Ravencajun -did you post recipe for O'brien potato casserole ?

I am thinking you orignally posted the recipe for the potato casserole using a bag of frozen potatoes. I wrote it down but I am wondering if it is the large bag of shredded potatoes which is a lot. It would also be helpful to know how many servings as I might take it to a potluck.
If it was just for me I could experiment but I would really like to get it right.

I don't know if it was me or not I have a few that use potatoes obrien but can you post the recipe so it will refresh my memory to see if it was one of the ones I have.

1 bag frozen potatoes O'brien
1 large onion
1 package smoked sausage sliced in bite size rounds 1 hand full grated cheese.
Spray casserole with olive oil.,dump all ingredients, sprinkle some seasoings. Stir and cover.Bake about 1 hour,uncover,stir and turn oven to 375 & let brown about 10 min.
This really sounds good so hope you can answer the questions. Like I said it is for potluck so would like to know the approximate servings and were the frozen potatoes sheddred or in chunks.
If it was not yours hopefully someone else will come to my rescue. Lois

This is an Amish Breakfast Casserole recipe I found on Allrecipes.com. I've made it a lot and passed the recipe along to friends who also like it. Original recipe makes 12 servings 1 pound sliced bacon, diced 1 medium sweet onion, chopped 6 eggs, lightly beaten 4 cups frozen shredded hash brown potatoes, thawed 2 cups shredded Cheddar cheese 1 1/2 cups small curd cottage cheese 1 1/4 cups shredded Swiss cheese Directions In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

Here's one I got off Facebook, tried it & we liked it: **(I edited again trying to get the Weird Symbols out that some were seeing,,,, hopefully they're gone now). Loaded Potato & Buffalo Chicken Casserole 2 lbs boneless, skinless chicken breasts, cut into 1/2-inch cubesÃ¢ÂÂ¨ 8-10 medium potatoes, cut into 1/2-inch cubes (I leave the skin on)Ã¢ÂÂ¨ 1/3 cup olive oilÃ¢ÂÂ¨ 1 1/2 tsp. saltÃ¢ÂÂ¨ 1 TBS. freshly ground pepper Ã¢ÂÂ¨1 TBS. paprikaÃ¢ÂÂ¨ 2 TBS. garlic powderÃ¢ÂÂ¨ 6 TBS. hot sauce Ã¢ÂÂ¨Topping: 2 c. Fiesta Blend Cheese or a mix of Cheddar & Monterey JackÃ¢ÂÂ¨ 1 c. crumbled baconÃ¢ÂÂ¨ 1 c diced green onion Ã¢ÂÂ¨ Preheat oven to 500F. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder & hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into a cooking spray coated baking dish, leaving behind as much of the olive oil/hot sauce mix as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy & browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400F. Top the cooked potatoes with the raw marinated chicken. In a bowl mix together the cheese, bacon & green onion and top the raw chicken with the cheese mix. Return the casserole to the oven and bake for 15 minutes or until the chicken is cooked through and the topping is bubbly delicious. Serve with extra hot sauce and/or ranch dressing. Citrus Sweet Potatoes (or Winter squash) yield 6 servings 1 # Sweet potatoes (about 3 medium) or Winter squash 1 # Apples (2 large, 3 medium, 4 small) 1 Tbs Grated orange rind 2/3 cup Orange juice 1/4 cup maple syrup (may use honey or packed brown sugar instead) 2 tbl Butter, melted 2 tbl Lemon juice 1/2 tsp Salt 1 knob of ginger grated (about 1 heaping Tbs) optional: 1/3 cup finely chopped nuts of choice for topping (I like walnuts or pecans) Directions : Peel and cut sweet potatoes & apples into 1/4 inch slices (I use my Cuisinart); arrange, overlapping slightly, in a single layer in a buttered 13x9 inch baking dish. Combine orange rind and juice, syrup, butter, lemon juice, salt and ginger; pour evenly over sweet potatoes. Cover tightly; bake in 375F oven for 40 minutes. Uncover and bake, basting every 10 minutes, for about 30 minutes longer or until sweet potatoes are tender and glazed. Sprinkle w/ chopped nuts (if using) in the last 10 minutes of baking. Notes: Equal proportions of apples to squash or potatoes is not mandatory - you can use fewer apples, if desired. If doubling, make 2 layers & pour half the juice mixture over the first layer before adding the second. I do not bother to peel the apples since I use organic. Squash may be sliced 1/2 inch thick

This is Dorie Greenspan’s Mediterranean Shepherd’s Pie. I love it. For your parents, you might want to leave out the harissa and substitute lemon zest and oregano for the more exotic spices. I do. I use sweet potatoes instead of butternut squash and spinach instead of kale. Since they aren’t leafy greens fans, you can use small green peas instead of kale. Amish-Style Oatmeal with Apples and Walnuts. Freezes well. You can easily change out the fruit and nuts to whatever you like. I generally leave out the nuts because I don’t like them. Hamburger and Macaroni A comfort food for me. My grandmother used to make something very similar. Not a casserole, but how about some ready to heat sandwiches? Hot Roast Beef Sandwiches. I made these for DD when she had the twins. She sometimes needed food she could eat with one hand. You can omit the cheese. I also omitted the poppyseeds. Would they enjoy something like tacos? You could prepare and freeze the meat. Send it with taco shells and salsa. If they would get to it soon enough, you could also send diced tomatoes and shredded lettuce. I hope you have better luck with your parents, than I had with my mom. I cooked up a bunch of things that I knew she liked. Froze them in individual portions and took them to her. Everything was labeled along with cooking time and temp. One day when my sister was checking on her, she noticed all of the stuff in the freezer, mostly untouched. When she asked Mom about it, Mom said I had sent a bunch of leftovers and she really didn’t want them. That was the end of my cooking for my mother.

A silly note: when I saw "O'Brian," my mind immediately went to "Downton Abbey." I'm really missing that show already!

I don't think it was me, but on the ones I make similar I always use the large bag of ore ida potatoes o'brien.

Now I do have one that is really good made with the ore ida tater tots. I will go get it and post it.

Tatertots casserole

preheat oven 350
spray 13x9 dish with pam
mix all ingredients together in a large bowl ( make
sure you get all tatertots coated
pour into pan spread evenly bake 35 to 40 mins (I cook mine about 40-45)

1 can cream of mushroom soup
8 oz sour cream ( I use 16 oz size)*
1 onion chopped
1-2 cup grated cheese
1 package tatertots (I use onion ones large)
some recipes call for 1 stick melted butter also. You can add chopped up ham or bacon too. Definitely use the 16 oz sour cream! I do not add the melted butter and I always use the large bag of tots and the 16 oz sour cream. It makes a full 13x9 pan, so plenty. If I want it to be more of a meal I add diced ham or bacon or even cooked sausage. It is good with a package of the Jimmy Dean pre cooked sausage crumbles in it.
