Evaporated milk?

Hey you super baker types, what can I substitute for evaporated milk? My pie recipe calls for evaporated milk, I don't have any. I do have 2%, heavy cream, and powdered milk. It's early enuff that I could run to the store but I am busier than a two butt beaver and I would love to just make due.

Heavy cream will do nicely. I assume it's for a pumpkin pie.

The recipe I use calls for 1/2 n 1/2..so I'd use half 2% and half cream for the amount you need.

Evaporated milk is never sweetened....condensed milk is. you can use this recipe and substitute a can of evaporated milk and enough water to make 2 cups, for the 2 cups of milk called for.. 2C Scalded Milk, cooled to warm temperature 3T Shortening or Butter, Melted 1/2 C Sugar 1 t salt 2 eggs, beaten 2 pkgs yeast (or 1T bulk yeast) 1/3 warm water 4-5 cups flour Dissolve the yeast in the warm water (about 105 degrees) with a teaspoon of the sugar, wait until it foams. While waiting for the yeast to foam, mix the milk, butter, remaining sugar and salt. After the yeast foams, add the yeast mixture to it, and the two beaten eggs to the mixture. Either by hand or in a stand mixer, blend in flour a cup at a time until the dough is soft and fairly sticky. Turn onto a floured board and knead just until the dough is no longer sticky, but is smooth and satiny. Let rise until doubled, punch down, knead a little, then shape into rolls. Makes 3 dozen small dinner rolls or 8 big sandwich rolls. Bake at 350 until golden.About 15 minutes for small dinner rolls, 25 to 30 minutes for very large sandwich rolls. May brush with egg wash or butter and sprinkle with sesame seeds. Also good rolled in butter and cinnamon sugar. Dough is a good base dough for a variety of sweet breads like cinnamon rolls or brioche.

Man...I can't imagine a pot of potato soup with 10 pounds of potatoes...was that a mistake? One of the best potato soups I've ever had was made with a bag of the square cut frozen hash browns. But I can't remember the recipe. If I can find it I add it here. patti

Thanks, luckygardnr. That's quite a list--and one we can all use! I have some quinoa that I need to use so I thought I'd try this recipe. I love the taste of curry! I will use chicken breast instead of thighs, though. CURRIED CHICKEN QUINOA WITH PEAS 1 Tbsp olive oil About 1 1/2 lb. boneless skinless chicken thighs, cut into bite size pieces 1 small red onion, chopped 2 garlic cloves, crushed 1 15 oz. can petite diced tomatoes 1 Tbsp curry powder 1/2 Tbsp chili powder 1 tsp nutmeg 2 cups water or chicken broth 1 cup quinoa 1 12 oz. bag frozen peas Salt and pepper to taste Add the oil, chicken pieces, chopped onion and garlic to a Dutch oven. Saute for about 10 minutes, or until chicken pieces are mostly cooked. Add the diced tomatoes, undrained, curry powder, chili powder and nutmeg. Stir until combined and let cook for about 5 minutes. Stir in the water and bring to a bubble. Stir in the quinoa, bring to rolling boil and then reduce heat to medium low, cover and cook for 20 minutes. With about 5 minutes left to cook, stir in the frozen peas. Turn heat to low and keep warm until ready to serve. Makes 4 adult portions.

Ohhh, I was just going to use that crust from Ohiomom's cranberry-pear pie...it was so good! Now I am thinking that ginger snap crust sounds too good to pass up!! Alas, I'm just not that hungry today so I am going to make the pie tomorrow. Maybe that will give me time to find a good crust recipe and to chill it...mmm, I did go out and buy ground ginger for those gingerbread men last week...so I'm ready for trying a new crust! Wheeeeeeeeee, this is fun!

Or use the 2% and add about 2 T dry milk per cup...
Or just use milk....I'll bet no one will know!

Evaporated milk is a little sweet too. So, whatever you're using, you'd need to add or subtract the amount of sugar.

I'm sure you decided what to do hours ago, but for future reference. Have ya'll every heard of the Hillbilly Housewife? This recipe was on there. They try to make things super cheap so instead of the oil, I would use butter, but other than that it seems fine.

Evaporated Milk:

To make evaporated skim milk you only need dry milk powder and water. Measure 1-1/3 cups water into a jar or bowl. Add 1 cup of instant dry milk powder. Stir or shake to combine. This is the equivalent of a 12-ounce can of evaporated skim milk.

To make evaporated whole milk, you will need to add some fat to replace the milk fat in whole milk. Do this by preparing evaporated skim milk and then adding 2-tablespoons of vegetable oil to the milk. Stir it up vigorously to emulsify the fat with the milk. It will separate on standing, so mix it really well right before using it. This is best used in cooking and baking. A spritz of nonstick spray will help the emulsification process.

Evap milk has no added sweetening....it's a little bit sweet because milk is sweet.
Perhaps you are thinking of Condensed milk?

It has no added sweetener, but I would assume it would be naturally sweeter because it is a concentrated form of milk, ergo the natural milk sugars would be more concentrated.

No, not like condensed milk. Condensed milk is not just a little sweet but extremely sweet! At least for me, that is.

Yep, like Lisa said. I was trying to do the opposite once on a recipe by using evaporated milk to substitute fresh milk. It's either in one of the baking book that I have or read it somewhere that I had to take out some of the sugar content because evaporated milk was a little sweet. I tasted it and it is a bit sweet to me.

I don't keep and use fresh milk very much, evaporated milk and non-fat dry milk are what I keep for baking & cooking.
