Sure you can and many do it. Since it has already been fully cooked you might not want to can the meat plain as over-cooked turkey can be dry and tough. So many boil the leftovers with the carcass to make broth and then can it that way - in the broth. Or you can make turkey soup, another common use for it and can the coup. I've been making two batches of food per day until yesterday when I just doubled everything. My rice cooker is finally getting a work out! I've added some chicken breasts, finely chopped, to his diet of rice and cottage cheese. I've discovered if I put the chicken tenders in the steamer of my rice cooker, it all gets done at once. It's one thing making food for a smaller dog but making food for 120 pound Dubs keeps me jumping. Of course, Isabelle, our bulldog, thinks she needs "medicine" too, so I am mixing a bit of cottage cheese, rice and chicken in with her dog food. (Spoiled dogs alert!) I saw a rice cooker at Costco yesterday that is significantly larger than the one I have. If this special diet thing goes on for awhile, I'm going to spring the $30. for it so I can just make food once every other day. I bought a 5.5 quart mixing bowl so I don't have to keep washing my dish pan before and after I mix the food. The other night DH came home to me cooking away - but not for his dinner. I was cooking for the dogs. My priorities are straight. He can fix himself something. The dogs can't. LOL! (He did without complaint.)

Interesting information, digdirt. We do use a dial gauge canner, so we certainly could have had some fluctuations that didn't register. We were set up in our garage, with the garage door open for ventilation. Outside temp was about 55, but not much breeze. Maybe that was part of our problem! I don't think we've canned before this late in the year. Next year we'll definitely can our turkey(s) earlier in the year--we just ran out of time this fall! Lesson learned!

IF I decide to proceed, I want to can part of it as just meat with a little broth, and part meat and lots of broth (using soup instructions). I do have a question for the hot pack poultry. Can you cook raw turkey in broth until 3/4ths done then put in the jars? Or can you refrigerate 3/4ths done turkey while making the broth? I have to make my own broth because of food allergies. I have done soup before but not just meat, so I'm a little intimidated.
