sauteed cabbage and sausage. I had made that and it was good and yesterday I found a bag of cooked corned beef in the freezer, so I decided to make something similar. I cooked some red potatoes with the skins, diced them and sauteed the beef, onion, napa cabbage and potatoes in olive oil. So simple and so good!

Okay this is how I fixed it.... I cooked the linguini, put olive oil on it Put in on the plate with strips of chicken over it. Put green chiles (chopped) on top Then salsa black beans and Montery Jack cheese (grated) over the top It was a hit at our house... I'm going to have to copy and print and save it in my cook book...because we want it again. patti

We're getting ready for our 21 year-old granddaughter's visit. She flies in Saturday morning and we'll pick her up in Orlando. She's just a sweetheart and I haven't had her all by herself since they moved from Florida when she was 3 or 4. Guest room is ready and just need to do some last minute clean-up. I'm so excited!! She's a great photographer and takes all the pictures for her college yearbook. She made me a Mother's Day card which was a collage of nature photos she'd taken. She's going to give me lessons while she's here so I can post pictures. Paid bills, made out a grocery list and a list for Wal-Mart. Did the ususal daily stuff--pick up, make the bed, etc. Dinner tonight is a chicken breast that's in the crockpot right now with a tarragon mustard sauce. We'll have that with rice and DH's favorite--peas. Still have picnic cake. I should have brought it to the KT!!

If this is the first time for doing this and you have just over three weeks to organize and pull it off, limit what you do so that you can be sure to do it well. . Keep it simpler and you will be more successful and be able to build in the future. It sounds like you are responsible for getting pricing for the groceries, but also at least to some degree determining the menu and what those groceries will be. Pancakes, butter and syrup are given. Do you want to provide vegan or GF options or figure that GF folks will expect pancakes not to be their thing and be satisfied with generic pancakes being vegetarian? If you do decide to provide GF and/or vegan options, I would say so on any publicity for the event. Since it is a dinner, you could consider adding eggs for more protein/substance, and it could be a GF option. Scrambled are easiest -- and you may be buying eggs for the pancakes. Bacon is great, but it is harder to cook a lot of it to correct doneness and it is messier. Sausage or ham are easier to deal with for crowds. Since this is Shrove Tuesday aka Fat Tuesday, it might be fun to have whipped cream, chocolate chips and some berries. The baked apples sound good too, but both of these could reduce baked good sales if you want to add the bake sale on the side. Decide whether you would rather have just the dinner and both provide and charge a bit more or do the bake sale. I have also seen dessert auctions where towards the end of the meal, people bid on a whole cake or pie. This works best with family events where folks tend to come for the entire event rather than just come, eat and go. You could adapt the idea to coffee cakes, muffins and other take home items since many will have had all the sweet they can handle with pancakes and syrup -- with or without whipped cream, etc. You can do some pricing online. Sam's allows you to shop online and pick up at the warehouse, so you should be able to shop and price their options online. I think Walmart does also, though not all items may be in stock at the stores, so you might have to order in advance. Costco has different pricing online and I'm not sure they have the same order and pick up. They also don't typically give prices over the phone. If you were starting 6 months out, you could do a lot more research (mixes, scratch recipes, stores, etc. -- and maybe drive yourself nuts with it all, but given what you said about Krusteaz, I decided to take a look. Interestingly, Sam's and Walmart both have Krusteaz Buttermilk complete 10 lb bags with pricing shown online -- and Walmart runs slightly cheaper than Sam's -- about $7.50 vs $8. The info says that makes 240 pancakes (not what size) and all you add is water -- so that is your total cost for pancakes. The nutritional info says 90 servings per bag -- I'd guess you might do larger pancakes for dinner and maybe serrve as few as 50 guests peer bag -- but that's still 15 cents per person. And Krusteaz will reimburse half of that? I would go buy a smaller box of the mix and make a test batch this weekend. If you are happy with them, I'd stop worrying about the pancakes and move on. You can hardly make it easier or cheaper than that. Move on to sausage or ham, syrup, butter, plates, napkins, forks and knives and beverage options (since it's dinnerr, you can get away with iced tea, lemonade and water -- maybe add coffee) then decide if you want to add anything else. Have you set a price for the dinner? Do you have any idea how many people you might be serving? Will you sell tickets in advance (helps you can get an idea -- rough idea if you also do at the door sales)? I think you probably have enough to deal with without trying to get sponsorships or donations -- I would consider those things to consider adding next year. Those things take more time than you have to do successfully. You often have to go back, call and follow up a number of times to get an answer or work out details. Have I made this long enough to lose you yet? LOL Sorry

I had to work over the weekend to get caught up after the ice early last week. I decided to rest up a bit today. OK, puts me SLIGHTLY behind this week but not bad and no problem if I stay on schedule the rest of the week. I caught up on my sleep and it felt great. But now I don't feel like cooking and I'm quite hungry so I'm going to head to the "Squat -n- Gobble" and pig out.

I was just looking at a recipe for crab cakes, so I think that is it. I have left-over chicken and dumplings, and left-over porcupine meatballs, both frozen now, so I'll have something else....enough left-overs!

Shrimp scampi.

Put your pasta (my family likes Angel Hair) on to cook.

In a large frying pan, melt equal amounts of butter and olive oil(not virgin), just enough to cover the bottom. Add minced garlic cloves or garlic paste...the amount is up to your taste - I use a heaping tablespoon of garlic paste for the two of us.
Put burner on low while you peel the shrimp, and turn up to high just before you add the shrimp.

Peel raw or uncooked frozen shrimp and pat dry...about 10-12 shrimp per person, the medium size that are 31-40 count per lb.

Saute the shrimp until the have a little brown crustiness on them...then add a couple ladles of the water from the pasta, which should be done by now. Then, add the pasta straight from the water - do not drain (the starch in the pasta water helps to make a slightly thick gravy).

Stir the pasta and shrimp together over high heat until pasta is coated with shrimp gravy - just a minute or two.

Sprinkle some fresh parsley on top and eat ASAP.

Total cooking time is no more than about 15 minutes.

DH is still out of town, so I figured I would experiment with a recipe consisting of what I have on hand.
Some noodles, boiled chicken, sour cream, mushrooms and garlic all mixed together topped with cheese. In oven now to bake. If it tastes horrible, then it will be take out mexican.

We will see!

BBQ Pulled pork leftovers...just finished pulling the last of the pork shoulder, and covered in homemade BBQ sauce..

Baked chicken thighs. A nice Gardenwebber on "Cooking" just gave me the recipe. I said I wanted a "no skin" recipe to make it healthier, but in the end I caved and left the skin on.
