Cooks Illustrated Stovetop Macaroni and Cheese Posted by Jessy on the CF Ingredients 12 oz Canned evaporated milk 2 lg Eggs 1/4 ts Hot red pepper sauce 2 ts Salt 1/4 ts Ground black pepper 1 ts Dry mustard, dissolved in: 1 ts Water 1/2 lb Elbow macaroni 4 TB or 1/4 cup Unsalted butter 12 oz Sharp Wisconsin cheddar*, (or any cheese - Monterey Jack, etc., or a mix) Preparation Mix eggs, 1 cup of the evaporated milk, pepper sauce, 1/2 teaspoon of the salt, pepper and mustard mixture in small bowl. Set aside. Heat 2 quarts water to boil in large heavy-bottomed saucepan or Dutch oven. Add 1-1/2 teaspoons of the salt and macaroni; cook until almost tender, but still a little firm to the bite. Drain and return to pan over low heat. Add butter; toss to melt. Pour egg mixture over buttered noodles along with three-quarters of the cheese; stir until thoroughly combined and cheese starts to melt. Comments (21)I use coconut oil as our main fat for cooking/baking, and I'm here at the bellybutton of "over there" (Kansas), but I wouldn't use any brands that are hydrogenated like Copha. That's as bad (for your health) as using hydrogenated shortening, which is what we use instead of Copha. Believe me, if the general population WANTED Copha, it would be readily available. Coconut oil is more commonly used by the Hispanic community around here, and LouAna brand is carried at Wal-Mart as well as our local grocery store. For years I had to order it because it wasn't available locally. I also use Lyle's Golden Syrup. I CAN get it locally - even out here in the middle of nowhere, and use it in any recipe calling for light syrup because I avoid high fructose corn syrup (like Karo syrup) these days. I use Steen's 100% Cane Syrup for dark syrup. Comments (10)I'm sure you decided what to do hours ago, but for future reference. Have ya'll every heard of the Hillbilly Housewife? This recipe was on there. They try to make things super cheap so instead of the oil, I would use butter, but other than that it seems fine. Evaporated Milk: To make evaporated skim milk you only need dry milk powder and water. Measure 1-1/3 cups water into a jar or bowl. Add 1 cup of instant dry milk powder. Stir or shake to combine. This is the equivalent of a 12-ounce can of evaporated skim milk. To make evaporated whole milk, you will need to add some fat to replace the milk fat in whole milk. Do this by preparing evaporated skim milk and then adding 2-tablespoons of vegetable oil to the milk. Stir it up vigorously to emulsify the fat with the milk. It will separate on standing, so mix it really well right before using it. This is best used in cooking and baking. Comments (13)Thanks, Linda. I can understand that. I use buttermilk powder in waffles and sometimes evaporated milk in this or that. But I also use cooked fresh milk. Whether it's custards, sauces or even ice cream, it doesn't bother me. The only time I remember drinking reconstituted powdered milk was on trail rides as a kid. That was before there was giardia in everything, and the leaders would use stream water and tell us not to stir the milk or dip from the bottom (so we wouldn't stir up the dirt and grass). If I remember right, it tasted like water, but that the water without it (carefully taken from where it went over the rocks) tasted grassy. I think they just used a packet of powder and as much water as would fill the milk can. Trail rides were fun. Sleeping rough was okay but dirty. I suppose the food was okay too because the only thing I remember of it is the powdered milk. The horses seemed pretty happy considering their lots in life......See Moreannie1992
