I made a double batch of bread dough last week. I saved part of the dough thinking I would bake again later in the week.Never got around to it. So yesterday I took the dough out of the fridge, knocked it down, gave it a quick knead and left it to come to room temperature and rise again.

The long cold fermentation (7 days) made for the best crust.

Thin in the middle with a wonderful light, airy, chewy outer crust. The cold fermentation also really enhances the flavour and the texture of the bread.

blueiris24: Here is another recipe that doesn't have tomatoe chunks. I used it in my Pizzeria. Pizza Sauce and Spaghetti Sauce ( Gravy ) You can use canned tomatoes but make sure they are Italian or a deep red color. Some choices are Contadina , Red Pack , HuntÂs , All Red, = Tutto Rosso, Chento Pizza Sauce 1 Large can of Tomato Puree and Crushed Tomatoes I use Powdered Spices now, and get the same results ADD: 1 level teaspoon Garlic pwd. (add more later to taste) 1 tablespn. of onion powder. 1 teasp. Salt. 3 teasp. Sugar ( add more if it tastes too acidy ). An Italian pinch of pwd.cloves. 3/4 teasp. Oregano ( or to taste ) it is strong. 1 teaspoon of Parsley, 1/2 teasp. basil. 1/4 teasp. black pepper. Â½ teaspoon + of ( Chicken flavored Soup Base ) Large handful of Parmasan Cheese, when done , after 1/2 hour. Continue for Spaghetti Sauce This recipe can be used for Spagetti Sauce ( maybe you would want to cut down on the Oregano ) also just add a can of Tomatoe Paste and water to thin a little , if it is too thick it will burn easily. It will thicken as it cooks. Â½ cup of fine chopped Onion. And 3 bay leaves . Don't forget the Chicken flavored Soup Base. Add uncooked Meatballs, Sausage and Chicken Thighs, when you start cooking. (cook at least 1 Â½ to 2 hours ) Take the chicken out when it is done. ( About 1 hour ) Add the Parmasan Cheese after the sauce is cooked & stir ALSO !!! season to your own taste. Happs: Like someone said before, " do not get too tech, just do it ". In my Pizza place I bought Bread flour and one pound packs of Yeast. Now I use a different recipe, AP flour and some WW Flour, with Active Dry Yeast The difference in time is negligible ( for me ). I make Prebaked Dough and freeze or use it fresh. You can Google : " Lou-s Pizza Dough " and go down to the, Garden Web Post, To get more info. ************************************ Here is my recipe. An alterative to baking on a stone is to use pans. A 12 inch round pizza will take from 8 to 12 ounces of dough. According to thickness you want. After the dough is made weigh it out and roll into balls. Oil the pans and place a dough ball in the pan , smooth side up and flatten slightly, working the dough towards the side of the pan, with the palms. Then let it rest a few minutes. Repeat this every so often until the dough reaches the side and up, enough for a crust about one half inch. Let it raise slightly , pinch the dough all over, with a fork and put into the oven to bake at 400 deg. If it bubbles while baking pinch it with a fork again. When light tan specks show ,take them out onto a rack to cool fast. Then you can use them right away or freeze , to use later. When baking the Pizza, place the Pre Baked dough back in the oiled pan , Or cook on your Stone. Put a latel of sauce on the dough and swish it around, sprinkle some Parmesan or Romano , put it in the oven for a few minutes. Take it out and spread the topping of your choice and the Cheese Topping. A good topping cheese is a mixture of Mozzarella and Provolone chopped and mixed. The provolone gives it a good flavor and doesn't get like rubber when it cools. I use all Provolone. A little trick for baking. Keep a cup of water and brush handy, to baste parts that are cooking too fast. If you can get new metal pans, (uncoated) they have to be cured in the oven, so they won't stick. Coat them with oil and bake them for at least 6 hours. Never clean them with soap and water. Just rinse with water & wipe with a paper towel. Dough recipe: 1 cup of warm water (not hot) 1 Package of Active Dry yeast 1 tablesp sugar ,in a half cup of warm water Quarter Cup of Veg. Oil 1 teasp.Salt About 3 1/2 cups Flour half cup of Whole Wheat flour or up to 1 cup Place in a mixing bowl, the Water, 1 cup of flour, wheat flour , yeast if risen Add the oil and salt and more flour. Add enough flour to make a soft ball of dough, that doesn't stick to your hands. Knead until smooth. Put it back in the bowl , Smooth side up and Rub on some Veg. Oil Cover and set in a warm place to rise until it doubles in bulk. I put it in a warm oven, Covered with a damp towel. Place a pan of hot water on the bottom shelf It will rise in about 1 hour. When doubled, punch it down and knead it well. Divide into Balls , about 11 to 12 ounces and place in oiled pans. 12" round Dough should be about three sixteenth thick on the bottom and about half inch around the edge. My boyfriend is originally from Philly and is incredibly picky about pizza (thin crust only, for example, among other rules). I set my sights on a project of learning to make a pizza at home that he might favour and after some practice and documenting, this is how I make mine (and when I haven't made something in advance and he wants pizza at the last minute, Trader Joe's pizza dough is pretty darned good). Apologies for the overly thoroughness, it's how I got it all down for my records after a few attempts. 5 1/2 teaspoons sugar 2 teaspoons kosher salt 1 tablespoon pure olive oil 3/4 cup warm water 2 cups bread flour 1 teaspoon instant yeast 2 teaspoons olive oil olive oil, for pizza crust flour or cornmeal, for dusting the pizza peel (I used whole wheat flour and found it to be my new favourite(also I do not have a peel and simply use a flat cookie sheet) -Place the sugar, salt, 1 TBSP olive oil, water, 1 cup flour, yeast, and remaining cup of flour into your mixer's work bowl. Using the paddle attachment, start the mixer on low and mix until the dough just comes together, forming a ball. Spray your hook attachment with cooking spray and swap it out with the paddle. -Knead dough for 15 minutes on medium speed. -After 15 minutes, tear off a small piece of dough and flatten into a disc. Stretch the dough until thin, hold it up to the light, and look to see if a taut membrane has formed (also called a baker's window), you should be able to see a webbing of membranes and nearly be able to see through the dough. If the dough tears before it forms, if you aren't able to pull it thin to almost see through before it rips, knead the dough for an additional 5 to 10 minutes. -Form the dough into a smooth ball on the countertop, sealing it unto itself. Place the dough ball in a large stainless or glass bowl and add 2 tsp olive oil, tossing to coat. Cover with plastic wrap (doesn't have to be a perfect seal) and refrigerate for 18 to 24 hours. -Place pizza stone or tile onto the bottom of a cold oven (or if your heating element is on the bottom of your oven, simply place stone onto the lowest position oven rack) and turn the oven on to its highest temperature, 500° or mine goes to 550°. -Split the dough into 2 equal pieces using a knife or dough scraper. Flatten each piece into a disc onto the countertop and then fold each piece into a ball. Wet hands barely with water and rub them onto the countertop to dampen the surface slightly to make it 'sticky', roll the dough on the surface until it tightens into a smooth ball. -Cover with a tea towel and let rest for 30 minutes. If you won't be immediately using the second ball of dough, spray the inside of a ziplock bag and place the dough ball into the bag. Seal and refrigerate for up to 6 days. -Sprinkle flour or cornmeal onto peel and place dough onto the peel. Using your hands, form a lip around the edges of the pizza. -Stretch the dough into a round disc, holding the center with one hand and gently pulling the edges outward with the other hand, rotating after each stretch, try tossing if you're up for it, but do not use a rolling pin! -Shake the pizza on the peel to be sure that it will slide onto the pizza stone or tile. Dress and bake the pizza immediately for a crisp crust or rest the stretched dough for 30 minutes if you want a chewy texture. -To dress the pizza, brush the rim of the pizza with olive oil. Spread the pizza sauce evenly over the pizza. Sprinkle the herbs onto the sauce and then any toppings you might want. Top with cheese. -Slide the pizza onto the tile and bake for 7 or 8 minutes, or until bubbly and golden brown, checking the underside for doneness before removing. Rest finished pizza for 3 minutes before cutting.

YUM! I love long cold fermentation. I have been stretching it into more days and have found that rather than decrease the activity of my wild yeast it just gets better. Fantastic pizza ! c

Oh Ann your pizzas always look good but this one takes the cake!

The crust looks so light and airy just the way I like it...not thick dough as the crust.

Awesome looking pizzas! We make our own dough too, but have never left it in the fridge for longer then a day. I'll give the longer process a try. Wish we had some cold leftover pizza for breakfast. This oatmeal just isn't cutting it after looking at your pizza pictures! lol NancyLouise

Nancy, I usually just leave the dough for two to five days. Would have made a great loaf of bread.

ann t, is there any special procedure to go through with the dough in the fridge? I mean, do you have to knead it once a day or anything like that? Do you just take it out of the bread machine or after you've kneaded it and put it in it's container and forget about it until it's used?

Arkanasgirl. This dough had a number of rises before it became a pizza crust. I made a batch of dough that had 8 cups of flour plus the 1 1/2 cup batch of biga. The dough was kneaded and left to rise until more than doubled and then knocked down and left to rise again. I divided the dough and made three baguettes and what was left went into the pail, topped with a lid and put into the fridge. It continued to rise in the fridge so it had to be knocked down again. Other than that, it was left untouched in the fridge until I took it out on Monday. I knocked it down again, gave it a quick knead and put it back into the pail and left if on the counter for about three hours. As it warmed up it rose again. At that point it could have been shaped into a loaf of bread, or used to make pizza.

In late fall the greens get pretty strong - so I end up using them more like fresh herbs than greens.

Sally, I'm a purist. I use Mozzarella and not the low fat kind either.

I've tried using a mix of cheeses, like provolone and Parmesan, but that isn't how I want my pizza to taste.

The only other cheese I will use occasionally is fresh mozzarella.

Just wondering -- does anyone still use the term "pizza pie"? I only hear pizza. I do hear the term "tomato pie" but that is a little different from a pizza.

Ann, did you use any special bread recipe? Your pizza crust looks amazing....just how I love it. I try so hard to get that look...will try your way now! Was it a french bread recipe...italian bread...using a biga it has to be a GOOD recipe!

Deb, I started out using Julia Child's French Bread recipe, but over the years I've made changes so I guess it doesn't really resemble the original recipe anymore.

To get this type of crust, you need to add more water. It is a very soft hydrated dough. So if you use the French Bread recipe and do nothing else, but add extra water, and give it a few days in the fridge you will have a great pizza dough.

I posted the recipes for both my Pizza Sauce and crust on my blog, and have included my notes on the changes I have made.

It sure looks like you didn't skimp on the cheese. I'm still drooling, and now I'm going to have to make pizza soon.

Do you ever make the dough, partially cook the crust, then freeze it to use later for quick dinners, like a home made Boboli?

Sally, I use to do that in the past. But now I just leave the dough in the fridge until I'm ready to use it. And if I get to the end of the week and I'm not making a pizza, I just bake another loaf or two of bread.

But, there is no reason why you can't partially bake a couple of pizza crusts and freeze.

Thank you Ann! I have made Julia's french bread before, just didn't add more water for a pizza dough. But what a great idea! I am going to make this dough tonight and let it sit in the fridge all weekend for a pizza next week. Thank you for sending me the link!

Hi. It's so nice to see so many of my friends - I'm not in the habit of checking in here though and I will have to remedy that. :-)

Sharon - little man is taller than I am and don't tell Scott but he's a hair taller than he is too! He's still a sweetie though :-)

Will someone remind me how to post a pic? LOL - seriously. there was something with img source or something like that. I had it written on a little sticky note by the computer - long ago...

Pink Warm Mama. A Biga is a "starter".

And yes, you can use pretty much any bread dough. Although I would adjust the recipe adding additional water, because a more hydrated dough makes for a better crust.

Also I would not use enhanced doughs - doughs with sugar, eggs and butter.

Ann...got the dough all made and in the fridge for the week...or perhaps a loaf of bread before the week! But I wanted to ask what temp do you set your oven on to bake the pizza? I know the loaves of bread you bake at 450, do you also bake the pizza at that temp? Thanks!!!

Deb, Julia Child's recipe specifies 450. I actually bake all my breads at 500. And they are baked on a stone.

I bake pizza at 550.

Thanks Ann...I "think" mine might crank up that high. I have put it on 550 before so I guess it will! I can't wait to see the pizza crust this will make. That dough felt so good as I was working it, very smooth after stretching it and letting it rest a while.

Westsider, I've never tried using dough that was two weeks old. I'd give it the sniff test, just in case. If it just smells sour, but not bad, I think I would be tempted to use it as a starter in a new batch of bread. AFter two weeks it is possible that it might need to be "fed".

Yes, thanks Ann. Lean is without eggs or dairy. This is just flour, water, salt, and yeast.

I was thinking that, too. I'm not sure of the smell difference of sour and bad, but if it's alcohol-ly, well, still, can I call it a sourdough starter? Only half joking but it may be less than 2 weeks. Thanks for your advice, Ann. I can and will mix up some fresh dough, if necessary. Or add fresh flour and water, and a bit of salt, no extra yeast.

I just printed out your pizza recipe and am anxious to try it. Thanks for all your contributions.

And the flour container and other toys are already on the counter.

Oh, I just had an idea. What if I marked the calendar on the date that I mix up some dough. I need to do that!

I bought perforated aluminum pizza pans. Just made a thin crust with Italian sausage slices and chopped fresh basil. There is no doubt I can do a lot of experimenting with different ways to make pizza but this turned out pretty good.
It has been a while since I made pizza, and I'm going to start doing it more.
